Bûche mangue-coco-passion / Coconut-Mango-Passion Yule Log


Après avoir réalisé de nombreuses recettes de bûche, en privilégiant des ingrédients comme le chocolat, les pommes, le citron et Cie, j'avais envie cette année de préparer une bûche aux accents tropicaux. Je trouve que la douceur et la richesse de la noix de coco s'associe bien avec la fraîcheur et l'acidité du mélange mangue-passion. Encore une fois je suis parti sur un biscuit roulé que je préfère aux entremets à base de mousse. Pour 10-12 parts. 

Ingrédients

Génoise

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 1 pincée de sel
- Noix de coco, pour décoration.

Mousse coco

- 250 g de mascarpone 
- 40 cl de crème liquide 30% de MG 
- 70 g de noix de coco râpée
- 70 g de sucre 
- 1/4 gousse de vanille.

Crème mangue-passion 

- 1 mangue, bien mûre
- 4 fruits de la passion
- 2 œufs
- 60 g de sucre
- 1 cuil à soupe de farine.

1 - Mousse coco: Dans une casserole faire frémir 20 cl de crème, la noix de coco râpée, le sucre et la gousse de vanille, grattée. Laisser infuser 10 min à feu doux. Retirer du feu et laisser refroidir. Retirer la gousse de vanille. Tamiser le tout en pressant bien pour extraire toute la crème. Mettre la crème au frais et conserver la noix de coco bien égouttée pour préparer la génoise. 

2 - Crème mangue-passion: Éplucher et couper la mangue en petits cubes. Mettre 2/3 des cubes de mangue dans une casserole avec 10 g de sucre et laisser compoter à feu moyen-doux environ 15 min jusqu'à ce que la mangue soit réduite en purée (passer au mixer si nécessaire). Ajouter le reste des cubes de mangue et réserver. Prélever la pulpe des fruits de la passion et tamiser le tout pour retirer les graines. Dans une casserole mettre la jus des fruits de la passion, le reste du sucre, les œufs et la farine. Bien fouetter et faire cuire à feu moyen jusqu'à obtenir une crème lisse et épaisse. Retirer du feu et incorporer la compotée de mangue à la crème passion. Mettre au frais. 

3 - Génoise: Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter 5-10 min jusqu'à obtenir un mélange jaune pâle et mousseux. Ajouter la noix de coco de la mousse coco. Tamiser la farine et le sel. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une maryse. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser tiédir, puis décoller cette génoise du papier. La déposer sur un linge et la rouler très délicatement. Réserver. 

3 - Mettre la crème mangue-passion et la moitié de la mousse coco en poche à douille. Dérouler la génoise bien froide et pocher la crème mangue-passion et la mousse coco en alternant pour faire des lignes. Rouler fermement pour obtenir une bûche bien cylindrique. Couvrir la bûche avec le reste de la mousse coco en décorant selon vous goûts (cubes de mangue, pulpe de fruits de la passion, etc.). Saupoudrer de noix de coco râpée. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

After having made many yule logs recipes, favoring ingredients like chocolate, apples, lemon and so on, this year I wanted to prepare a yule log with an exotic flair. I find that the sweetness and richness of the coconut combines well with the freshness and acidity of the mango-passion fruit blend. Once again I opted for a rolled biscuit which I prefer to mousse-based desserts. once again I use a gram/centiliter measurements because the once/cup system is too vague for fine pastry. For 10-12 slices.

Ingredients

Sponge cake

- 150 g of sugar
- 110 g of flour
- 4 eggs
- 1 pinch of salt
- Coconut, for decoration.

Coconut mousse

- 250 g of mascarpone
- 40 cl of liquid cream 30% fat
- 70 g grated coconut
- 70 g of sugar
- 1/4 vanilla pod.

Mango-passion curd

- 1 mango, fully ripe
- 4 passion fruits
- 2 eggs
- 60 g of sugar
- 1 tablespoon of flour.

1 - Coconut mousse: In a saucepan, bring 20 cl of cream, the grated coconut, the sugar and the scraped vanilla pod to a simmer. Leave to infuse for 10 minutes over low heat. Remove from heat and let cool. Remove the vanilla pod. Sift everything together, pressing well to extract all the cream. Refrigerate the cream and keep the well-drained coconut to prepare the sponge cake.

2 - Mango-passion curd: Peel and cut the mango into small cubes. Place 2/3 of the mango cubes in a saucepan with 10 g of sugar and leave to stew over medium-low heat for about 15 minutes until the mango is pureed (blend with a food processor if necessary). Add the rest of the mango cubes and set aside. Take the pulp of the passion fruit and sieve everything to remove the seeds. In a saucepan put the passion fruit juice, the rest of the sugar, the eggs and the flour. Whisk well and cook over medium heat until you obtain a smooth and thick cream. Remove from the heat and add the cubed butter while whisking. Incorporate the mango compote into the passion cream. Put in the fridge.

3 - Sponge cake: Place the eggs and sugar in a bowl in a bain-marie and whisk for 5-10 minutes until you obtain a pale yellow and foamy mixture. Add the coconut from the coconut mousse. Sift the flour and salt. Remove the bowl from the bain-marie and add the flour and salt in several batches with a spatula. Line a baking tray (approximately 30x40 cm) with baking paper and spread the dough. Bake in a preheated oven at 180°C/355°F for 15 minutes. Leave to cool, then peel this sponge cake off the paper. Place it on a cloth and roll it very delicately. To book.

3 - Place the mango-passion curd and half of the coconut mousse in a piping bag. Unroll the cold sponge cake and pipe the mango-passion cream and the coconut mousse alternately to make lines. Roll firmly to obtain a very cylindrical log. Cover the log with the rest of the coconut mousse, decorating according to your taste (mango cubes, passion fruit pulp, etc.). Sprinkle with grated coconut. Cut the ends for a neat finish and refrigerate for about 30 minutes so that the icing sets a little, before serving.

Alien Blood Cupcakes

Cette année pour Halloween je vous propose une recette inspirée de l'univers d'Alien. J'ai toujours été un immense fan tant de l'ambiance des films de la saga que du design de ces monstres extraterrestres sortis tout droit de l'imagination de l'artiste suisse H.R Giger dont j'ai eu la chance de visiter le musée lors de mon dernier voyage en Suisse. Etant donné que le sang des Aliens est assez rare à trouver et plutôt agressif pour l'estomac j'ai décidé de le remplacer par du curd de fruit de la passion qui ajoute une touche d'acidité à mon glaçage tout doux à base d'oréo. Pour recréer la peau noire laquée des Aliens j'ai réalisé un glaçage miroir au cacao tout simple et rudement efficace. Il y a beaucoup d'étapes dans cette recette mais en soit rien de compliqué. Joyeux Halloween à tous! Pour 12 cupcakes. 

Ingrédients

- 200 g de farine 
- 200 g de sucre
- 100 g de beurre 
- 2 œufs
- 10 cl de lait 
- 1 cuil à café de levure

Passion curd

- 2 fruits de la passion
- 1 œuf
- 30 g de beurre
- 3 cuil à soupe de sucre
- 1 cuil à café de farine.

Glaçage oréo 

- 250 g de mascarpone 
- 100 g d'oréo
- 10 cl de crème liquide 30% de MG.

Glaçage miroir cacao

- 110 g de sucre
- 60 g d'eau
- 60 g de crème liquide 30% de MG
- 30 g de cacao amer
- 4 feuilles de gélatine. 

1 - Pâte: Dans un saladier battre le beurre avec le sucre restant à l'aide d'un fouet. Quand le mélange blanchit ajouter les œufs, puis le lait. Mélanger la farine et la levure et l'ajouter au mélange. Doubler les moules à muffins/cupcakes de coupes de papier. Répartir la pâte. Faire cuire 15 min à four préchauffé à 200°c. Laisser les cupcakes refroidir dans les moules. 

2 - Passion Curd: Couper les fruits de la passion et retirer la pulpe à la cuillère. Mettre la pulpe, l'oeuf, la farine et le sucre dans une casserole. Bien mélanger et laisser cuire à feu doux en remuant au fouet jusqu'à ce que le mélange soit épais et crémeux. Ajouter ensuite le beurre, coupé en cubes, petit à petit jusqu'à obtenir une crème bien lisse. Laisser refroidir à température ambiante.

3 - Glaçage oréo: Fouetter le mascarpone et la crème jusqu'à obtenir un glaçage lisse et ferme. Ajouter les oréos réduits en poudre et fouetter encore quelques secondes. Mettre le glaçage dans une poche à douille à bout rond et décorer les cupcakes entièrement refroidis pour former un dôme sur chaque cupcake. Mettre au frais au moins 1h. 

4 - Glaçage miroir cacao: Faire ramollir la gélatine dans un bol d'eau froide. Dans une casserole faire frémir l'eau avec le sucre et la crème à feu moyen. Ajouter le cacao et fouetter jusqu'à ce qu'il soit bien dissout. Mettre la casserole hors du feu et incorporer la gélatine. Passer le glaçage au tamis pour enlever d'éventuel grumeaux. Mettre dans un bol assez profond et couvrir avec du papier film. Laisser tiédir jusqu'à température ambiante.

5 - Lorsque le glaçage miroir est à peine tiède (environ 25-30°C) retirer le film plastique et plonger délicatement les cupcakes à l'envers pour que le glaçage miroir enrobe bien le glaçage oréo. Les retourner lentement pour éviter que le glaçage miroir coule et les remettre au frais environ 15 min pour que le tout fige bien. Avec une poche à douille former des coulures avec le passion curd sur le glaçage miroir et remettre au frais environ 30 min avant de servir.

This year for Halloween I wanted to share with you a recipe inspired by the Alien saga universe. I have always been a huge fan of both the films atmosphere and the design of these extraterrestrial monsters that just popped out from the imagination of the Swiss artist H.R Giger. I actually had the chance to visit his museum during my last trip to Switzerland. Since Alien blood is quite hard to find and rather aggressive for the stomach, I decided to replace it with passion fruit curd which adds a touch of acidity to my very sweet oreo frosting. To recreate the black glossy skin of the Aliens, I made a very simple and very effective cocoa mirror glaze. There are a lot of steps in this recipe, but nothing complicated. Happy Halloween everyone! For 12 cupcakes.

Ingredients

- 200 g flour (1 & 1/4 cup)
- 200 g sugar (1 cup)
- 100 g butter, soft (3/4 stick)
- 2 eggs
- 10 cl milk (1/2 cup)
- 1 teaspoon backing powder.

Passion curd

- 2 passion fruits
- 1 egg
- 30 g butter (1/4 stick)
- 3 tablespoons sugar
- 1 teaspoon flour.

Oreo frosting

- 250 g mascarpone (1 cup)
- 100 g oreos (4 oz)
- 10 cl double cream (10 cl).

Cocoa mirror glaze

- 100 g sugar (1/2 cup)
- 60 g water (1/4 cup)
- 60 g double cream (1/4 cup)
- 30 g cocoa powder (1/4 cup)
- 4 gelatin sheets. 

1 - In a bowl cream the butter with the sugar with a whisk. When the mixture turns pale and lighter add the egg and the milk. Mix the flour and the baking powder and add to the mixture. Line muffin/cupcake tins with paper cups. Distribute the batter. Bake 15 minutes in preheated oven at 200 °C (390°F). Remove from the oven and let the cupcakes cool in mold.

2 - Passion curd: Split the passion fruits and remove the pulp with a spoon. Put the pulp with the egg, flour and sugar in a saucepan. Mix well and cook over low heat, stirring with a whisk until the mixture is thick and creamy. Add the butter, cubed, and continue to mix until you get a smooth cream. Set aside until the passion curd at room temperature. 

3 - Oreo frosting: Whisk the mascarpone and double cream until you get a smooth and firm frosting. Put in a piping bag with a round nozzle and decorate the cupcakes with a round blob. Put in the fridge at least 1h to let it set completely.

4 - Cocoa mirror glaze: Soften the gelatin in a bowl of cold water. In a saucepan, simmer the water with the sugar and cream over medium heat. Add the cocoa powder and whisk until well dissolved. Put the saucepan off the heat and combine the gelatin, drained, until fully dissolved. Pass the glaze through a sieve to remove any lumps. Place in a fairly deep bowl and cover with cling film. Let cool to room temperature.

5 - When the mirror icing is barely warm (around 25-30°C/75-85°F) gently dip the cupcakes upside down to allow the mirror icing to coat the oreo frosting entirely. Slowly flip them over to prevent the mirror glaze from running down and put them back in the fridge for about 15 minutes to let everything set nicely. With a piping bag create drips with the passion curd on the mirror glaze and refrigerate for about 30 min before serving.

Mango & Passion Fruit Cheesecake / Cheesecake mangue-passion


This year for Valentine's Day I wanted something quite exotic. Indeed, while I'm writing this article I am in a tropical location I will talk to you about soon. Not to mention this really inspired me for this delicate dessert where the fresh intensity of the lime fits perfectly with the rich fragrance of the mango and the passion fruit. For 8-10 servings. 

Ingredients

- 600 g Greek yogurt (21 oz)
- 150 g sugar (3/4 cup)
- 3 eggs
- 10 cl double cream (1/2 cup)
- 2 limes.

Crust

- 200 g shortbreads, crushed
- 75 g butter (1/2 stick)
- 1 tablespoon water.

Mango-Passion Jelly

- 1 large mango
- 3 passion fruits
- 3 tablespoons sugar
- 1 gelatin sheets (2 g)
- 15 cl double cream (3/4 cup).

1 - Crust: In a bowl mix the shortbreads with melted butter and water. Line a springform pan - 22-23 cm in diameter - with baking paper and press the mixture to form crust. Do not make edges, they tend to burn. Chill for 20 minutes.

2 - In a bowl whisk the Greek yogurt with the double cream (10 cl), sugar and eggs. Squeeze and zest the limes and add all of it to the mixture. Pour this mixture over the crust and bake 50 minutes in a preheated oven at 180°C (350°F). Chill for several hours in a fridge until the cheesecake is completely cool.

3 - Mango-Passion Jelly: Cover the gelatin sheets with cold water to make them soft. Halve the mango and keep one half for later. Peel and dice the rest. Put the mango dices and the passion fruit pulp into a blender with the 2 tablespoon of sugar and mix until your get a smooth sauce. You can sieve if you prefer to get read of the passion fruit seeds. Take about one quarter of this sauce and heat it in a microwave or a saucepan slightly. Drain carefully the soft gelatin sheets and dissolve them into the hot fruit sauce. Combine this part of the sauce with the rest and allow to cool down a bit at room temperature. Cut the rest of the mango into small cubes.

4 - In a very cold bowl whisk the double cream (15 cl) and the sugar until you get a firm whipped cream. Put it in piping bag and create a crown of whipped cream on the edge of the cheesecake. In the middle pour the mango-passion jelly and add the cubes of mango on the top. Put in the fridge again about 2-3 hours to let the mango-passion jelly to set completely.

Cette année pour la Saint-Valentin j'avais envie d'une recette aux saveurs exotiques. En effet au moment où je vous écris je suis sous les tropiques, dans un pays dont je vous parlerai très bientôt. Voilà de quoi m'inspirer pour ce dessert tout en douceur où la fraîcheur du citron vert se mêle parfaitement à la richesse de la mangue et du fruit de la passion. Pour 8-10 parts.

Ingrédients

- 600 g de fromage blanc
- 150 g de sucre
- 3 oeufs
- 10 cl de crème liquide 30% de MG
- 2 citrons verts.

Croûte

- 200 g de petits-beurres, en poudre
- 75 de beurre fondu
- 1 cuil à soupe d'eau.

Gelée mangue-passion

- 1 grosse manque bien mûre
- 3 fruits de la passion
- 1 feuille de gélatine (2 g)
- 15 cl de crème liquide 30% de MG

- 3 cuil à soupe de sucre.

1 - Croûte: Dans un saladier mélanger la poudre de petits-beurre avec le beurre fondu. Doubler un moule à manquer - 22-23 cm de diamètre - de papier sulfurisé et tasser ce mélange pour former une croûte. Ne pas former de bords, qui brûleraient à la cuisson. Mettre au frais 20 mn. 

2 - Dans un saladier fouetter le fromage blanc avec la crème (10 cl), le sucre et les oeufs. Zester et presser le jus des citrons verts et ajouter le tout à la mixture. Verser ce mélange sur la croûte et enfourner 50 min dans un four préchauffé à 180°c. Mettre au frais et laisser refroidir complètement.

3 - Gelée mangue-passion: Faire ramollir la feuille de gélatine dans un bol d'eau froide. Couper la mangue en deux. Mettre une moitié de côté. Récupérer la chair de l'autre moitié. Mettre la chair avec la pulpe des fruits de la passion et 2 cuil à soupe de sucre dans un mixeur et mixer jusqu'à obtenir un coulis lisse. Prélever environ 1/4 de ce coulis et le faire chauffer au micro-ondes et y dissoudre la gélatine en remuant bien. Ajouter cette portion au reste du coulis et bien mélanger. Laisser refroidir à température ambiante. Couper le reste de la mangue en petits cubes. 

4 - Dans un bol bien froid fouetter la crème liquide (15 cl) avec le sucre restant jusqu'à obtenir une chantilly bien ferme. Mettre dans une poche à douille et former une couronne de crème chantilly sur les bords du cheesecake. Verser au milieu la gelée mangue-passion, puis parsemer les cubes de mangue par dessus. Mettre au frais environ 2-3h encore pour que la gelée prenne bien.

Passion fruit & Chocolate Tartlets / Tartelettes chocolat-passion


Even if dark chocolate is often combined with mellow flavoured fruits such as pear or banana, I recently discovered that it matches heavenly with passion fruit. This intensely sour tropical fruit is amazing with the rich bitterness of dark chocolate. I transformed my fruits into what I call "passion curd" which means basically replacing lemon juice and zest by passion fruit pulp. This smooth, sour curd, covered with a thick layer of satiny chocolate ganache over a thin pie crust is amazing. After a hearty meal, the tartlets can easily be split in two as they as very rich. For 6 tartlets.

Ingredients

- 200 g flour (1 & 1/2cup)
- 100 g butter (1 stick)
- 100 g sugar (1/2 cup)
- 1 yolk
- 1 tablespoon water, cold
- 1 pinch of salt.

Passion curd

- 3 passion fruits
- 2 eggs
- 50 g sugar (1/4 cup)
- 50 g butter (1/2 stick)
- 1 tablespoon flour

Chocolate ganache

- 150 g dark chocolate
- 15 cl double cream (3/4 cup)

1 - In a bowl combine the flour, sugar, salt and butter and mix until getting a sandy texture. Add the yokd and the water and continue to blend until you get an even and smooth dough. Split in 6 portions and spread each of them into tartlets tins with the thumbs until you cover the bottom and the side. Set aside in the fridge for 20 min. After this time put in a preheated oven at 180°C (350°F) for 15-20 min until the crusts are golden. Allow to cool.

2 - Passion curd: Split the passion fruits and remove the pulp with a spoon. Put the pulp with the eggs, flour and sugar in a saucepan. Mix well and cook over low heat, stirring with a whisk until the mixture is thick and creamy. Add the butter, cubed, and continue to mix until you get a smooth cream. Set aside until the passion curd at room temperature. Remove gently your pie crusts from the tins and spread the passion curd inside. Set aside.

3 - Chocolate ganache: Melt the chocolate with the cream on a double boiler or in a microwave until you get a smooth ganache. Allow to cool and thicken a bit at room temperature - the ganache has to be slightly thick but still easily spreadable. With a spoon spread the ganache over the passion curd, gently. The tartlets are ready to be eaten. Otherwise pop them into the fridge. The ganache tends to harden in a fridge so the tartlets, if not eaten right away, have to be put oustide of the fridge about 20-30 min before serving.

Si le chocolat noir est souvent associé avec des fruits aux saveurs douces comme la poire ou le banane, j'ai découvert récemment qu'il se marie à la perfection avec du fruit de la passion. L'acidité intense de ce fruit tropical est fabuleuse face à l'amertume et la richesse du chocolat noir. J'ai transformé mes fruits en ce que j'appelle un "passion curd" de la même manière qu'un lemon curd, en remplaçant simplement le jus et les zestes d'un citron par de la pulpe de fruits de la passion. Cette crème acidulée, couverte d'une épaisse couche de ganache, le tout sur une fine croûte sablée est simplement délicieuse. Après un gros repas, n'hésitez à diviser les tartelettes en deux, car une moitié est largement suffisante par personne. Pour 6 tartelettes.

Ingrédients

- 100 g de beurre
- 100 g de sucre 
- 1 jaune d'œuf
- 1 cuil à soupe d'eau froide
- 1 pincée de sel.

Passion curd

- 3 fruits de la passion
- 2 oeufs
- 50 g de sucre
- 50 g de beurre
- 1 cuil à soupe de farine.

Ganache

- 150 g de chocolat noir
- 15 cl de crème liquide 30 % de MG

1 - Dans un grand bol mélanger la farine, le beurre, le sucre et le sel jusqu'à obtenir un mélange sablé. Ajouter ensuite le jaune d'oeuf  et l'eau froide et continuer de mélanger jusqu'à obtenir une pâte bien lisse. Séparer en 6 portions et les étaler dans des moules à tartelettes avec les doigts en fonçant bien les bords et le fond. Mettre au frais 20 min puis enfourner dans un four préchauffé à 180°C pour 15-20 min jusqu'à ce que les croûtes soient bien dorées. Laisser refroidir. 

2 - Passion Curd: Couper les fruits de la passion et retirer la pulpe à la cuillère. Mettre la pulpe, les oeufs, la farine et le sucre dans une casserole. Bien mélanger et laisser cuire à feu doux en remuant au fouet jusqu'à ce que le mélange soit épais et crémeux. Ajouter ensuite le beurre, coupé en cubes, petit à petit jusqu'à obtenir une crème bien lisse. Laisser refroidir à température ambiante. Retirer les croûtes des tartelettes et y répartir le passion curd. Réserver.

3 - Ganache: Faire fondre le chocolat avec la crème au bain-marie ou au micro-ondes jusqu'à obtenir une ganache bien lisse. Laisser refroidir jusqu'à ce que le ganache ait légèrement épaissi - elle doit néanmoins rester facile à étaler. Avec une cuillère étaler délicatement la ganache. Laisser un peu figer et servir sans attendre ou mettre au frais. La ganache durcissant au frais, il est important de sortir les tartelettes 20-30 mn avant de servir.
