Bûche praliné & citron / Praliné & Lemon Yule Log


Alors que nous sommes qu'à quelques jours de Noël je vous propose enfin ma recette de bûche. Cette année j'avais envie d'associer deux ingrédients qui sont rarement utilisés ensemble pour créer une riche crème au praliné qui contraste parfaitement avec un lemon curd bien acidulé. J'ai acheté pour cette recette un praliné classique amande & noisette, qui est généralement le plus simple à trouver dans le commerce. Comme d'habitude je suis parti sur une bûche traditionnelle sous forme d'un gâteau roulé à base de biscuit génoise. Pour 10-12 parts. 

Ingrédients 

Lemon curd

- 3 citrons
- 2 oeufs
- 1 jaune d'œuf 
- 150 g de sucre
- 2 cuil à soupe de farine
- 50 g de beurre.

Génoise

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 40 g de beurre, fondu
- 1 pincée de sel.

Crème praliné

- 125 g de mascarpone
- 20 cl de crème liquide 30% de MG 
- 100 g de praliné noisette & amande
- 1/2 cuil à café d'extrait naturel de vanille
- Noisettes grillées.

1 - Lemon curd: Zester et presser le jus des citrons. Mélanger la farine et le sucre dans un saladier. Incorporer le jus et les zestes de citron, les oeufs et le jaune d'œuf à l'aide d'un fouet jusqu'à obtenir un mélange lisse. Verser le tout dans une casserole et faire cuire à feu moyen tout en mélanger continuellement à fouet jusqu'à obtenir une texture crémeuse et épaisse. Retirer du feu immédiatement et ajouter le beurre en cubes tout en mélangeant. Transférer dans un bol, couvrir de film alimentaire et mettre au frais jusqu'à complet refroidissement.

2 - Génoise: Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter 5-10 min jusqu'à obtenir un mélange jaune pâle et mousseux. Ajouter le beurre. Tamiser la farine et le sel. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une maryse. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser refroidir, puis décoller cette génoise du papier. La déposer sur un linge et la rouler très délicatement. Réserver. 

3 - Quand la génoise est complètement froide, la dérouler délicatement, étaler le lemon curd et la rouler une deuxième fois pour obtenir un cylindre bien ferme. Mettre au frais. Crème praliné: Mettre tous les ingrédients dans un grand bol bien froid - le mettre 30 min au frais - et fouetter jusqu'à obtention d'un glaçage bien ferme et homogène. Couvrir la bûche avec la moitié de la crème praliné à l'aide d'une spatule, puis mettre le reste dans un poche à douille de votre choix et décorer la bûche. Décorer de noisettes grillées grossièrement concassées. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

With Christmas just a few days away, I'm finally sharing my Yule log recipe with you. This year, I wanted to combine two ingredients that are rarely used together to create a rich praliné cream that contrasts perfectly with a tangy lemon curd. As praliné paste is mostly used in French pastry, it's simply a rich oily paste made of caramelized almonds and hazelnuts. It just requires three ingredients in that case, but it's faster and easier to buy it online to be fair, specially as you would need a pretty solid food processor to grind the nuts and the caramel into a smooth paste. For this recipe, I bought a classic almond and hazelnut praliné paste, which is usually the easiest to find in shops. As usual, I opted for a traditional Yule log in the form of a Swiss roll made with sponge cake. Serves 10-12.

Ingredients

Lemon curd

- 3 lemons
- 2 eggs
- 1 egg yolk
- 150 g sugar (3/4 cup)
- 2 tablespoons flour
- 50 g butter (1/2 stick).

Sponge cake

- 150 g sugar (3/4 cup)
- 110 g flour (1 cup)
- 4 eggs
- 50 g of butter, melted (1/2 stick)
- 1 pinch of salt.

Praline cream

- 125 g mascarpone cheese (1/2 cup)
- 20 cl full fat whipping cream (1 cup)
- 100 g hazelnut & almond praline past
- 1/2 teaspoon natural vanilla extract
- Roasted hazelnuts.

1 - Lemon curd: Zest and juice the lemons. Mix the flour and sugar in a bowl. Whisk in the lemon juice and zest, eggs and egg yolk until smooth. Pour the mixture into a saucepan and cook over medium heat, whisking continuously until it becomes thick and creamy. Remove from the heat immediately and stir in the cubed butter. Transfer to a bowl, cover with cling film and refrigerate until completely cooled.

2 - Sponge cakePut the eggs and the sugar in a bowl in a double-boiler and whisk 5-10 min until you get a pale and frothy mixture. Add the melted butter. Sift the flour and salt. Remove the bowl from the double boiler and fold gently the flour and salt in several batches with a rubber spatula into the egg mixture. Line a baking sheet (approximately 30x40 cm / 15x12") with baking paper and spread the batter evenly. Bake in a preheated oven at 180°C (360°F) for 15 min. Let cool, then take off the baking paper gently. Place it on a cloth and roll it very delicately. Set aside to let cool.

3 - When the sponge cake is completely cool, carefully unroll it, spread the lemon curd over it and roll it up again to form a firm cylinder. Chill. Praline cream: Place all the ingredients in a large, well-chilled bowl - chill for 30 minutes - and whisk until you obtain a firm, smooth icing. Cover the log with half of the praline cream using a spatula, then put the rest in a piping bag of your choice and decorate the log. Sprinkle with coarsely chopped roasted hazelnuts. Cut the ends for a neater finish and chill for about 30 minutes to allow the icing to set a little before serving.

Pavlova aux poires façon "vin chaud" / Mulled Wine-Style Pears Pavlova


Si Noël a la bûche, le réveillon du Nouvel An n'est pas vraiment associé à un dessert particulier. Toutefois j'ai préparé au travail ces dernières semaines énormément de pavlovas, donc j'avais envie de mettre ce dessert à l'honneur. J'ai vu sur Instagram notamment de nombreuses recettes de pavlova de Noël avec des poires cuites dans un vin rouge parfumé à l'orange et aux épices. C'est une recette un peu plus sucrée que ce que je prépare d'habitude, c'est pour cela que je conseille de mettre également des suprêmes d'orange en garniture. Suprêmes d'orange que j'avais évidemment oublié de mettre avant de prendre mes photos! Concernant les épices utilisées pour la sirop au vin, vous pouvez simplement les remplacer par une cuillère à café de quatre-épices, de mélange pain d'épices ou simplement de cannelle si vous préférez. Pour 8 personnes. 

Ingrédients

- 5 poires
- 2 oranges
- 25 cl de vin rouge
- 80 g de sucre
- 2 bâtons de cannelle
- 2 étoiles de badiane
- 1 pincée de noix de muscade
- 1 pincée de gingembre en poudre
- 1/2 gousse de vanille.

Meringue

- 340 g de sucre
- 5 blancs d'œuf (170 g)

Chantilly

- 25 cl de crème liquide 30% de MG
- 1 cuil à soupe de sucre
- Vanille.

1 - Meringue: Mettre les blancs d'œuf et le sucre dans un bol au bain-marie au dessus d'un casserole d'eau chaude, à peine frémissante et mélanger délicatement avec un fouet pour dissoudre le sucre, jusqu'à ce que la préparation soit tiède au toucher. Retirer du bain-marie et fouetter avec un batteur électrique environ 10 min jusqu'à obtenir un appareil à meringue lisse et bien ferme. On doit pouvoir faire un bec d'oiseau.

2 -  Doubler une plaque de cuisson de papier sulfurisé et tracer au milieu un cercle de 20 cm de diamètre environ. Mettre l'appareil à meringue dans une poche à douille et former une couronne d'environ 5-7 cm de épaisseur. Enfourner entre 2h et 2h30 dans un four préchauffé à 100°C jusqu'à ce que la meringue soit bien sèche. Laisser complètement refroidir avant de retirer le papier sulfurisé. 

3 - En parallèle éplucher les poires et les vider par le dessous avec un couteau pour enlever les pépins. Retirer la peau d'une orange. Fendre et gratter la gousse de vanille. Mettre les graines de vanille de côté pour la chantilly. Mettre les poires, la peau de l'orange, le vin, le sucre, la cannelle, la badiane, la noix de muscade, le gingembre et la gousse de vanille grattée dans une casserole. Faire confire à feu doux pendant environ 30 min en retournant les poires régulièrement. Retirer ensuite les poires délicatement et laisser frémir le sirop à feu moyen jusqu'à ce qu'il soit bien épais et sirupeux. Laisser refroidir.

4 - Peler les oranges à vif et retirer les suprêmes avec un couteau bien aiguisé. Réserver. Chantilly: Mettre la crème, le sucre et les graines de vanille dans un grand bol bien froid - le mettre au frigo pendant 30 min - et fouetter jusqu'à obtenir une chantilly bien ferme. Mettre la chantilly dans une poche à douille et décorer la meringue. Ajouter les poires, coupées en deux dans la longueur, et les suprêmes d'orange. Décorer de quelques filets de sirop au vin et mettre au frais 2-3 h pour que la meringue s'assouplissent un peu à cœur.

If Christmas has the yule-log, New Year's Eve is not really associated with a particular dessert. However, I have prepared a lot of pavlovas at work in the past last weeks, so I wanted to put this dessert in the spotlight. I saw on Instagram in particular many recipes for Christmas pavlova with pears cooked in a red wine flavored with orange and spices. It is a slightly sweeter recipe than what I usually prepare, which is why I recommend also adding orange supremes as a garnish. Orange supremes that I had obviously forgotten to add before taking my photos! Regarding the spices used for the wine syrup, you can simply replace them with a teaspoon of allspice, gingerbread mix or simply cinnamon if you prefer. For 10 servings.

Ingredients

- 5 pears
- 2 oranges
- 25 cl red wine (1 cup)
- 80 g sugar (3/4 cup)
- 2 cinnamon sticks
- 2 star anise
- 1 pinch nutmeg
- 1 pinch powdered ginger
- 1/2 vanilla bean.

Meringue

- 340 g sugar (1 & 2/3 cup)
- 5 egg whites (170 g / 6 oz)

Whipped cream

- 25 cl full fat whipping cream (1 cup)
- 1 tablespoon sugar
- Vanilla.

1 - Meringue: Place the egg whites and sugar in a bowl in a bain-marie over a saucepan of hot, barely simmering water and mix gently with a whisk to dissolve the sugar, until the mixture is lukewarm to the touch. Remove from the bain-marie and whisk with an electric mixer for about 10 minutes until you obtain a smooth and firm meringue mixture with soft peak texture.

2 - Line a baking sheet with baking paper and draw a circle about 20 cm in diameter in the middle. Put the meringue mixture in a piping bag and form a crown about 5-7 cm thick. Bake for between 2 and 2.5 hours in an oven preheated to 100°C until the meringue is completely dry. Let cool completely before removing the baking paper.

3 - At the same time, peel the pears and empty them from below with a knife to remove the seeds. Remove the skin from an orange. Split and scrape the vanilla pod. Set the vanilla seeds aside for the whipped cream. Put the pears, orange skin, wine, sugar, cinnamon, star anise, nutmeg, ginger and scraped vanilla pod in a saucepan. Cook over low heat for about 30 minutes, turning the pears regularly. Then carefully remove the pears and simmer the syrup over medium heat until it is thick and syrupy. Leave to cool.

4 - Peel the oranges and remove the segments with a sharp knife. Set aside. Whipped cream: Put the cream, sugar and vanilla seeds in a large, very cold bowl - put it in the fridge for 30 minutes - and whisk until you get a firm Chantilly cream. Put the Chantilly cream in a piping bag and decorate the meringue. Add the pears, cut in half lengthwise, and the orange segments. Decorate with a few drizzles of wine syrup and put in the fridge for 2-3 hours so that the meringue softens a little in the center.

Gravlax de saumon betterave-gin / Beetroot & Gin Salmon Gravlax


Si vous préparez cette recette dès maintenant elle sera prête pour votre réveillon du Nouvel An! J'ai déjà fait il y a quelques années du gravlax de saumon, dans une version très classique mais cette année je voulais quelque chose de plus recherché et j'ai incorporé dans la marinade de la betterave et du gin. Le goût reste subtil mais la betterave donne un joli couleur fuchsia au saumon et le gin ajoute un petite saveur de genièvre très intéressante. C'est une plat assez simple à réaliser qui peut se conserver 4-5 jours au frigo. Pour 4 personnes. 

Ingrédients

- 500 g de pavé de saumon
- 200 g de betterave cuite
- 150 g de gros sel
- 60 g de sucre
- 4 cuil à soupe de gin
- 1 cuil à soupe de graines de fenouil
- 1 cuil à café de poivre noir
- Aneth pour décorer.

Mettre la betterave, le gin, le fenouil et le poivre dans un mixeur et mixer jusqu'à obtenir une purée lisse. Ajouter le gros sel et le sucre. Doubler une plat creux à fond plat (type plat à gratin) avec du papier film et verser la préparation à la betterave. Déposer le saumon, côté chair en dessous, sur la préparation et replier le papier film. Couvrir avec objet lourd et plat (une planche à découper avec une boîte de conserve par dessus par exemple). Laisser macérer 36h. Après ce temps, retirer tout le sel du saumon, le rincer méticuleusement et bien le sécher. Servir avec de l'aneth, du pain de seigle et du beurre.

If you prepare this recipe now it will be ready for your New Year's Eve! I have already made salmon gravlax a few years ago, in a very classic version but this year I wanted something more sophisticated and I incorporated beetroot and gin into the marinade. The taste remains subtle but the beetroot gives a nice fuchsia color to the salmon and the gin adds a very interesting little hint of juniper. It is a fairly simple dish to make that can be kept for 4-5 days in the fridge. For 4 people.

Ingredients

- 500 g salmon fillet (18 oz)
- 200 g cooked beetroot (7 oz)
- 150 g coarse salt (2/3 cup)
- 60 g sugar (1/4 cup)
- 4 tablespoons gin
- 1 tablespoon fennel seeds
- 1 teaspoon black pepper
- Dill to decorate.

Place the beetroot, gin, fennel and pepper in a blender and blend until smooth. Add the coarse salt and sugar. Line a deep, flat-bottomed dish (such as a gratin dish) with cling film and pour in the beetroot mixture. Place the salmon, flesh side down, on the mixture and fold over the cling film. Cover with a heavy, flat object (e.g. a cutting board with a tin can on top). Leave to marinate for 36 hours. After this time, remove all the salt from the salmon, rinse it thoroughly and dry it well. Serve with dill, rye bread and butter.

Bûche pistache-fruits rouges / Pistachio & Berries Yule Log


Cette année pour ma bûche de Noël j'ai choisi un combinaison assez classique mais qui fonctionne très bien. J'aime comme l'acidité et la fraîcheur des fruits rouges se marient à merveille avec la richesse de la pistache. J'utilise ici de la purée de pistache bio 100% pure de la marque La Noix Gaillarde, qui est très parfumée et sans arôme artificiel, contrairement à beaucoup de pâte de pistache. Pour cette bûche j'ai choisi un mélange myrtilles-framboises, mais d'autres fruits rouges fonctionneront très bien. En attendant de nouvelles recettes pour cette fin d'année, je vous souhaite à tous un très joyeux Noël avec vos proches, vos familles et vos amis... Pour 10 parts. 

Ingrédients 

- 125 g de myrtilles
- 125 g de framboises
- 125 g de confiture de griottes.

Génoise

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 40 g de beurre, fondu
- 1 pincée de sel.

Crème pistache

- 350 g de mascarpone
- 30 cl de crème liquide 30% de MG 
- 150 g de pâte de pistache pure
- 4 cuil à soupe de sucre
- 1/2 cuil à café d'extrait naturel de vanille.

Rouler fermement pour obtenir une bûche bien cylindrique. Couvrir la bûche avec le reste de la crème pistache à l'aide d'une spatule et réaliser les décors de votre choix à la poche à douille. Décorer avec le reste des fruits. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

This year for my yule log I've chosen a fairly classic but foolproof combination. I love the way the acidity and freshness of the berries match wonderfully with the richness of the pistachio. Here I'm using 100% pure organic pistachio paste from La Noix Gaillarde, which is very fragrant and has no artificial flavouring, unlike a lot of pistachio paste. For this yule log I chose a blueberry-raspberry mix, but other berries will work very well. While we're waiting for new recipes for the end of the year, I'd like to wish you all a beautiful Christmas celebration with your loved ones... Serves 10.

Ingredients

- 125 g bluberries (1 cup)
- 125 g raspeberries (1 cup)
- 125 g sour cherry jam (1/3 cup).

Sponge cake

- Flaked almonds, toasted.

Pistachio cream 

- 350 g mascarpone
- 30 cl full fat whipping cream (1 & 1/2 cup)
- 150 g pure pistachio paste
- 4 tablespoons sugar
- 1/2 teaspoon natural vanilla extract.

Unroll the sponge cake and spread the pistachio cream and 2/3 of the blueberries and the raspberries. Roll firmly to get a nicely shaped cylindrical log. Cover the log with the rest of the pistachio cream using a spatula. You can also use a pipping bag with a piping nozzle to create various decoration with the cream. Decorate with the remaining blueberries and raspberries Trim the edges for a better finish and chill for about 30 minutes so that the icing sets a little, before serving.

Rôti de volaille farci aux marrons et aux truffes / Chestnut & Truffle Chicken Roll


Même si j'ai proposé un plat à base de poisson cette année pour Noël, je ne pouvais pas m'empêcher de préparer cette année encore un rôti de volaille farci, tant j'aime cette recette, tellement versatile et qui impressionne toujours mes convives lorsqu'elle arrive à table. Cette année je suis resté assez classique avec une farce aux marrons avec un soupçon de brisures de truffe. On en trouve de différentes qualités à différents prix, bien sûr de la truffe noir du Périgord reste un produit d'exception, mais de la truffe d'été est très parfumée et plus accessible. On peut également utiliser de la tartufata, un hachis de champignons parfumé à la truffe comme alternative. Pour 6 personnes

Ingrédients

- 4 blancs de poulet (800 g)
- 1 oignon
- 4 gousses d'ail
- 2 cuil à soupe de fond de veau
- 1 cuil à soupe d'huile d'olive
- Sel, poivre.

Farce

- 250 g de chair à saucisse
- 300 g de marrons entiers cuits
- 20 g de brisures de truffe
- 1 petit oignon, haché
- 1 gousse d'ail, émincée
- 6 brins de persil, ciselés
- 1 oeuf
- 5 cl de lait
- 5 cl de vin blanc
- 4 cuil à soupe de chapelure
- 1 cuil à soupe d'huile d'olive
- Sel, poivre

1 - Farce: Dans une poêle faire chauffer l'huile d'olive à feu moyen et faire colorer l'oignon et l'ail jusqu'à ce qu'ils caramélisent légèrement. Laisser refroidir. Incorporer le mélange oignon-ail avec le reste des ingrédients de la farce et la moitié des marrons. Réserver. Fendre les blancs de poulet en deux et les couvrir de film cellophane et les frapper avec un marteau de cuisine ou un objet lourd (casserole, rouleau à pâtisserie) pour obtenir des escalopes.

2 - Doubler le plan de travail de film cellophane. Répartir les escalopes de poulet, côté lisse en dessous pour former un carré. Déposer une colonne de farce au milieu. Rabattre ensuite les escalopes de poulet vers le centre pour couvrir la farce en s'aidant du film cellophane. Bien serrer le film pour former un boudin et laisser au frais environ 1 h pour que le rôti garde sa forme. Retirer délicatement le cellophane et ficeler (environ 6-7 fois) le rôti avec de la ficelle de cuisine. S'il reste de la farce formez des boulettes.

3 - Couper les oignons en fines lamelles. Répartir dans un plat allant au four avec les gousses d'ail en chemise. Déposer le rôti par dessus avec les boulettes de farce éventuellement et les marrons restants. Saler, poivrer et arroser d'huile d'olive. Enfourner environ 1h dans un four préchauffé à 180°c. Retourner à mi-cuisson. Diluer le fond de veau avec 40 cl d'eau chaude et verser ce mélange en plusieurs fois pendant la cuisson pour déglacer les sucs de viande. Lorsque le rôti est cuit le réserver. Presser les gousses d'ail pour récupérer la pulpe de l'ail. Mettre les jus de cuisson, l'oignon et la purée d'ail dans une casserole avec 10 cl d'eau et laisser réduire encore 10-15 min à feu doux. Couper le rôti en tranches épaisses et servir avec la sauce et l'accompagnement de votre choix.

Even though I proposed a fish-based dish this year for Christmas, I couldn't resist making a stuffed roast chicken again this year, because I love this recipe so much, it's so versatile and always impresses my guests when it arrives at the table. This year I've stayed fairly classic with a chestnut stuffing with a hint of broken truffles. They come in different qualities and at different prices. Of course, the Périgord black truffle is an exceptional product, but the summer truffle is very fragrant and more affordable. You can also use tartufata, a mushroom paste flavoured with truffles, as an alternative. For 6 servings.

Ingredients

- 4 chicken breasts (800 g / 28 oz)
- 1 onion
- 4 garlic cloves
- 1 beef cube-bouillon 
- 1 tablespoon olive oil
- Salt, ground peppercorn.

Stuffing

- 250 g sausage meat (9 oz)
- 300 g  canned whole chestnuts (11 oz)
- 20 g truffle shards (about 1 tablespoon)
- 1 small onion, chopped
- 1 garlic clove, minced
- 6 sprigs of parsley, chopped
- 1 egg
- 5 cl of milk (1/4 cup)
5 cl of white wine (1/4 cup)
- 4 tablespoons breadcrumbs
- 1 tablespoon olive oil
- Salt, ground peppercorn. 

1 - Stuffing: In a pan, heat the olive oil over medium heat and brown the onion and garlic until they caramelize slightly. Set aside. Combine the onion-garlic mixture with the rest of the stuffing ingredients and half of the chestnuts. Set aside. Split the chicken breasts in half and cover them with cling film and hit them with a kitchen hammer or any heavy object (saucepan, rolling pin) to make them thinner.

2 - Line the work surface with cling film. Arrange the chicken cutlets, smooth side down to form a square. Place a column of stuffing in the middle. Then fold the chicken filets towards the center to cover the stuffing using the cling film to maintain everything together. Tighten the film well to form a sausage shape roll and leave in the fridge for about 1 hour so that the roll keeps its shape. Gently remove the cling film and tie (about 6-7 times) the roll with kitchen twine. If there is any stuffing left, form meat balls.

3 - Cut the onion into thin strips. Arrange it in a baking dish with the unpeeled garlic cloves. Place the roll in top with the remaining chestnuts and the meat balls, if you made some . Season with salt and pepper and drizzle with olive oil. Bake for about 1 h in a preheated oven at 180°C (360°F). Flip halfway through cooking. Crush and melt the beef cube-bouillon with 40 cl (2 cups) of hot water and pour this mixture throughout the cooking to deglaze the meat juices. When the roll is cooked set aside. Squeeze the garlic cloves to collect the garlic pulp. Put the meat juices, the onion and the garlic pulp in a saucepan with 10 cl of water and leave to reduce for another 10-15 min over low heat. Cut the roll into thick slices and serve with the sauce and side dish(es) of your choice.

Ballotine de poisson & crème aux fruits de mer / Fish Ballotine & Seafood Cream Sauce


Si je suis plutôt viande que poisson pour Noël, je vous propose cette année une recette de ballotine de poisson avec une sauce crémeuse aux crevettes et aux moules que j'avais envie de réaliser depuis un moment. Vous pouvez choisir différents types de poissons blancs (cabillaud, colin, églefin, merlu, etc.) ou même du saumon bien que goût plus prononcé puisse dominer la saveur des crevettes. Il est important de mixer longuement la farce des ballotines pour un bon résultat. Si la force est très grossière cela donnera un texture grumeleuse. La sauce que je prépare ici s'inspire de ma béchamel à la bisque de crevettes que j'utilise pour napper des quenelles, mais dans une version plus fluide. Vous pouvez zester un peu de citron dans la sauce, personnellement j'ai préféré juste la relever avec une pointe de jus de citron. Pour 6 personnes. 

Ingrédients

- 200 g de moules 
- 1 oignon, haché
- 1 carotte
- 1 gousse d'ail
- 6 brins de persil + pour la décoration
- 1 feuille de laurier
- 1 brin de thym
- 30 cl de crème liquide 30% de MG
- 20 cl de vin blanc
- 2 cuil à soupe de fond de poisson
- 2 cuil à soupe de farine
- 2 cuil à soupe d'huile d'olive
- 20 g de beurre
- 1/2 cuil à café de paprika fumé
- 1/4 cuil à café de quatre-épices
- 1 citron 
- Sel, poivre.

Ballotines

- 600 g de poisson blanc
- 350 g de crevettes roses 
- 2 oeufs
- 20 cl de crème liquide 30% de MG
- 1/2 cuil à café de paprika fumé
- 1 pincée de cannelle
- Sel, poivre.

1 - Ballotines: Couper le poisson blanc en gros cubes. Décortiquer les crevettes et en réserver la moitié. Garder les carapaces. Mettre le poisson et la moitié des crevettes dans le mixeur et mixer jusqu'à obtenir un hachis grossier. Ajouter le rester des ingrédients et continuer de mixer jusqu'à obtenir une farce fine. Couper les crevettes restantes en morceaux et les ajouter à la farce. Couper des rectangles de papier film (30x20 cm) et répartir la farce en 6 portions et rouler en serrant bien pour former 6 ballotines d'environ 10 cm de long. Nouer les extrémités. Réserver au frais.

2 - Couper la carotte en rondelles et écraser la gousse d'ail. Faire chauffer 1 cuil à soupe d'huile d'olive à feu moyen dans une casserole et faire colorer l'oignon puis ajouter les carapaces de crevettes, la carotte, l'ail, le thym, le laurier et le quatre-épices. Faire caraméliser le tout et déglacer avec le vin blanc et un filet d'eau (environ 10 cl). Saler, poivrer et ajouter le fond de poisson. Laisser frémir à feu doux pendant 20 min environ. Après ce temps filtrer le jus de cuisson en pressant bien la tête des crevettes. Réserver. Dans une poêle faire chauffer l'huile restante à feu moyen-vif et déposer les moules, couvrir et laisser 2 min. Quand les moules se sont ouvertes, les réserver au chaud. 

3 - Faire chauffer un volume d'eau jusqu'à frémissement et y pocher les ballotines environ 10-15 jusqu'à ce qu'elles soient fermes. Égoutter et réserver au chaud. En parallèle faire fondre le beurre dans une casserole à feu moyen et y ajouter la farine. Fouetter jusqu'à obtenir une pâte épaisse puis déglacer avec le bouillon de crevettes en plusieurs fois jusqu'à épaississement. Ajouter ensuite la crème et un trait de jus de citron. Saler, poivrer. Retirer les ballotines du film plastique et les napper de sauce, décorer avec les moules et du persil ciselé et servir sans attendre avec du riz blanc.

Although I'm more into meat than fish for Christmas, this year I've come up with a recipe for fish ballotines with a creamy prawn and mussel sauce that I've been wanting to make for a while. You can choose different types of white fish (cod, saithe, haddock, hake, etc.) or even salmon, although its stronger flavour is likely to overpower the taste of the prawns. It is important to blend the ballotines stuffing for a long time to get the best results. If the stuffing is too coarse it will give a lumpy texture to the ballotines. The sauce I'm making here is inspired by my shrimp bisque béchamel sauce that I use to top quenelles, but in a thinner version. You can add a hint of lemon zest to the sauce, but I just went for the juice this time. Serves 6. 

Ingredients

- 200 g mussels (1/2 lb)  
- 1 onion, chopped
- 1 carrot
- 1 clove garlic
- 6 sprigs parsley + for decoration
- 1 bay leaf
- 1 sprig thyme
- 30 cl full fat cooking cream (1+1/2 cup)
- 20 cl white wine (1 cup)
- 2 tablespoons fish stock powder
- 2 tablespoons flour
- 2 tablespoons olive oil
- 20 g butter (1 knob)
1/2 teaspoon smoked paprika
- 1/4 teaspoon allspice
- 1 lemon 
- Salt, pepper.

Ballotines

- 600 g white fish (21 oz)
- 350 g prawns (12 oz)
- 2 eggs
- 20 cl full fat cooking cream (1 cup)
- 1/2 teaspoon smoked paprika
- 1 pinch cinnamon
- Salt, pepper.

1 - Ballotines: Cut the white fish into large cubes. Shell the prawns and set half aside. Keep the shells. Place the fish and half the prawns in a blender and blend until coarsely chopped. Add the remaining ingredients and continue blending until you have a fine stuffing. Cut the remaining prawns into pieces and add to the stuffing. Cut rectangles of cling film (30x20 cm - 12x8") and divide the stuffing into 6 portions and roll up tightly to form 6 ballotines about 10 cm long (4"). Tie the ends together. Set aside in the fridge.

2 - Slice the carrot and crush the garlic clove. Heat 1 tablespoon of olive oil over a medium heat in a pot and brown the onion, then add the prawn shells, carrot, garlic, thyme, bay leaf and allspice. Caramelise and deglaze with the white wine and a dash of water (about 1/2 cup). Season with salt and pepper and add the fish stock. Leave to simmer over low heat for around 20 minutes. After this time, strain the cooking juices by squeezing the shrimp heads. Set aside. Heat the remaining oil in a frying pan over medium-high heat and place the mussels in the pan, cover and leave for 2 mins. When the mussels have opened, keep them warm. 

3 - Bring a pot of water to a simmer and poach the ballotines in it for around 10-15 minutes until firm. Drain and keep warm. Meanwhile, melt the butter in a saucepan over medium heat and add the flour. Whisk until thick, then deglaze with the shrimp stock in batches until thickened. Add the cream and a squeeze of lemon juice. Season with salt and pepper. Remove the ballotines from the cling film and coat with the sauce, garnish with the mussels and chopped parsley and serve immediately with white rice.

Royale de canard aux trompettes de la mort / Duck & Black Chanterelle Royale


Derrière ce nom un peu pompeux et énigmatique se cache en réalité une recette plutôt simple de flan salé rapide à préparer et délicieux comme entrée pour un repas de Noël. Traditionnellement préparée avec du foie gras, la royale peut également se composé d'autres ingrédients et pour une version plus abordable, la mousse de canard est un produit parfait, peu coûteux et très parfumé. On peut l'agrémenter d'autres ingrédients comme des marrons au jus, mais j'avais dans mon placard des trompettes de la mort séchées et le mélange marche très bien. J'ai servi cette entrée avec une crème à l'ail bien poivrée qui équilibre la saveur délicate de la royale de canard. Pour 6 petits flans. 

Ingrédients

- 180 g de mousse de canard
- 20 cl de crème liquide 30% de MG
- 2 œufs entiers
- 2 jaunes d'œuf
- 10 g de trompettes de la mort séchées 
- 1 pincée de quatre-épices
- Beurre, pour graisser.

Crème à l'ail

- 10 cl de crème liquide 30% de MG
- 1 gousse d'ail
- 1/4 cuil à café de poivre
- Sel.

1 - Réhydrater les trompettes de la mort séchées dans un volume d'eau froid. Dans un casserole faire ramollir la mousse de canard coupée en cubes dans la crème avec le quatre-épices à feu doux environ 10 min. Laisser légèrement tiédir puis mixer au blender avant d'ajouter les œufs entiers et les jaunes d'œuf et continuer à mixer jusqu'à obtenir un mélange lisse. Égoutter les trompettes de la mort et les hacher grossièrement puis les incorporer au mélange au canard.

2 -  Graisser 6 ramequins ou caissettes en aluminium et répartir le mélange au canard. Mettre les ramequins dans un plat au four et remplir à mi-hauteur avec de l'eau bouillante et enfourner dans un four préchauffé à 170°C pendant 20 min. Retirer du bain-marie et réserver. 

3 - Crème à l'ail: Dans une casserole faire confire l'ail grossièrement écrasé avec la crème, le poivre et le sel. Laisser réduire 10-15 min à feu doux puis filtrer pour retirer l'ail. Démouler les flancs. Servir à température ambiante avec la crème à l'ail et une salade de jeunes pousses.

Behind this rather pompous and enigmatic name lies a fairly simple recipe for a quick and delicious savoury flan as a starter for a Christmas meal. Traditionally made with foie gras, the royale can be made with other ingredients and, for a more affordable version, duck mousse is a perfect, inexpensive and very flavoursome product.  This recipe my be a bit tricky for my international audience, specially for those who are not livng close to France, since duck mousse is not a very common product abroad. However a good quality chicken liver pate could be a decen alternative. It can be enhanced with other ingredients such as chestnuts in brine, but I had some dried black trumpets mushrooms in my cupboard and the combination worked very well. I accompanied this starter with a peppery garlic cream to balance the delicate flavour of the duck royale. For 6 small flans.

Ingredients

- 180 g duck mousse 
- 20 cl full fat cooking cream 
- 2 whole eggs
- 2 egg yolks
- 10 g dried black trumpets
- 1 pinch of allspice
- Butter, for greasing.

Garlic cream

- 10 cl full fat cooking cream 
- 1 clove of garlic
- 1/4 teaspoon black pepper
- Salt.

1 - Rehydrate the dried black trumpets in cold water. In a saucepan, soften the duck mousse cut into cubes in the cream with the allspice over low heat for about 10 minutes. Let cool slightly then blend in a food processor before adding the whole eggs and egg yolks and continue to blend until you get a smooth mixture. Drain the black trumpets and chop them coarsely then add them to the duck mixture.

2 - Grease 6 ramekins or aluminum foil cups and pour the duck mixture. Place the ramekins in a baking dish and fill halfway with boiling water and bake in an oven preheated to 170°C for 20 minutes. Remove the ramekins from the bain-marie and set aside.

3 - Garlic cream: In a saucepan, simmer the slightly crushed garlic clove with the cream, pepper and salt. Reduce for 10-15 minutes over low heat, then strain to remove the garlic. Unmold the flans. Serve at room temperature with the garlic cream and baby green salad.

Candy Cane Cupcakes / Cupcakes sucre d'orge


Noël approche à grand pas et j'avais terriblement envie de vous faire ces cupcakes qui semble tout droit sortir d'un joli paquet cadeau. J'ai toujours adoré l'aspect des sucres d'orge, avec leurs interminables tourbillons rouges et blancs. Cependant je déteste la menthe poivrée, qui parfume normalement les sucres d'orge. Je vous propose donc ici un simple glaçage à la vanille, qui se marie parfaitement à ce cupcakes garnis de pommes caramélisées à la cannelle... Comme j'ai découvert récemment le sucre muscovado j'en mettrais partout, mais ce n'est qu'une suggestion: utilisez une simple cassonade ou même du sucre blanc si vous n'en avez pas! J'ajoute le lien d'une tutoriel pour savoir comment réaliser ce glaçage bicolore. Pour 12 cupcakes.

Ingrédients 

- 200 g de farine
- 100 g de sucre
- 90 g de beurre 
- 2 oeufs
- 10 cl de lait
- 1 cuil à café de levure
- 1/2 cuil à café d'extrait naturel de vanille
- 1 grosse pomme
- 1 cuil à soupe de sucre muscovado/rapadura
- 1/2 cuil à café de cannelle
- 100 g de palets bretons, émiettés. 

Glaçage 

- 250 g de mascarpone 
- 20 cl de crème liquide 30% de MG
- 2 cuil à soupe de sucre
- 1/2 cuil à café d'extrait naturel de vanille
- 5 gouttes de colorant rouge/rose.

1 - Peler et couper la pomme en petits cubes. Dans une poêle faire fondre 10 g de beurre et faire colorer les cubes de pommes légèrement, puis ajouter le sucre muscovado et la cannelle. Laisser caraméliser 10 min à feu doux puis laisser refroidir. Battre le beurre restant avec le sucre à l'aide d'un fouet. Quand le mélange blanchit ajouter les oeufs, le lait et l'extrait de vanille. Mélanger la farine et la levure et l'ajouter au mélange. Incorporer les cubes de pommes.  Doubler les moules à muffins/cupcakes de caissettes en papier. Parsemer de miettes de palets bretons. Répartir la pâte par dessus. Faire cuire 15 min dans un four préchauffé à 180°c. Sortir du four et laisser les cupcakes refroidir dans les moules. 

2 - Glaçage: Fouetter la crème liquide jusqu'à obtenir une chantilly ferme, ajouter le sucre et l'extrait de vanille. Incorporer le mascarpone délicatement. Prélever 2 cuil à soupe du glaçage et le colorer en rouge. Avec une spatule étaler le glaçage rouge en deux larges bandes sur les côtés de la poche à douille (avec une douille ronde). Ajouter ensuite le glaçage blanc délicatement pour que les deux couleurs ne se mélangent pas trop. Décorer les cupcakes en formant un tourbillon. Mettre au frais.

Christmas is coming fast and I really wanted to make those cupcakes that look being from a sparkling gift-wrapped parcel. I always loved the appearance of candy canes, with their endless red and white swirls. Nevertheless I hate peppermint which is used to flavour these candies. Here is just a simple vanilla frosting that matches perfectly with these cupcakes, garnished with cinnamon caramelized apples... I discovered recently muscovado sugar and I would use it for everything, but it's just a suggestion: if you have not, use simple brown sugar or even white granulated sugar! I add the link of a tutorial to know how to create this two colors frosting. For 12 cupcakes.

Ingredients

- 200 g floor (1 & 1/4 cup)
- 100 g sugar (1/2 cup)
- 90 g of butter 
- 2 eggs
- 10 cl milk (1/2 cup)
- 1 teaspoon backing powder
- 1/2 teaspoon natural vanilla extract
- 1 large apple
- 1 tablespoon muscovado/rapadura sugar
- 1/2 teaspoon cinnamon
- 100 g buttery shortbreads, crushed

Frosting

- 250 g mascarpone (1 cup)
- 20 cl double cream (1 cup)
- 2 tablespoons sugar
1/2 teaspoon natural vanilla extract
- 5 drops red/pink food coloring.

1 - Peel and cut the apple into small cubes. Melt 10 g of butter in a pan over medium heat and brown slightly the apple cubes, add the muscovado sugar and the cinnamon. Allow to caramelize over low heat for 10 mn. Set aside until cold. Cream the rest of the butter and the sugar with a whisk. When the mixture whitens add the eggs, the milk and the vanilla extract. Mix the flour and the baking powder and add to the mixture. Line muffin/cupcake tins with paper cups. Sprinkle the shortbreabs crumbs. Pour the batter over. Bake 15 minutes in preheated oven at 180°C (350°F). Remove from the oven and let the cupcakes cool in mold.

2 - Frosting: Whisk the cream until firm then add the sugar and the vanilla extract. Add gently the mascarpone. Take 2 tablespoons of the frosting and combine with the food coloring. Spread this red frosting with a spatula to create two broad lines on each side of the piping bag (with a round nozzle). Then add the white frosting, gently, to avoid mixing them together too much and decorate the cupcakes with a swirl. Put in the fridge.

Bûche mangue-coco-passion / Coconut-Mango-Passion Yule Log


Après avoir réalisé de nombreuses recettes de bûche, en privilégiant des ingrédients comme le chocolat, les pommes, le citron et Cie, j'avais envie cette année de préparer une bûche aux accents tropicaux. Je trouve que la douceur et la richesse de la noix de coco s'associe bien avec la fraîcheur et l'acidité du mélange mangue-passion. Encore une fois je suis parti sur un biscuit roulé que je préfère aux entremets à base de mousse. Pour 10-12 parts. 

Ingrédients

Génoise

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 1 pincée de sel
- Noix de coco, pour décoration.

Mousse coco

- 250 g de mascarpone 
- 40 cl de crème liquide 30% de MG 
- 70 g de noix de coco râpée
- 70 g de sucre 
- 1/4 gousse de vanille.

Crème mangue-passion 

- 1 mangue, bien mûre
- 4 fruits de la passion
- 2 œufs
- 60 g de sucre
- 1 cuil à soupe de farine.

1 - Mousse coco: Dans une casserole faire frémir 20 cl de crème, la noix de coco râpée, le sucre et la gousse de vanille, grattée. Laisser infuser 10 min à feu doux. Retirer du feu et laisser refroidir. Retirer la gousse de vanille. Tamiser le tout en pressant bien pour extraire toute la crème. Mettre la crème au frais et conserver la noix de coco bien égouttée pour préparer la génoise. 

2 - Crème mangue-passion: Éplucher et couper la mangue en petits cubes. Mettre 2/3 des cubes de mangue dans une casserole avec 10 g de sucre et laisser compoter à feu moyen-doux environ 15 min jusqu'à ce que la mangue soit réduite en purée (passer au mixer si nécessaire). Ajouter le reste des cubes de mangue et réserver. Prélever la pulpe des fruits de la passion et tamiser le tout pour retirer les graines. Dans une casserole mettre la jus des fruits de la passion, le reste du sucre, les œufs et la farine. Bien fouetter et faire cuire à feu moyen jusqu'à obtenir une crème lisse et épaisse. Retirer du feu et incorporer la compotée de mangue à la crème passion. Mettre au frais. 

3 - Génoise: Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter 5-10 min jusqu'à obtenir un mélange jaune pâle et mousseux. Ajouter la noix de coco de la mousse coco. Tamiser la farine et le sel. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une maryse. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser tiédir, puis décoller cette génoise du papier. La déposer sur un linge et la rouler très délicatement. Réserver. 

3 - Mettre la crème mangue-passion et la moitié de la mousse coco en poche à douille. Dérouler la génoise bien froide et pocher la crème mangue-passion et la mousse coco en alternant pour faire des lignes. Rouler fermement pour obtenir une bûche bien cylindrique. Couvrir la bûche avec le reste de la mousse coco en décorant selon vous goûts (cubes de mangue, pulpe de fruits de la passion, etc.). Saupoudrer de noix de coco râpée. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

After having made many yule logs recipes, favoring ingredients like chocolate, apples, lemon and so on, this year I wanted to prepare a yule log with an exotic flair. I find that the sweetness and richness of the coconut combines well with the freshness and acidity of the mango-passion fruit blend. Once again I opted for a rolled biscuit which I prefer to mousse-based desserts. once again I use a gram/centiliter measurements because the once/cup system is too vague for fine pastry. For 10-12 slices.

Ingredients

Sponge cake

- 150 g of sugar
- 110 g of flour
- 4 eggs
- 1 pinch of salt
- Coconut, for decoration.

Coconut mousse

- 250 g of mascarpone
- 40 cl of liquid cream 30% fat
- 70 g grated coconut
- 70 g of sugar
- 1/4 vanilla pod.

Mango-passion curd

- 1 mango, fully ripe
- 4 passion fruits
- 2 eggs
- 60 g of sugar
- 1 tablespoon of flour.

1 - Coconut mousse: In a saucepan, bring 20 cl of cream, the grated coconut, the sugar and the scraped vanilla pod to a simmer. Leave to infuse for 10 minutes over low heat. Remove from heat and let cool. Remove the vanilla pod. Sift everything together, pressing well to extract all the cream. Refrigerate the cream and keep the well-drained coconut to prepare the sponge cake.

2 - Mango-passion curd: Peel and cut the mango into small cubes. Place 2/3 of the mango cubes in a saucepan with 10 g of sugar and leave to stew over medium-low heat for about 15 minutes until the mango is pureed (blend with a food processor if necessary). Add the rest of the mango cubes and set aside. Take the pulp of the passion fruit and sieve everything to remove the seeds. In a saucepan put the passion fruit juice, the rest of the sugar, the eggs and the flour. Whisk well and cook over medium heat until you obtain a smooth and thick cream. Remove from the heat and add the cubed butter while whisking. Incorporate the mango compote into the passion cream. Put in the fridge.

3 - Sponge cake: Place the eggs and sugar in a bowl in a bain-marie and whisk for 5-10 minutes until you obtain a pale yellow and foamy mixture. Add the coconut from the coconut mousse. Sift the flour and salt. Remove the bowl from the bain-marie and add the flour and salt in several batches with a spatula. Line a baking tray (approximately 30x40 cm) with baking paper and spread the dough. Bake in a preheated oven at 180°C/355°F for 15 minutes. Leave to cool, then peel this sponge cake off the paper. Place it on a cloth and roll it very delicately. To book.

3 - Place the mango-passion curd and half of the coconut mousse in a piping bag. Unroll the cold sponge cake and pipe the mango-passion cream and the coconut mousse alternately to make lines. Roll firmly to obtain a very cylindrical log. Cover the log with the rest of the coconut mousse, decorating according to your taste (mango cubes, passion fruit pulp, etc.). Sprinkle with grated coconut. Cut the ends for a neat finish and refrigerate for about 30 minutes so that the icing sets a little, before serving.
