Bûche praliné & citron / Praliné & Lemon Yule Log


Alors que nous sommes qu'à quelques jours de Noël je vous propose enfin ma recette de bûche. Cette année j'avais envie d'associer deux ingrédients qui sont rarement utilisés ensemble pour créer une riche crème au praliné qui contraste parfaitement avec un lemon curd bien acidulé. J'ai acheté pour cette recette un praliné classique amande & noisette, qui est généralement le plus simple à trouver dans le commerce. Comme d'habitude je suis parti sur une bûche traditionnelle sous forme d'un gâteau roulé à base de biscuit génoise. Pour 10-12 parts. 

Ingrédients 

Lemon curd

- 3 citrons
- 2 oeufs
- 1 jaune d'œuf 
- 150 g de sucre
- 2 cuil à soupe de farine
- 50 g de beurre.

Génoise

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 40 g de beurre, fondu
- 1 pincée de sel.

Crème praliné

- 125 g de mascarpone
- 20 cl de crème liquide 30% de MG 
- 100 g de praliné noisette & amande
- 1/2 cuil à café d'extrait naturel de vanille
- Noisettes grillées.

1 - Lemon curd: Zester et presser le jus des citrons. Mélanger la farine et le sucre dans un saladier. Incorporer le jus et les zestes de citron, les oeufs et le jaune d'œuf à l'aide d'un fouet jusqu'à obtenir un mélange lisse. Verser le tout dans une casserole et faire cuire à feu moyen tout en mélanger continuellement à fouet jusqu'à obtenir une texture crémeuse et épaisse. Retirer du feu immédiatement et ajouter le beurre en cubes tout en mélangeant. Transférer dans un bol, couvrir de film alimentaire et mettre au frais jusqu'à complet refroidissement.

2 - Génoise: Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter 5-10 min jusqu'à obtenir un mélange jaune pâle et mousseux. Ajouter le beurre. Tamiser la farine et le sel. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une maryse. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser refroidir, puis décoller cette génoise du papier. La déposer sur un linge et la rouler très délicatement. Réserver. 

3 - Quand la génoise est complètement froide, la dérouler délicatement, étaler le lemon curd et la rouler une deuxième fois pour obtenir un cylindre bien ferme. Mettre au frais. Crème praliné: Mettre tous les ingrédients dans un grand bol bien froid - le mettre 30 min au frais - et fouetter jusqu'à obtention d'un glaçage bien ferme et homogène. Couvrir la bûche avec la moitié de la crème praliné à l'aide d'une spatule, puis mettre le reste dans un poche à douille de votre choix et décorer la bûche. Décorer de noisettes grillées grossièrement concassées. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

With Christmas just a few days away, I'm finally sharing my Yule log recipe with you. This year, I wanted to combine two ingredients that are rarely used together to create a rich praliné cream that contrasts perfectly with a tangy lemon curd. As praliné paste is mostly used in French pastry, it's simply a rich oily paste made of caramelized almonds and hazelnuts. It just requires three ingredients in that case, but it's faster and easier to buy it online to be fair, specially as you would need a pretty solid food processor to grind the nuts and the caramel into a smooth paste. For this recipe, I bought a classic almond and hazelnut praliné paste, which is usually the easiest to find in shops. As usual, I opted for a traditional Yule log in the form of a Swiss roll made with sponge cake. Serves 10-12.

Ingredients

Lemon curd

- 3 lemons
- 2 eggs
- 1 egg yolk
- 150 g sugar (3/4 cup)
- 2 tablespoons flour
- 50 g butter (1/2 stick).

Sponge cake

- 150 g sugar (3/4 cup)
- 110 g flour (1 cup)
- 4 eggs
- 50 g of butter, melted (1/2 stick)
- 1 pinch of salt.

Praline cream

- 125 g mascarpone cheese (1/2 cup)
- 20 cl full fat whipping cream (1 cup)
- 100 g hazelnut & almond praline past
- 1/2 teaspoon natural vanilla extract
- Roasted hazelnuts.

1 - Lemon curd: Zest and juice the lemons. Mix the flour and sugar in a bowl. Whisk in the lemon juice and zest, eggs and egg yolk until smooth. Pour the mixture into a saucepan and cook over medium heat, whisking continuously until it becomes thick and creamy. Remove from the heat immediately and stir in the cubed butter. Transfer to a bowl, cover with cling film and refrigerate until completely cooled.

2 - Sponge cakePut the eggs and the sugar in a bowl in a double-boiler and whisk 5-10 min until you get a pale and frothy mixture. Add the melted butter. Sift the flour and salt. Remove the bowl from the double boiler and fold gently the flour and salt in several batches with a rubber spatula into the egg mixture. Line a baking sheet (approximately 30x40 cm / 15x12") with baking paper and spread the batter evenly. Bake in a preheated oven at 180°C (360°F) for 15 min. Let cool, then take off the baking paper gently. Place it on a cloth and roll it very delicately. Set aside to let cool.

3 - When the sponge cake is completely cool, carefully unroll it, spread the lemon curd over it and roll it up again to form a firm cylinder. Chill. Praline cream: Place all the ingredients in a large, well-chilled bowl - chill for 30 minutes - and whisk until you obtain a firm, smooth icing. Cover the log with half of the praline cream using a spatula, then put the rest in a piping bag of your choice and decorate the log. Sprinkle with coarsely chopped roasted hazelnuts. Cut the ends for a neater finish and chill for about 30 minutes to allow the icing to set a little before serving.

Bundt cake noix de coco-citron vert / Coconut & Lime Bundt Cake


Avec septembre, arrive une de mes obsessions télévisuelles: le lancement du Meilleur Pâtissier, saison 14! Et évidemment impossible de regarder pendant 3 heures des gens préparer des gâteaux plus appétissants les uns que les autres, sans au moins une petite sucrerie à grignoter. J'adore utiliser des moules à bundt cakes joliment crénelés, qui transforment d'importe quelle pâte en un joli gâteau. Un soupçon de noix de coco et un peu de zestes de citron vert et on obtient un dessert délicieux, très simple à préparer et qui peut se conserver quelques jours, même si je sais pertinemment que de mon côté, il n'aura pas une durée de vie aussi longue! Pour 10-12 parts. 

Ingrédients

- 200 g de sucre
- 160 g de farine
- 150 g de beurre + pour le moule
- 120 g de yaourt nature
- 50 g de noix de coco rapée
- 3 œufs
- 1 jaune d'œuf
- 2 citrons verts
- 1 cuil à soupe de levure chimique
- 1 pincée de sel.

Glace royale 

- 100 g de sucre glace
- 1 blanc d'œuf
- 1 citron vert.

1 - Faire fondre le beurre. Mélanger le sucre, la farine, la noix de coco, la levure chimique et le sel. Incorporer le beurre, le yaourt, les œufs et le jaune d'œuf. Ajouter le jus et le zeste de citrons verts. Beurrer un moule à bundt cake, verser la pâte et enfourner dans un four préchauffé à 170°C pour 35-40 min, jusqu'à ce que le gâteau soit cuit à cœur. Couvrir d'un linge et laisser refroidir.

2 - Glace royale: Zester et presser le jus du citron vert. Mettre les zestes et 1 cuil à café de jus de citron vert dans le sucre glace. Badigeonner le gâteau avec le reste du jus. Enfin ajouter 2 cuil à soupe de blanc d'œuf au sucre glace et fouetter jusqu'à obtenir un glaçage lisse et épais, semblable à une pâte à gâteau. Si le mélange est trop dense ajouter une cuil à soupe de blanc d'œuf en plus. Napper le gâteau de cette glace royale à la cuillère ou avec un poche à douille et laisser le glace royale figer complètement (environ 1h) avant de servir. Le gâteau peut être conserver 2-3 jours hors du frigo, mais le couvrir pour éviter qu'il sèche.

September brings one of my television obsessions: the launch of Le Meilleur Pâtissier, the French spin off of BBC success The Great British Bake Off, season 14! And of course, it's impossible to watch people bake cakes, each one more appetising than the last, for three hours without at least a little sweet treat to nibble on. I love using pretty fluted bundt cake tins, which transform any batter into a beautiful cake. A hint of coconut and a little lime zest and you have a delicious dessert that is very easy to make and can be kept for a few days, although I know full well that it won't last that long in my house! Serves 10-12. 

Ingredients

- 200 g sugar (1 cup)
- 160 g flour (1 & 1/3 cup)
- 150 g butter + extra for the tin (1 & 1/4 stick)
- 120 g plain yoghurt (1/2 cup)
- 50 g grated coconut (2/3 cup)
- 3 eggs
- 1 egg yolk
- 2 limes
- 1 tablespoon baking powder
- 1 pinch of salt.

Royal icing

- 100 g icing sugar (1 cup)
- 1 egg white
- 1 lime.

1 - Melt the butter. Mix together the sugar, flour, coconut, baking powder and salt. Stir in the butter, yoghurt, eggs and egg yolk. Add the lime juice and zest. Grease a bundt cake tin, pour in the batter and bake in a preheated oven at 170°C (340°F) for 35-40 minutes, until the cake is cooked through. Cover with a cloth and leave to cool.

2 - Royal icing: Zest and juice the lime. Add the zest and 1 teaspoon of lime juice to the icing sugar. Brush the cake with the remaining juice. Finally, add 2 tablespoons of egg white to the icing sugar and whisk until you have a smooth, thick icing, similar to cake batter. If the mixture is too thick, add another tablespoon of egg white. Spread the royal icing over the cake with a spoon or piping bag and leave to set completely (about 1 hour) before serving. The cake can be stored for 2-3 days outside the fridge, but cover it to prevent it from drying out.

Cheesecake fraise-coco / Coconut & Strawberries Cheesecake


Alors que j'ai profité d'un long weekend de Pâques ensoleillé je me suis rappelé que nous étions en pleine saison des fraises. Je voulais donc, pour faire honneur à ce fruit, préparer un cheesecake tout simple mais délicieux où le goût riche de la noix de coco est contrebalancé par la fraîcheur des fraises. Comme d'habitude j'utilise plutôt du fromage blanc que du cream cheese pour cette recette, qui donne un résultat plus léger et crémeux. Pour 10-12 parts.

Ingrédients

- 600 g de fromage blanc
- 100 g de sucre
- 50 g de noix de coco râpée
- 20 cl de lait de coco
- 3 oeufs
- 1/2 cuil à café d'extrait naturel de vanille.

Croûte

- 200 g de petits-beurre
- 100 de beurre fondu.

Garniture

- 400 g de fraises
- 100 g de confiture de fraises
- Noix de coco râpée.

1 - Croûte : Réduire les biscuits en miettes et mélanger avec le beurre fondu dans un bol. Tapisser un moule à manqué (22-23 cm de diamètre) de papier sulfurisé et presser le mélange pour former une croûte. Ne pas former les bords trop hauts, car ils brûleront à la cuisson. Réfrigérer pendant 20 minutes. 

2 - Dans un saladier fouetter le fromage blanc avec le lait de coco, le sucre, la noix de coco râpée, les oeufs et l'extrait de vanille. Verser ce mélange sur la croûte et enfourner 50-55 min dans un four préchauffé à 160°c. Laisser refroidir plusieurs heures avant de démouler, idéalement toute une nuit.

3 - Équeuter les fraises et les couper en tranches fines. Une fois le cheesecake complètement froid, napper de confiture de fraises et couronner avec les lamelles de fraises. Saupoudrer un peu de noix de coco râpée. Mettre au frais environ 1 h avant de servir.

I was enjoying a long, sunny Easter weekend when I remembered that strawberries were in season. So, in honour of this fruit, I wanted to make a simple but delicious cheesecake in which the rich flavour of the coconut is counterbalanced by the freshness of the strawberries. As usual, I use fromage blanc rather than cream cheese for this recipe, which gives a lighter, creamier result. Fromage blanc is a typically French smooth cottage cheese that have the same texture as a yogurt. That's why I suggest you to just Greek yogurt in case you can't find fromage blanc, which is indeed rarely found outside of France and neighboring countries, especially Belgium. Serves 10-12.

Ingredients

- 600 g fromage blanc / Greek yogurt (2 & 1/2 cups)
- 100 g sugar (1/2 cup)
- 50 g grated coconut (2/3 cup)
- 20 cl coconut milk (1 cup)
- 3 eggs 
- 1/2 teaspoon natural vanilla extract.

Crust

- 200 g shortbreads, crushed (7 oz)
- 100 g melted butter (1 stick)

Topping

- 400 g strawberries (14 oz)
- 100 g strawberry jam (1/3 cup)
- Grated coconut.

1 - Crust: In a bowl, mix the biscuit powder with the melted butter. Line a 22-23 cm / 9" diameter springform pan with parchment paper and press the mixture down to form a crust. Do not make the edges too high, as they would burn during baking. Chill for 20 minutes.

2 - In a bowl, whisk the fromage blanc / Greek yogurt with the coconut milk, sugar, grated coconut, eggs and natural vanilla extract. Pour the mixture over the crust and bake for 50-55 minutes in an oven preheated to 160°C. Leave to cool for several hours before unmoulding, ideally overnight.

3 - Hull the strawberries and cut into thin slices. Once the cheesecake is completely cold, cover with the strawberry jam and top with the strawberry slices. Sprinkle with a little bit of grated coconut. Chill for about 1 h before serving.

Cheesecake café-Baileys / Baileys & Coffee Cheesecake


Aujourd'hui nous célébrons la Saint-Patrick et en l'honneur de tous les passionnés de Baileys, j'ai réalisé ce cheesecake multicouches avec du café et du Baileys, deux ingrédients communément utilisés en Irlande pour réaliser des pâtisseries. La recette possède un certain nombre d'étapes mais au final c'est un dessert assez simple qui nécessite juste un peu de temps pour que les deux couches de mousse figent bien. Pour 10-12 parts.

Ingrédients

- 120 g de petits-beurre
- 50 g de beurre, fondu
- 10 cl de crème liquide 30% de MG (1)
- 1 cuil à soupe de sucre
- 1 cuil à soupe de cacao en poudre + pour la décoration
- Copeaux de chocolat

Mousse au café  

- 150 g de yaourt grec entier
- 70 g de sucre
- 25 cl de crème liquide 30% de MG 
- 2 cuil à soupe de café instantané
- 1/2 cuil à café d'extrait de vanille
- 2 feuilles de gélatine (4 g).

Mousse au Baileys

- 100 g de yaourt grec entier
- 15 cl de crème liquide 30% de MG
- 10 cl de Baileys
- 1 cuil à soupe de sucre
- 2 feuilles de gélatine (4 g).

1 - Doubler un cercle en inox (18 cm de diamètre / 10 cm de haut) avec du rhodoïd. Réduire les petits-beurre en poudre et les mélanger avec le beurre et cacao en poudre. Répartir ce mélange dans le cercle et tasser le tout. Mettre au frigo environ 15 min. 

2 - Mousse au café: Dans une casserole faire chauffer 10 cl de crème à feu moyen et y diluer le café et le sucre. Dans une bol d'eau froide faire ramollir les 2 feuilles de gélatine. Lorsque la crème frémit ajouter la gélatine bien égouttée et la faire fondre dans la crème. Réserver. Dans un bol fouetter le reste de la crème avec le vanille - bien froide - jusqu'à obtenir une chantilly. Mélanger la crème au café chaude avec le yaourt. Incorporer ensuite la chantilly avec le mélange yaourt-crème au café à l'aide une maryse. Verser ce mélange dans le cercle en inox, sur la croûte en petits-beurre. Remettre au frigo 1 h. 

3 - Mousse au Baileys: Dans une casserole faire chauffer le Baileys à feu moyen avec le sucre. Dans une bol d'eau froide faire ramollir les 2 feuilles de gélatine. Lorsque le Baileys frémit ajouter la gélatine bien égouttée et la faire fondre complètement. Dans un bol fouetter la crème - bien froide - jusqu'à obtenir une chantilly. Mélanger le Baileys encore chaud avec le yaourt. Incorporer ensuite la chantilly avec le mélange yaourt-Baileys à l'aide une maryse. Verser ce mélange dans le cercle en inox, sur la mousse au café. Laisser figer au frigo au moins 5 h, idéalement tout une nuit. 

4 - Retirer le cercle en inox et le rhodoïd délicatement. Saupoudrer un peu de cacao en poudre au centre du cheesecake. Dans un bol fouetter la crème (1) - bien froide - avec le sucre jusqu'à obtenir une chantilly. Mettre en poche avec une douille en étoile et décorer le tour du cheesecake. Parsemer de copeaux de chocolat. Remettre au frais 30 min avant de servir.

Today we're celebrating St Patrick's Day and in honour of all the Baileys lovers out there, I've made this multi-layered cheesecake with coffee and Baileys, two ingredients commonly used in Ireland to make pastries. The recipe has a number of steps, but in the end it's a fairly simple dessert that just needs a little time for the two layers of mousse to set properly. The recipe needing precise quantities, the measurements are made in grams, the cup/oz system being to vague for this dessert. Serves 10-12.

Ingredients

- 120 g shortbread 
- 50 g butter, melted
- 10 cl f (1)
- 1 tablespoon sugar
- 1 tablespoon cocoa powder + for decoration
- Chocolate shavings.

Coffee mousse  

- 150 g full fat Greek yoghurt
- 70 g sugar
- 25 cl 
- 2 tablespoons instant coffee
- 1/2 teaspoon vanilla extract
- 2 gelatin leaves (4 g).

Baileys mousse

- 100 g full fat Greek yoghurt
- 15 cl full fat whipping cream
- 10 cl Baileys
- 1 tablespoon sugar
- 2 gelatin leaves (4 g)

1 - Line a stainless steel ring (18 cm / 7" diameter / 10 cm / 4" high) with rhodoïd sheet. Grind finely the shortbreads and mix with the butter and cocoa powder. Spread the mixture in the ring and press down. Chill in the fridge for about 15 mins. 

2 - Coffee mousse: Simmer 10 cl of cream in a saucepan over a medium heat and stir in the instant coffee and sugar. Soften the 2 leaves of gelatin in a bowl of cold water. When the cream is simmering, drain the gelatin and add it in the saucepan to melt it into the cream. Set aside. In a cold bowl, whip the rest of the cream with the vanilla until stiff. Mix the hot coffee cream with the yoghurt. Using a rubber spatula, fold the whipped cream into the yoghurt-coffee cream mixture. Pour this mixture into the stainless steel ring on top of the butter crust. Refrigerate for 1 hour. 

3 - Baileys mousse: Heat the Baileys and sugar in a saucepan over a medium heat. Soften the 2 leaves of gelatin in a bowl of cold water. When the Baileys is simmering, add the drained gelatin leaves and melt completely. In a bowl, whip the cream until stiff. Mix the still warm Baileys with the yoghurt. Using a rubber spatula, fold the whipped cream into the yoghurt-Baileys mixture. Pour this mixture into the stainless steel ring on top of the coffee mousse. Leave to set in the fridge for at least 5 hours, ideally overnight. 

4 - Carefully remove the stainless steel ring and the rhodoïd. Sprinkle a little bit of cocoa powder over the centre of the cheesecake. In a bowl, whip the chilled cream (1) with the sugar until stiff. Pipe into a pastry bag with a star tip and decorate the edges of the cheesecake. Sprinkle with chocolate shavings. Chill for 30 minutes before serving.

Cake chocolat-vin rouge / Chocolate & Red Wine Cake


Ca fait un petit moment que je voulais tester une recette que j'avais vu il y a bien longtemps dans un magazine Cuisine & Vins de France, pour lequel j'ai travaillé. Si je me rappelais que très vaguement des quantités précises je savais que cette recette mêlait chocolat et vin rouge. Une alliance surprenante mais qui fonctionne en réalité très bien. Le vin rouge adoucit l'amertume du chocolat noir et donne un goût très délicat au gâteau. Petite astuce que je réalise maintenant systématiquement lorsque je fais un gâteau: je badigeonne la croûte dès la sortie du four avec du sirop de sucre légèrement dilué avec de l'eau, du jus de fruit, du vin, etc. Cela permet de faire ramollir la croûte un peu sèche qui se forme sur votre gâteau et lui donne un moelleux incomparable. Pour environ 10-12 tranches.

Ingrédients

- 200 g de farine
- 150 g de sucre
- 125 g de beurre + pour le moule
- 100 g de chocolat
- 15 cl de vin rouge
- 3 oeufs
- 1 sachet de levure 
- 1/2 cuil à café d'extrait naturel de vanille
- Sirop de sucre.

Faire fondre le chocolat et le beurre au bain-marie ou au micro-ondes. Mélanger avec le reste des ingrédients à l'exception du sirop de sucre. Verser la pâte dans un grand moule à cake beurré et enfourner dans un four préchauffé à 170°C pour 45 min. Planter un couteau dans le cake car le temps de cuisson peut varier selon la profondeur et la largeur du moule. S'il ressort propre, le gâteau est cuit à cœur. Dès la sortie du four badigeonner avec du sirop de sucre dilué avec un peu de vin rouge et laisser entièrement refroidir en couvrant avec un linge pour préserver tout le moelleux du cake.

I've been meaning to try out a recipe I saw a long time ago in a Cuisine & Vins de France magazine I used to work for. Although I only vaguely remembered the precise quantities, I knew that this recipe combined chocolate and red wine. A surprising combination, but one that actually works very well. The red wine softens the bitterness of the dark chocolate and gives a very delicate flavour to the cake. A little tip that I now always use when I bake a cake: I brush the crust as soon as it comes out of the oven with a sugar syrup slightly diluted with water, fruit juice, wine, etc. This helps to soften the slightly dry crust that forms on your cake and gives it an incomparable softness. For approximately 10-12 slices.

Ingredients

- 200 g flour (1 & 1/2 cup)
- 150 g sugar (3/4 cup)
- 125 g butter + for the tin (1/2 cup)
- 100 g chocolate (4 oz)
- 15 cl red wine (3/4 cup)
- 3 eggs
- 1 tablespoon baking powder
- 1/2 teaspoon natural vanilla extract
- Sugar syrup.

Melt the chocolate and butter in a bain-marie or in the microwave. Mix with the remaining ingredients except for the sugar syrup. Pour the batter into a large buttered  loaf pan and bake in a pre-heated oven at 170°C for 45 minutes. Stick a knife into the cake, as the baking time will vary according to the depth and width of the pan. If it comes out clean, the cake is cooked through. As soon as it comes out of the oven, brush with sugar syrup diluted with a little red wine and leave to cool completely, covering with a cloth to preserve all the cake's softness.

Bûche pistache-fruits rouges / Pistachio & Berries Yule Log


Cette année pour ma bûche de Noël j'ai choisi un combinaison assez classique mais qui fonctionne très bien. J'aime comme l'acidité et la fraîcheur des fruits rouges se marient à merveille avec la richesse de la pistache. J'utilise ici de la purée de pistache bio 100% pure de la marque La Noix Gaillarde, qui est très parfumée et sans arôme artificiel, contrairement à beaucoup de pâte de pistache. Pour cette bûche j'ai choisi un mélange myrtilles-framboises, mais d'autres fruits rouges fonctionneront très bien. En attendant de nouvelles recettes pour cette fin d'année, je vous souhaite à tous un très joyeux Noël avec vos proches, vos familles et vos amis... Pour 10 parts. 

Ingrédients 

- 125 g de myrtilles
- 125 g de framboises
- 125 g de confiture de griottes.

Génoise

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 40 g de beurre, fondu
- 1 pincée de sel.

Crème pistache

- 350 g de mascarpone
- 30 cl de crème liquide 30% de MG 
- 150 g de pâte de pistache pure
- 4 cuil à soupe de sucre
- 1/2 cuil à café d'extrait naturel de vanille.

1 - Génoise: Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter 5-10 min jusqu'à obtenir un mélange jaune pâle et mousseux. Ajouter le beurre. Tamiser la farine et le sel. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une maryse. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser refroidir, puis décoller cette génoise du papier. La déposer sur un linge et la rouler très délicatement. Réserver. 

2 - Crème pistache: Mettre tous les ingrédients dans un grand bol bien froid - le mettre 30 min au frais - et fouetter jusqu'à obtention d'un glaçage bien ferme et homogène. Dérouler la génoise et étaler la confiture de griottes, puis couvrir de la moitié de la crème pistache. Répartir les 2/3 des myrtilles et des framboises. Rouler fermement pour obtenir une bûche bien cylindrique. Couvrir la bûche avec le reste de la crème pistache à l'aide d'une spatule et réaliser les décors de votre choix à la poche à douille. Décorer avec le reste des fruits. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

This year for my yule log I've chosen a fairly classic but foolproof combination. I love the way the acidity and freshness of the berries match wonderfully with the richness of the pistachio. Here I'm using 100% pure organic pistachio paste from La Noix Gaillarde, which is very fragrant and has no artificial flavouring, unlike a lot of pistachio paste. For this yule log I chose a blueberry-raspberry mix, but other berries will work very well. While we're waiting for new recipes for the end of the year, I'd like to wish you all a beautiful Christmas celebration with your loved ones... Serves 10.

Ingredients

- 125 g bluberries (1 cup)
- 125 g raspeberries (1 cup)
- 125 g sour cherry jam (1/3 cup).

Sponge cake

- 150 g sugar
- 110 g flour
- 4 eggs
- 50 g of butter, melted
- 1 pinch of salt
- Flaked almonds, toasted.

Pistachio cream 

- 350 g mascarpone
- 30 cl full fat whipping cream (1 & 1/2 cup)
- 150 g pure pistachio paste
- 4 tablespoons sugar
- 1/2 teaspoon natural vanilla extract.

1 - Sponge cakePut the eggs and the sugar in a bowl in a double-boiler and whisk 5-10 min until you get a pale and frothy mixture. Add the melted butter. Sift the flour and salt. Remove the bowl from the double boiler and fold gently the flour and salt in several batches with a rubber spatula into the egg mixture. Line a baking sheet (approximately 30x40 cm / 15x12") with baking paper and spread the batter evenly. Bake in a preheated oven at 180°C (360°F) for 15 min. Let cool, then take off the baking paper gently. Place it on a cloth and roll it very delicately. Set aside to let cool.

3 - Pistachio cream: Put all the ingredients in a large, very cold bowl - put it in the fridge for 30 min - and whisk until you get a firm and smooth icing. Unroll the sponge cake and spread the pistachio cream and 2/3 of the blueberries and the raspberries. Roll firmly to get a nicely shaped cylindrical log. Cover the log with the rest of the pistachio cream using a spatula. You can also use a pipping bag with a piping nozzle to create various decoration with the cream. Decorate with the remaining blueberries and raspberries Trim the edges for a better finish and chill for about 30 minutes so that the icing sets a little, before serving.

Cake poire-amande / Pear & Almond Cake


Aujourd'hui un dessert tout simple mais délicieux, réconfortant et très rapide à préparer que j'ai fait à plusieurs reprises et qui a toujours été validé par mes convives. Ce cake bien moelleux, avec son subtil goût d'amande et ses morceaux de poire fondants, est parfait avec une bonne tasse de thé brûlante, une nécessité avec la chute soudaine des températures ces derniers jours. L'ajout de sirop de sucre est une astuce que j'utilise depuis quelques temps - moi qui déteste les croûtes trop sèches - c'est idéal pour des gâteaux super moelleux. Pour 8-10 parts.

Ingrédients

- 150 g de farine
- 50 g de poudre d'amande
- 180 g de sucre
- 100 g de beurre, fondu + pour le moule
- 80 g de yaourt nature 
- 3 œufs
- 2 poires
- 1 cuil à soupe de levure chimique
- 4 gouttes d'extrait d'amande amère
- 2 cuil à soupe de sirop de sucre.

Mélanger la farine, la poudre d'amande, le sucre et la levure. Incorporer le beurre fondu, les œufs, le yaourt et l'extrait d'amande amère. Éplucher et évider les poires et les couper en lamelles épaisses. Mélanger les 2/3 des morceaux de poire à la pâte et verser dans un grand moule à cake beurre. Déposer par dessus le rester des morceaux de poires. Enfourner dans un four préchauffer à 170°C pour 30-40 min jusqu'à ce que le gâteau soit cuit à cœur. A la sortie du four badigeonner avec le sirop de sucre et laisser refroidir. Déguster à température ambiante.

Today a very simple but delicious, comforting and very quick dessert that I have made several times and which has always been loved by my guests. Ingredients

- 150 g flour (1 cup & 1/4) 
- 50 g almond powder (1/2 cup)
- 180 g sugar (1 cup)
- 100 g butter, melted (1 stick) + for the mold
- 80 g plain yogurt (1/3 cup)
- 3 eggs
- 2 pears
- 1 tablespoon baking powder
- 4 drops bitter almond extract
- 2 tablespoons sugar syrup.

Mix the flour, almond powder, sugar and baking powder. Incorporate the melted butter, eggs, yogurt and bitter almond extract. Peel and core the pears and cut them into thick slices. Combine 2/3 of the pear slices with the batter and pour into a large buttered loaf pan. Place the remaining pear pieces on top. Bake in a preheated oven at 170°C/340°F for 30-40 min until the cake is cooked through. When it comes out of the oven, brush with the sugar syrup and leave to cool. Serve at room temperature.

Paris-Brest pistache-framboise / Pistachio & Raspberry Paris-Brest

Pour mon anniversaire cette année j'avais de revisiter le Paris-Brest que j'avais déjà confectionné à la même date, il y a quelques années. Je suis un immense fan de pistache et je voulais réaliser une version avec ce fruit à coque que j'adore tant. J'utilise ici de la purée de pistache bio 100% pure de la marque La Noix Gaillarde, qui est très parfumée. Si le Paris-Brest traditionnel se compose d'une crème mousseline - comprendre une crème pâtissière additionnée de beurre pommade - ici j'ai voulu réaliser une crème "mousseline" plus légère - si on peut dire! - en utilisant plutôt du mascarpone. Pour une pointe d'acidité ce Paris-Brest est complété de framboises fraîches. Ma couronne comportait 20 choux, mais il me restait un peu de pâte pour en faire 6 de plus, qui ont bien sûr été dégustés sans modération! Pour 1 Paris-Brest. 

Ingrédients

Pâte à choux

- 120 g de farine
- 180 g d'eau
- 75 g de beurre
- 3 oeufs
- 1 cuil à soupe de sucre
- 1 pincée de sel.

Crème mousseline pistache-mascarpone

- 25 cl de lait
- 2 jaunes d'oeufs
- 120 g de sucre
- 25 g de farine
- 2 feuilles de gélatine (4 g)
- 150 g de pâte de pistache
- 1/2 gousse de vanille
- 300 g de mascarpone
- 125 g de framboises
- 2 gouttes d'extrait d'amande amère
- Pistaches décortiquées
- Colorant alimentaire vert (facultatif).

Craquelin

- 25 g de beurre
- 25 g de sucre
- 25 g de farine
- Colorant vert (optionnel).

1 - Crème mousseline pistache-mascarpone: Faire chauffer le lait à feu moyen avec la pâte de pistache et la gousse de vanille fendue et grattée jusqu'à frémissement. Fouetter les jaunes d’œuf, le sucre, la farine, l'extrait d'amande amère et le colorant vert jusqu'à obtenir un mélange crémeux et vert clair.  Verser le lait chaud dessus en fouettant puis transvaser ce mélange dans la casserole. Fouetter en continuant la cuisson à feu doux jusqu'à ce que la crème soit bien épaisse. Faire ramollir la gélatine dans un volume d'eau froide.  Ajouter la gélatine ramollie et bien égouttée à la crème pistache en fouettant bien. Retirer du feu et transvaser dans un plat évasé, filmer au contact avec du film plastique et mettre au frais.

2 - Craquelin: Mélanger les ingrédients jusqu'à obtenir une pâte crémeuse. L'étaler entre deux feuilles de papier sulfurisé sur 2 mm et mettre au congélateur. Pâte à choux: Faire chauffer l'eau avec le beurre, le sucre et le sel dans une casserole à feu moyen jusqu'à ébullition. Verser ensuite la farine d'un coup et mélanger rapidement. Baisser le feu et continuer à mélanger jusqu'à obtenir une boule de pâte homogène. Enlever du feu et laisser légèrement tiédir quelques minutes. Ajouter ensuite les œufs un par un en mélangeant vigoureusement entre chaque œuf jusqu'à obtenir une pâte dense et légèrement collante. Mettre dans une poche à douille avec une douille ronde.

3 - Dessiner un cercle d'environ 25 cm de diamètre sur du papier sulfurisé et pocher un cercle de pâte à choux d'environ 5 mm d'épaisseur, puis pocher par dessus une couronne de 20 choux d'environ 4 cm de diamètre. Avec un emporte-pièce faire des cercles d'environ 3 cm de diamètre avec le craquelin et déposer un cercle sur chaque chou. Enfourner 20 min dans un four préchauffé à 200°C. Un fois cuit laisser la couronne de choux dans le four entrouvert pour laisser la vapeur s'échapper lentement, puis sortir les choux et laisser complètement refroidir.

4 - Mettre la crème pistache dans un cul de poule et fouetter tout en ajoutant le mascarpone petit à petit jusqu'à ce que la crème commence à se raffermir et forme des pics. Mettre la crème dans une poche à douille crénelée. Couper la couronne de choux dans l'épaisseur et garnir les choux de la crème mousseline. Recouvrir par le dessus de la couronne. Décorer la crème avec les framboises et les pistaches décortiquées. Saupoudrer de sucre glace et mettre au frais au moins 1 h avant de servir pour que la crème fige.

For my birthday this year I had to revisit the classical Paris-Brest that I had already made on the same date, a few years ago. I am a huge fan of pistachio and I wanted to make a version with this nut that I love so much. Here I use a 100% pure organic pistachio puree from the brand La Noix Gaillarde, which is very fragrant. If the traditional Paris-Brest is made of a mousseline cream - aka a pastry cream with softened butter - here I wanted to make a "lighter" mousseline cream by using mascarpone instead. For a touch of acidity this Paris-Brest is completed with fresh raspberries. My crown included 20 choux, but I had a little dough left for 6 more, which of course were devored without hesitation! Please note that the measurements are made only in grams for this specific recipe because the cup/oz system is not accurate enough for a Paris-Brest. For 1 Paris-Brest.

Ingredients

Choux pastry

- 120 g flour
- 180 g water
- 75 g butter
- 3 eggs
- 1 tablespoon sugar
- 1 pinch salt.

Pistachio-mascarpone mousseline cream

- 25 cl milk
- 2 egg yolks
- 120 g sugar
- 25 g flour
- 2 sheets of gelatin (4 g)
- 150 g pistachio puree
- 1/2 vanilla pod
- 300 g mascarpone
- 125 g raspberries
- 2 drops of bitter almond extract
- Shelled pistachios
- Green food coloring (optional).

Craquelin

- 25 g butter
- 25 g sugar
- 25 g flour.

1 - Pistachio-mascarpone mousseline cream: Heat the milk over medium heat with the pistachio puree and the split and scraped vanilla pod until simmering. Whisk the egg yolks, sugar, flour, bitter almond extract and green food coloring until you get a creamy light green mixture. Pour the hot milk over it while whisking, then transfer this mixture to the saucepan. Whisk and continue cooking over low heat until the cream is very thick. Soften the gelatin in a volume of cold water. Add the softened and well-drained gelatin to the pistachio custard, whisking well. Remove from the heat and transfer to a wide dish, cover with plastic wrap and refrigerate.

2 - Craquelin: Mix all the ingredients until you get a smooth dough and spread on 2 mm between two squares of parchment paper and put in the freezer. Choux dough: Bring the water with the butter, the sugar and the salt to a boil over medium heat. Pour the flour in one batch and mix until you get a smooth ball of dough. Remove from the stove and let it cool slightly for few minutes Add the eggs one by one and mix vigourously until you get a dense and slighty sticky batter. Put in a piping bag with a round nozzle.

3 - Draw a 25 cm (10") circle on parchment paper and a pipe a 5 mm thick circle of batter then pipe on this circle a crown of 20 choux (about 4 cm in diameter). With a small cookie-cutter cut small discs (about 2 cm - 1") into the frozen craquelin sheet and put a disc of craquelin on each choux. Put in a preheated oven at 200°C (360°F) about 20 min . Once cooked open the over door slightly to let the steam escape then take the choux out of the oven and let it cool completely.

4 - Put the pistachio custard in a large bowl and whisk while adding the mascarpone little by little until the cream begins to firm up and form peaks. Put the cream in a piping bag with a star nozzle. Cut the choux pastry crown in half and fill the choux with the pistachio mousseline cream. Cover with the top of the crown. Decorate the cream with the raspberries and shelled pistachios. Sprinkle with icing sugar and refrigerate for at least 1 hour before serving so that the cream set.

Gâteau minute à l'orange / One-Minute Orange Cake


Je vous propose aujourd'hui une recette simplissime de cake à l'orange que j'ai découvert sur Instagram et que j'ai déjà fait une dizaine de fois. Je n'ai pas copié la recette en détails, mais j'ai surtout repris l'idée de mixer une orange entière, peau et pulpe ensemble, donnant un gâteau très parfumé et bien moelleux. La pâte étant préparée avec un mixeur, elle est prête en quelques instants. Il ne reste plus qu'à enfourner. Pour 10-12 tranches. 

Ingrédients

- 220 g de farine
- 200 g de sucre
- 100 g de yaourt grec
- 100 g d'huile d'olive
- 3 œufs
- 1 orange bio
- 1 sachet de levure chimique
- Beurre, pour le moule.

Couper l'orange en tranches pour retirer d'éventuels pépins. Mixer l'orange jusqu'à obtenir une purée grossière. Ajouter le reste des ingrédients et mixer encore pour obtenir une pâte homogène. Verser la pâte dans un moule à cake beurré. Enfourner 35-40 min dans un four préchauffé à 170°C. A la sortie du four couvrir le gâteau avec un linge pour que le gâteau garde tout son moelleux en refroidissant. Servir à température ambiante.

Today I'm sharing with you a super simple orange cake recipe that I discovered on Instagram and that I've already made about ten times. I did not copy-paste the recipe , but I mainly used the idea of blending a whole orange, skin and pulp together, giving a very fragrant and moist cake. Since the batter is prepared with a food processor, it is ready in just a few seconds. All that's left to do is put it in the oven. Once again i For 10-12 slices.

Ingredients

- 220 g flour (2 cups)
- 200 g sugar (1 cup)
- 100 g of Greek yogurt (1/3 cup)
- 100 g of olive oil (1/2 cup)
- 3 eggs
- 1 orange, organic
- 1 tablespoon baking powder
- Butter, for the tin.

Cut the orange into slices to remove any seeds. Blend the orange in a food processor until you get a coarse puree. Add the rest of the ingredients and blend again to get a smooth batter. Pour the batter into a buttered cake mold. Bake for 35-40 minutes in a preheated oven to 170°C (350°F). Once cooked remove from the oven and cover the cake with a kitchen cloth so that the cake remains soft as it cools. Serve at room temperature.

Bûche mangue-coco-passion / Coconut-Mango-Passion Yule Log


Après avoir réalisé de nombreuses recettes de bûche, en privilégiant des ingrédients comme le chocolat, les pommes, le citron et Cie, j'avais envie cette année de préparer une bûche aux accents tropicaux. Je trouve que la douceur et la richesse de la noix de coco s'associe bien avec la fraîcheur et l'acidité du mélange mangue-passion. Encore une fois je suis parti sur un biscuit roulé que je préfère aux entremets à base de mousse. Pour 10-12 parts. 

Ingrédients

Génoise

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 1 pincée de sel
- Noix de coco, pour décoration.

Mousse coco

- 250 g de mascarpone 
- 40 cl de crème liquide 30% de MG 
- 70 g de noix de coco râpée
- 70 g de sucre 
- 1/4 gousse de vanille.

Crème mangue-passion 

- 1 mangue, bien mûre
- 4 fruits de la passion
- 2 œufs
- 60 g de sucre
- 1 cuil à soupe de farine.

1 - Mousse coco: Dans une casserole faire frémir 20 cl de crème, la noix de coco râpée, le sucre et la gousse de vanille, grattée. Laisser infuser 10 min à feu doux. Retirer du feu et laisser refroidir. Retirer la gousse de vanille. Tamiser le tout en pressant bien pour extraire toute la crème. Mettre la crème au frais et conserver la noix de coco bien égouttée pour préparer la génoise. 

2 - Crème mangue-passion: Éplucher et couper la mangue en petits cubes. Mettre 2/3 des cubes de mangue dans une casserole avec 10 g de sucre et laisser compoter à feu moyen-doux environ 15 min jusqu'à ce que la mangue soit réduite en purée (passer au mixer si nécessaire). Ajouter le reste des cubes de mangue et réserver. Prélever la pulpe des fruits de la passion et tamiser le tout pour retirer les graines. Dans une casserole mettre la jus des fruits de la passion, le reste du sucre, les œufs et la farine. Bien fouetter et faire cuire à feu moyen jusqu'à obtenir une crème lisse et épaisse. Retirer du feu et incorporer la compotée de mangue à la crème passion. Mettre au frais.

Laisser tiédir, puis décoller cette génoise du papier. La déposer sur un linge et la rouler très délicatement. Réserver. 

3 - Mettre la crème mangue-passion et la moitié de la mousse coco en poche à douille. Dérouler la génoise bien froide et pocher la crème mangue-passion et la mousse coco en alternant pour faire des lignes. Rouler fermement pour obtenir une bûche bien cylindrique. Couvrir la bûche avec le reste de la mousse coco en décorant selon vous goûts (cubes de mangue, pulpe de fruits de la passion, etc.). Saupoudrer de noix de coco râpée. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

After having made many yule logs recipes, favoring ingredients like chocolate, apples, lemon and so on, this year I wanted to prepare a yule log with an exotic flair. I find that the sweetness and richness of the coconut combines well with the freshness and acidity of the mango-passion fruit blend. Once again I opted for a rolled biscuit which I prefer to mousse-based desserts. once again I use a gram/centiliter measurements because the once/cup system is too vague for fine pastry. For 10-12 slices.

Ingredients

Sponge cake

- 150 g of sugar
- 110 g of flour
- 4 eggs
- 1 pinch of salt
- Coconut, for decoration.

Coconut mousse

- 250 g of mascarpone
- 40 cl of liquid cream 30% fat
- 70 g grated coconut
- 70 g of sugar
- 1/4 vanilla pod.

Mango-passion curd

- 1 mango, fully ripe
- 4 passion fruits
- 2 eggs
- 60 g of sugar
- 1 tablespoon of flour.

1 - Coconut mousse: In a saucepan, bring 20 cl of cream, the grated coconut, the sugar and the scraped vanilla pod to a simmer. Leave to infuse for 10 minutes over low heat. Remove from heat and let cool. Remove the vanilla pod. Sift everything together, pressing well to extract all the cream. Refrigerate the cream and keep the well-drained coconut to prepare the sponge cake.

2 - Mango-passion curd: Peel and cut the mango into small cubes. Place 2/3 of the mango cubes in a saucepan with 10 g of sugar and leave to stew over medium-low heat for about 15 minutes until the mango is pureed (blend with a food processor if necessary). Add the rest of the mango cubes and set aside. Take the pulp of the passion fruit and sieve everything to remove the seeds. In a saucepan put the passion fruit juice, the rest of the sugar, the eggs and the flour. Whisk well and cook over medium heat until you obtain a smooth and thick cream. Remove from the heat and add the cubed butter while whisking. Incorporate the mango compote into the passion cream. Put in the fridge.

3 - Sponge cake: Place the eggs and sugar in a bowl in a bain-marie and whisk for 5-10 minutes until you obtain a pale yellow and foamy mixture. Add the coconut from the coconut mousse. Sift the flour and salt. Remove the bowl from the bain-marie and add the flour and salt in several batches with a spatula. Line a baking tray (approximately 30x40 cm) with baking paper and spread the dough. Bake in a preheated oven at 180°C/355°F for 15 minutes. Leave to cool, then peel this sponge cake off the paper. Place it on a cloth and roll it very delicately. To book.

3 - Place the mango-passion curd and half of the coconut mousse in a piping bag. Unroll the cold sponge cake and pipe the mango-passion cream and the coconut mousse alternately to make lines. Roll firmly to obtain a very cylindrical log. Cover the log with the rest of the coconut mousse, decorating according to your taste (mango cubes, passion fruit pulp, etc.). Sprinkle with grated coconut. Cut the ends for a neat finish and refrigerate for about 30 minutes so that the icing sets a little, before serving.

Lady Savannah Cake


Pour mon anniversaire cette année j'ai opté pour un gâteau de mon invention, inspiré du dessert américain, le "Lady Baltimore Cake". En réalité mon gâteau est assez différent et tire son nom de Savannah, une des plus belles villes historiques des USA, située dans l'état de Géorgie, connu pour ses pêches, d'où le surnom de Peach State. En effet j'adore ce fruit dont je me suis régalé tout l'été et j'avais envie d'en faire un gâteau. Cette recette est un plus complexe que ce que j'ai l'habitude de vous proposer, toutefois c'est surtout un dessert un peu long avec beaucoup d'étapes même si en soit la préparation n'est pas très compliquée. Pour ceux qui voudraient réaliser cette recette en hiver par exemple, on peut évidemment utiliser des fruits au sirop en conserve même si le goût sera assez différent. Si vous n'arrivez pas à retirer la peau des pêches vous pouvez les passer 1-2 min dans de l'eau bouillante pour qu'elles soient plus faciles à éplucher. Il n'est pas nécessaire d'avoir un cercle à pâtisserie pour cette recette. Vous pouvez utiliser votre moule à manquer en le doublant de rhodoïd, même si le cercle à pâtisserie rend le montage plus facile. Pour 10-12 parts. 

Ingrédients

- 6 pêches blanches
- 6 abricots
- 1 cuil à soupe de sucre
- 2 g de gélatine
- 50 g d'amandes effilées
- 10 cl de rhum ambré.

Génoise 

- 150 g de sucre 
- 120 g de farine 
- 4 œufs 
- 30 g de beurre fondu + pour le moule.

Crème diplomate

- 25 cl de lait 
- 50 g de sucre
- 2 jaunes d’œuf 
- 30 g de fécule de maïs
- 4 g de gélatine
- 20 cl de crème liquide 30% de MG
- 1/2 gousse de vanille.

Chantilly 

- 100 g de mascarpone
- 20 cl de crème liquide 30% de MG 
- 1 cuil à soupe de sucre.

1 - Génoise: Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter le tout jusqu'à obtenir un mélange jaune pâle et mousseux. Incorporer le beurre. Enlever le saladier du bain-marie et incorporer la farine en plusieurs fois avec une maryse. Verser la pâte dans un moule à manqué beurré d'environ 20 cm de diamètre. Enfourner dans un four préchauffé à 200°c pour 20 min. Réserver et laisser entièrement refroidir. 

2 - Crème diplomate (1/2): Faire chauffer le lait avec la gousse de vanille fendue et grattée dans un casserole à feu moyen jusqu'à frémissement. Faire ramollir la gélatine dans de l'eau froide. Fouetter les jaunes d'œuf avec le sucre et la fécule de maïs jusqu'à obtenir un mélange lisse et jaune pâle. Incorporer le lait en filet tout en fouettant dans le mélange jaune d'oeuf-sucre. Transvaser ce mélange dans la casserole et poursuivre la cuisson à feu moyen tout en fouettant. Incorporer la gélatine bien ramollie et mélanger jusqu'à obtenir une crème pâtissière bien lisse et onctueuse. Mettre au frigo jusqu'à ce que la crème soit fraîche mais pas complètement gélifiée.

3 - Dénoyauter les abricots et les couper en morceaux. Dans une poêle faire fondre le beurre à feu moyen et faire revenir les abricots avec le sucre jusqu'à ce qu'ils soient bien fondants. Faire ramollir la gélatine dans de l'eau froide. Mixer les abricots encore chauds avec la gélatine bien ramollie jusqu'à obtenir un coulis bien lisse. Mettre au frais. Couper les pêches en deux et les dénoyauter. Retirer la peau délicatement. Réserver 4 demi pêches pour la décoration et couper le reste en gros cubes. Toaster les amandes effilées sans matière grasse dans une poêle jusqu'à ce qu'elles soient dorées. Réserver. 

4 - Crème diplomate (2/2): Fouetter la crème liquide bien froide dans une bol passé au frigo préalablement jusqu'à obtenir une crème fouettée bien ferme. Fouetter rapidement la crème pâtissière pour l'assouplir et incorporer délicatement la crème fouettée jusqu'à obtenir une crème diplomate et bien aérienne. Couper la génoise en 3 dans l'épaisseur. Déposer une première couche de génoise dans un cercle à pâtisserie doublé de rhodoid. Badigeonner avec un tiers de rhum et un tiers de purée d'abricots. Garnir avec la moitié de la crème diplomate et la moitié des cubes de pêches. Couvrir avec une 2e couche de génoise. Répéter l'opération une deuxième fois et couvrir avec la 3e couche de génoise. Badigeonner avec le reste de rhum. Garder le rester de la purée d'abricots pour la décoration. Mettre au frais quelques heures pour que la crème fige bien. 

5 -  Chantilly: Fouetter la crème liquide bien froide avec le mascarpone et le sucre dans une bol passé au frigo préalablement jusqu'à obtenir une chantilly bien ferme. Lorsque que le gâteau est bien pris au frais, enlever délicatement le cercle de pâtisserie et le rhodoïd. Déposer le gâteau dans un plat de service. Napper le gâteau avec la moitié de la chantilly et coller les amandes effilées sur le tour. Couper 3 demi pêches en deux. Sur le dessus du gâteau déposer une demi pêche au milieu et répartir les 6 quarts de pêches autour. Mettre la reste de la chantilly dans une poche à douille avec une douille en étoile et décorer le dessus du gâteau. Déposer des gouttes de purée d'abricots sur le dessus du cake pour finir la décoration. Mettre au frais au moins une heure avant de servir.

For my birthday this year I decided to create a cake inspired by the American dessert, the Lady Baltimore Cake. Actually my cake is rather different and takes its name from Savannah, one of the most beautiful historic cities in the USA, situated in the state of Georgia, famous for its peaches, hence the nickname Peach State. I love this fruit, which I've been enjoying all summer, and I wanted to make a cake from it. This recipe is a bit more complex than what I'm used to, but it's a rather long dessert with lots of steps, even though the preparation isn't very complicated itself. For those who would like to make this recipe in winter, for example, you can of course use tinned fruit in syrup, although the taste will be quite different. If you are unable to remove the skin from the peaches, you can blanch them in boiling water for 1-2 minutes to make them easier to peel. You don't need a pastry ring for this recipe. You can use your springform tin and line it with rhodoid, although the pastry ring makes the layering a bit easier. Since the recipe is quite precise I went for a gram/cl measurement. For 10-12 slices. 

Ingredients

- 6 white peaches
- 6 apricots
- 1 tablespoon sugar
- 2 g gelatine
- 50 g flaked almonds
- 10 cl amber rum

Sponge cake 

- 150 g sugar 
- 120 g flour 
- 4 eggs 
- 30 g melted butter + for the mould.

Crème diplomate

- 25 cl milk 
- 50 g sugar
- 2 egg yolks 
- 30 g cornstarch
- 4 g gelatine
- 20 cl full fat whipping cream
- 1/2 vanilla pod.

Chantilly cream 

- 100 g mascarpone
- 20 cl full fat whipping cream
- 1 tbsp sugar.

1 - Sponge cake: Put the eggs and sugar in a bowl over a bain-marie and whisk until pale yellow and fluffy. Add the butter. Remove the bowl from the bain-marie and fold in the flour using a rubber spatula. Pour the batter into a buttered springform tin about 20 cm in diameter. Bake in a preheated oven at 200°C for 20 minutes. Set aside and leave to cool completely. 

2 - Crème diplomate (1/2): Heat the milk with the split vanilla pod in a saucepan over a medium heat until simmering. Soften the gelatine in cold water. Whisk the egg yolks with the sugar and cornflour until smooth and pale yellow. Whisk the milk into the egg yolk-sugar mixture. Transfer this mixture to the saucepan and continue cooking over a medium heat, whisking all the time. Add the softened gelatine until the custard is smooth and creamy. Chill in the fridge until the cream is cool but not completely jellified.

3 - Pit the apricots and cut into pieces. Melt the butter in a frying pan over a medium heat and cook the apricots with the sugar until they are soft. Soften the gelatine in cold water. Blend in a food frocessor the warm apricots with the softened gelatine until you have a smooth coulis. Chill in the fridge. Cut the peaches in half and remove the stones. Carefully remove the skin. Set aside 4 peach halves for decoration and cut the rest into large cubes. Toast the flaked almonds in a frying pan without fat until golden. Set aside. 

4 - Crème diplomate (2/2): Whip the chilled cream in a chilled bowl until stiff. Quickly whip the custard to soften it and gently fold in the whipped cream until you have a light, crème diplomate. Cut the sponge cake into 3 layers. Place the first layer of sponge cake in a rhodoid-lined 20 cm pastry ring. Brush with a third of the rum and a third of the apricot purée. Top with half the crème diplomate and half the peach cubes. Cover with a 2nd layer of sponge cake. Repeat the operation a second time and cover with the 3rd layer of sponge cake. Brush with the remaining rum. Keep the remaining apricot purée for decoration. Chill for a few hours to allow the cream to set. 

5 - Chantilly cream: Whip the cold cream with the mascarpone and sugar in a chilled bowl until stiff. When the cake has set in the fridge, carefully remove the pastry ring and rhodoïd. Place the cake on a serving dish. Coat the cake with half the whipped cream and sprinkle the flaked almonds around the edge. Cut 3 peach halves in half. On top of the cake, place one peach half in the middle and arrange the 6 peach quarters around it. Pipe the remaining whipped cream into a piping bag with a star nozzle and decorate the top of the cake. Drizzle the apricot purée over the top of the cake to finish the decoration. Chill for at least an hour before serving.
