Bûche praliné & citron / Praliné & Lemon Yule Log


Alors que nous sommes qu'à quelques jours de Noël je vous propose enfin ma recette de bûche. Cette année j'avais envie d'associer deux ingrédients qui sont rarement utilisés ensemble pour créer une riche crème au praliné qui contraste parfaitement avec un lemon curd bien acidulé. J'ai acheté pour cette recette un praliné classique amande & noisette, qui est généralement le plus simple à trouver dans le commerce. Comme d'habitude je suis parti sur une bûche traditionnelle sous forme d'un gâteau roulé à base de biscuit génoise. Pour 10-12 parts. 

Ingrédients 

Lemon curd

- 3 citrons
- 2 oeufs
- 1 jaune d'œuf 
- 150 g de sucre
- 2 cuil à soupe de farine
- 50 g de beurre.

Génoise

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 40 g de beurre, fondu
- 1 pincée de sel.

Crème praliné

- 125 g de mascarpone
- 20 cl de crème liquide 30% de MG 
- 100 g de praliné noisette & amande
- 1/2 cuil à café d'extrait naturel de vanille
- Noisettes grillées.

1 - Lemon curd: Zester et presser le jus des citrons. Mélanger la farine et le sucre dans un saladier. Incorporer le jus et les zestes de citron, les oeufs et le jaune d'œuf à l'aide d'un fouet jusqu'à obtenir un mélange lisse. Verser le tout dans une casserole et faire cuire à feu moyen tout en mélanger continuellement à fouet jusqu'à obtenir une texture crémeuse et épaisse. Retirer du feu immédiatement et ajouter le beurre en cubes tout en mélangeant. Transférer dans un bol, couvrir de film alimentaire et mettre au frais jusqu'à complet refroidissement.

2 - Génoise: Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter 5-10 min jusqu'à obtenir un mélange jaune pâle et mousseux. Ajouter le beurre. Tamiser la farine et le sel. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une maryse. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser refroidir, puis décoller cette génoise du papier. La déposer sur un linge et la rouler très délicatement. Réserver. 

3 - Quand la génoise est complètement froide, la dérouler délicatement, étaler le lemon curd et la rouler une deuxième fois pour obtenir un cylindre bien ferme. Mettre au frais. Crème praliné: Mettre tous les ingrédients dans un grand bol bien froid - le mettre 30 min au frais - et fouetter jusqu'à obtention d'un glaçage bien ferme et homogène. Couvrir la bûche avec la moitié de la crème praliné à l'aide d'une spatule, puis mettre le reste dans un poche à douille de votre choix et décorer la bûche. Décorer de noisettes grillées grossièrement concassées. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

With Christmas just a few days away, I'm finally sharing my Yule log recipe with you. This year, I wanted to combine two ingredients that are rarely used together to create a rich praliné cream that contrasts perfectly with a tangy lemon curd. As praliné paste is mostly used in French pastry, it's simply a rich oily paste made of caramelized almonds and hazelnuts. It just requires three ingredients in that case, but it's faster and easier to buy it online to be fair, specially as you would need a pretty solid food processor to grind the nuts and the caramel into a smooth paste. For this recipe, I bought a classic almond and hazelnut praliné paste, which is usually the easiest to find in shops. As usual, I opted for a traditional Yule log in the form of a Swiss roll made with sponge cake. Serves 10-12.

Ingredients

Lemon curd

- 3 lemons
- 2 eggs
- 1 egg yolk
- 150 g sugar (3/4 cup)
- 2 tablespoons flour
- 50 g butter (1/2 stick).

Sponge cake

- 150 g sugar (3/4 cup)
- 110 g flour (1 cup)
- 4 eggs
- 50 g of butter, melted (1/2 stick)
- 1 pinch of salt.

Praline cream

- 125 g mascarpone cheese (1/2 cup)
- 20 cl full fat whipping cream (1 cup)
- 100 g hazelnut & almond praline past
- 1/2 teaspoon natural vanilla extract
- Roasted hazelnuts.

1 - Lemon curd: Zest and juice the lemons. Mix the flour and sugar in a bowl. Whisk in the lemon juice and zest, eggs and egg yolk until smooth. Pour the mixture into a saucepan and cook over medium heat, whisking continuously until it becomes thick and creamy. Remove from the heat immediately and stir in the cubed butter. Transfer to a bowl, cover with cling film and refrigerate until completely cooled.

2 - Sponge cakePut the eggs and the sugar in a bowl in a double-boiler and whisk 5-10 min until you get a pale and frothy mixture. Add the melted butter. Sift the flour and salt. Remove the bowl from the double boiler and fold gently the flour and salt in several batches with a rubber spatula into the egg mixture. Line a baking sheet (approximately 30x40 cm / 15x12") with baking paper and spread the batter evenly. Bake in a preheated oven at 180°C (360°F) for 15 min. Let cool, then take off the baking paper gently. Place it on a cloth and roll it very delicately. Set aside to let cool.

3 - When the sponge cake is completely cool, carefully unroll it, spread the lemon curd over it and roll it up again to form a firm cylinder. Chill. Praline cream: Place all the ingredients in a large, well-chilled bowl - chill for 30 minutes - and whisk until you obtain a firm, smooth icing. Cover the log with half of the praline cream using a spatula, then put the rest in a piping bag of your choice and decorate the log. Sprinkle with coarsely chopped roasted hazelnuts. Cut the ends for a neater finish and chill for about 30 minutes to allow the icing to set a little before serving.

Babka praliné & framboise / Praliné & Raspberry Babka


Cela fait un bon moment que je voulais préparer une babka et ces derniers jours le temps devenant plus automnal, une bonne brioche me semblait idéale avec une tasse de thé pour regarder tomber la pluie sous un plaid. Traditionnellement une babka est le plus souvent parfumé à l'orange avec une garniture au chocolat avec des noisettes concassées. Je suis parti sur une version assez différente avec du praliné et des framboises. Vous pouvez choisir un praliné à base de noisettes, d'amandes ou un mélange des deux, le goût restant assez similaire. Le praliné peut devenir assez dur notamment s'il fait frais. N'hésitez pas à le passer au micro-ondes 10-15 secondes pour le faire ramollir un peu. Si vous n'en trouvez pas, vous pouvez le remplacer avec du nutella, l'accord nutella-framboises fonctionnant très bien. Si vous utilisez des framboises congelées - ce qui était mon cas - laissez les décongeler complètement et égouttez-les car elles libèrent beaucoup de jus, qui détremperez la pâte. Comme toute viennoiserie maison cette brioche tend à rassir assez vite. N'hésitez donc pas à la couper en tranches épaisses et à la congeler. Passez les tranches aux micro-ondes environ 10-15 secondes et laisser reposer 1 minute, elles retrouveront tous leur moelleux. Pour 1 grosse babka.

Ingrédients

- 350 g de farine + pour le plan de travail
- 50 g de sucre  
- 50 g de beurre fondu
- 20 cl de lait
- 1 œuf
- 5 g levure de boulanger déshydratée
- 1/2 cuil à café d'extrait de vanille
- 1 pincée de sel.

Garniture

- 150 g de praliné amande/noisette 
- 125 g de framboises
- 1 cuil à soupe de noisettes concassées.

Sirop

- 50 g de sucre
- 5 cl d'eau. 

1 - Diluer la levure dans le lait tiède avec le sucre et laisser reposer 10 min jusqu'à ce que le mélange mousse. Ajouter le beurre fondu, l'œuf, l'extrait de vanille et le sel, puis la farine et pétrir jusqu'à obtenir une pâte lisse, homogène et élastique. Couvrir la pâte d'un linge et laisser reposer 50 min dans une pièce chaude.

2 - Lorsque la pâte a bien levé la dégazer en pressant avec le poing puis la pétrir rapidement. Étaler la pâte sur un plan de travail fariné pour obtenir un rectangle de 40x30 cm. Étaler le praliné et repartir les framboises et rouler la pâte pour former un boudin. Couper ce boudin dans la longueur et torsader les deux demi-boudins. Le déposer dans un grand moule à cake beurré. Couvrir d'un linge humide et laisser monter 50 min dans un pièce chaude. 

3 - Enfourner 25 min dans un four préchauffé à 180°C. Pour le sirop faire fondre le sucre avec l'eau à feu moyen et laisser frémir 10-15 min jusqu'à obtenir un sirop assez liquide. Laisser tiédir. A la sortie du four, couvrir la brioche avec un linge pour qu'elle reste moelleuse. Badigeonner la babka encore chaude de sirop avec un pinceau à pâtisserie et parsemer de noisettes concassées. Laisser tiédir.

I have been wanting to make a babka for a while now and in recent days as the weather has become more autumnal, a good brioche seemed ideal with a cup of tea to watch the rain fall under a blanket. Traditionally a babka is most often flavored with orange with a chocolate and crushed hazelnuts filling. I went for a rather different version with praliné paste and raspberries. You can choose a praliné paste made with hazelnuts, almonds or a mixture of the two, the taste being quite similar. The praliné paste can become quite hard, especially if it is cool. Do not hesitate to put it in the microwave for 10-15 seconds to soften it a little. If you can't find any, you can replace it with Nutella, since the Nutella-raspberry combo works very well too. If you use frozen raspberries - which was my case - let them defrost completely and drain them because they release a lot of juice, which will soak the dough. Like all homemade pastries, this brioche tends to go stale quite quickly. So don't hesitate to cut it into thick slices and freeze it. Microwave the slices for about 10-15 seconds and let it rest for 1 minute, they will regain all their softness. For 1 large babka.

Ingredients

- 360 g flour (2 & 1/2 cups) + for the work surface
- 50 g sugar (1/4 cup)
- 20 cl milk (1 cup)
- 50 g butter, melted (2 oz)
- 1 egg
- 5 g dehydrated yeast (1/2 tablespoon)
- 1/4 teaspoon vanilla extract
- 1 pinch salt.

Filling

- 150 g almond/hazelnut praliné paste (5 oz)
- 125 g raspberries (4 oz)
- 1 tablespoon crushed hazelnuts.

Icing

- 50 g sugar (1/4 cup)
- 5 cl water (1/4 cup).

1 - Combine lukewarm milk, sugar and yeast and leave 10 min until the mixture starts to foam. Add the melted butter, egg, vanilla extract and salt, then the flour and knead until you get a smooth and elastic dough. Cover the dough with a cloth and set aside for 50 minutes in a warm room. 

2 - Once the dough has risen, press with your fist to expel the excess air, then knead it quickly. Spread the dough on a floured work surface to get a 40x30 cm (15x12") rectangle. Spread the praliné paste and add the raspberries. Roll the dough to form a cylinder. Cut it lengthwise and twist the two halves. Place the babka into in a large greased loaf tin. Cover with a cloth and let rise for extra 50 minutes in a warm room.

3 - Bake for 25 minutes in an oven preheated to 180°C/360°F. For the syrup, melt the sugar with the water over medium heat and simmer for 10-15 minutes until you get a runny syrup. Leave to cool. When it comes out of the oven, cover the babka with a cloth to keep it soft. Brush the still-warm babka with syrup using a pastry brush and sprinkle with crushed hazelnuts. Leave to cool.

Paris-Brest


Happy Birthday... to me! Indeed today for the 1st of September, I wanted to prepare an iconic French pastry. The Paris-Brest has always been a major challenge to me, for its delicate and breakable choux crown and its praline mousseline cream which both needs to be silky yet firm, to be piped easily. Nevertheless with a little bit of precision here is my Paris-Brest, and I must say I'm quite proud. My recipe is classical with a typical craquelin topping. My crown is made of 12 choux, but I still have enough choux pastry to make 6 extra choux, that went directly to our stomach! Please note that the measurements are made only in grams for this specific recipe because the cup/oz system is not accurate enough for a Paris-Brest. Pour 1 Paris-Brest.

Ingredients

Choux pastry

- 120 g flour
- 180 g water
- 75 g butter
- 3 eggs
- 1 tablespoon sugar
- 1 pinch salt.

Mousseline cream

- 40 cl milk (2 cups)
- 3 egg yolks
- 80 g sugar
- 40 g flour
- 200 g butter
- 75 g praline paste.

Craquelin

- 25 g butter
- 25 g sugar
- 25 g flour.

1 - Mousseline cream: Heat the milk and the praline paste over medium heat until simmering. Whisk the egg yolks with the sugar and flour until you get a smooth and pale yellow cream. Pour the praline milk while whisking to dissolve the sugar and the flour. Then transfer into the sauce pan and cook over low heat while mixing constantly until you get a thick custard. Remove from the stove and add 100 g of butter in cubes while stirring until the butter is fully combined. Transfer into a wide dish and cover with cling film then put in the fridge.

2 - Craquelin: Mix all the ingredients until you get a smooth dough and spread on 2 mm between two squares of parchment paper and put in the fridge. Choux dough: Bring the water with the butter, the sugar and the salt to a boil over medium heat. Pour the flour in one batch and mix until you get a smooth ball of dough. Remove from the stove and it cool slightly for few minutes Add the eggs one by one and mix vigourously until you get a dense and slighty sticky batter. Put in a piping bag with a round nozzle.

3 - Draw a 25 cm (10") circle on parchment paper and create a crown out of 12 choux (about 4 cm in diameter). With a small cookie-cutter cut circles (about 2 cm - 1") into the craquelin layer and put a circle on each choux. Put in a preheated oven at 200°C (360°F) about 20 min . Once cooked open the over door slightly to let the steam escape then take the choux out of the oven and let it cool completely.

4 - Put the - fully cooled - praline cream in a large bowl and whisk while adding the extra 100 g of butter, soft and cubed, gradually. Whisk until the butter is completely combined and the cream starts to thicken and create soft peaks. Put the cream in a piping bag with a decorating nozzle. Cut the choux crown horizontally and fill with the mousseline cream. Top with the reste of the crown and dust with icing sugar. Put in the fridge at least 1 h before serving for the cream to fully set.

Joyeux anniversaire... à moi même! En effet en ce 1er septembre je voulais réaliser un grand classique de la pâtisserie française. Le Paris-Brest a toujours été pour moi un véritable défi de le réaliser, tant pour sa délicate et cassante couronne en choux, que sa crème mousseline pralinée qui demande un travail méticuleux pour qu'elle soit à la fois lisse et ferme, et donc facile à garnir. Néanmoins avec un peu de précision voici mon Paris-Brest dont je suis assez fier. Ma recette est classique avec son décor en craquelin. Ma couronne comportait 12 choux, il me restait donc un peu de pâte pour en 6 de plus, qui ont bien sûr été dégustés sans modération! Pour 1 Paris-Brest. 

Ingrédients


Pâte à choux

- 120 g de farine
- 180 g d'eau
- 75 g de beurre
- 3 oeufs
- 1 cuil à soupe de sucre
- 1 pincée de sel.

Crème mousseline

- 40 cl de lait
- 3 jaunes d’œuf
- 80 g de sucre
- 40 g de farine
- 200 g de beurre
- 75 g de praliné.

Craquelin

- 25 g de beurre
- 25 g de sucre
- 25 g de farine.

1 - Crème mousseline: Faire chauffer le lait à feu moyen avec le praliné jusqu'à frémissement. Fouetter les jaunes d’œuf, le sucre et la farine jusqu'à obtenir un mélange crémeux et jaune clair. Verser le lait chaud dessus en fouettant puis transvaser ce mélange dans la casserole. Fouetter et continuant la cuisson à feu doux jusqu'à ce que la crème soit bien épaisse. Retirer du feu et ajouter 100 g de beurre en cubes et mélanger jusqu'à dissolution du beurre. Transvaser dans un plat évasé, filmer au contact avec du film plastique et mettre au frais.

2 - Craquelin: Mélanger les ingrédients jusqu'à obtenir une pâte crémeuse. L'étaler entre deux feuilles de papier sulfurisé sur 2 mm et mettre au frais. Pâte à choux: Faire chauffer l'eau avec le beurre, le sucre et le sel dans un casserole à feu moyen jusqu'à ébullition. Verser ensuite la farine d'un coup et mélanger rapidement. Baisser le feu et continuer à mélanger jusqu'à obtenir une boule de pâte homogène. Enlever du feu et laisser légèrement tiédir quelques minutes. Ajouter ensuite les œufs un par un en mélangeant vigoureusement entre chaque œuf jusqu'à obtenir une pâte dense et légèrement collante. Mettre dans une poche à douille avec une douille ronde.

3 - Dessiner un cercle d'environ 25 cm de diamètre sur du papier sulfurisé et dresser une couronne de 12 choux d'environ 4 cm de diamètre. Avec un emporte-pièce faire des cercles d'environ 2 cm de diamètre avec le craquelin et déposer un cercle sur chaque chou. Enfourner 20 min dans un four préchauffé à 200°C. Un fois cuit laisser la couronne de choux dans le four entrouvert pour laisser la vapeur s'échapper lentement, puis sortir les choux et laisser complètement refroidir.

4 - Mettre la crème au praliné dans un cul de poule et fouetter tout en ajoutant les 100 g de beurre restant, bien mou, petit à petit. Fouetter jusqu'à ce que tout le beurre soit bien intégré et que la crème commence à se raffermir et forme des pics. Mettre la crème dans une poche à douille crénelée. Couper la couronne de choux dans l'épaisseur et garnir les choux de la crème mousseline. Recouvrir par la dessus de la couronne. Saupoudrer de sucre glace et mettre au frais au moins 1 h avant de servir pour que la crème fige.
