Bûche praliné & citron / Praliné & Lemon Yule Log


Alors que nous sommes qu'à quelques jours de Noël je vous propose enfin ma recette de bûche. Cette année j'avais envie d'associer deux ingrédients qui sont rarement utilisés ensemble pour créer une riche crème au praliné qui contraste parfaitement avec un lemon curd bien acidulé. J'ai acheté pour cette recette un praliné classique amande & noisette, qui est généralement le plus simple à trouver dans le commerce. Comme d'habitude je suis parti sur une bûche traditionnelle sous forme d'un gâteau roulé à base de biscuit génoise. Pour 10-12 parts. 

Ingrédients 

Lemon curd

- 3 citrons
- 2 oeufs
- 1 jaune d'œuf 
- 150 g de sucre
- 2 cuil à soupe de farine
- 50 g de beurre.

Génoise

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 40 g de beurre, fondu
- 1 pincée de sel.

Crème praliné

- 125 g de mascarpone
- 20 cl de crème liquide 30% de MG 
- 100 g de praliné noisette & amande
- 1/2 cuil à café d'extrait naturel de vanille
- Noisettes grillées.

1 - Lemon curd: Zester et presser le jus des citrons. Mélanger la farine et le sucre dans un saladier. Incorporer le jus et les zestes de citron, les oeufs et le jaune d'œuf à l'aide d'un fouet jusqu'à obtenir un mélange lisse. Verser le tout dans une casserole et faire cuire à feu moyen tout en mélanger continuellement à fouet jusqu'à obtenir une texture crémeuse et épaisse. Retirer du feu immédiatement et ajouter le beurre en cubes tout en mélangeant. Transférer dans un bol, couvrir de film alimentaire et mettre au frais jusqu'à complet refroidissement.

2 - Génoise: Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter 5-10 min jusqu'à obtenir un mélange jaune pâle et mousseux. Ajouter le beurre. Tamiser la farine et le sel. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une maryse. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser refroidir, puis décoller cette génoise du papier. La déposer sur un linge et la rouler très délicatement. Réserver. 

3 - Quand la génoise est complètement froide, la dérouler délicatement, étaler le lemon curd et la rouler une deuxième fois pour obtenir un cylindre bien ferme. Mettre au frais. Crème praliné: Mettre tous les ingrédients dans un grand bol bien froid - le mettre 30 min au frais - et fouetter jusqu'à obtention d'un glaçage bien ferme et homogène. Couvrir la bûche avec la moitié de la crème praliné à l'aide d'une spatule, puis mettre le reste dans un poche à douille de votre choix et décorer la bûche. Décorer de noisettes grillées grossièrement concassées. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

With Christmas just a few days away, I'm finally sharing my Yule log recipe with you. This year, I wanted to combine two ingredients that are rarely used together to create a rich praliné cream that contrasts perfectly with a tangy lemon curd. As praliné paste is mostly used in French pastry, it's simply a rich oily paste made of caramelized almonds and hazelnuts. It just requires three ingredients in that case, but it's faster and easier to buy it online to be fair, specially as you would need a pretty solid food processor to grind the nuts and the caramel into a smooth paste. For this recipe, I bought a classic almond and hazelnut praliné paste, which is usually the easiest to find in shops. As usual, I opted for a traditional Yule log in the form of a Swiss roll made with sponge cake. Serves 10-12.

Ingredients

Lemon curd

- 3 lemons
- 2 eggs
- 1 egg yolk
- 150 g sugar (3/4 cup)
- 2 tablespoons flour
- 50 g butter (1/2 stick).

Sponge cake

- 150 g sugar (3/4 cup)
- 110 g flour (1 cup)
- 4 eggs
- 50 g of butter, melted (1/2 stick)
- 1 pinch of salt.

Praline cream

- 125 g mascarpone cheese (1/2 cup)
- 20 cl full fat whipping cream (1 cup)
- 100 g hazelnut & almond praline past
- 1/2 teaspoon natural vanilla extract
- Roasted hazelnuts.

1 - Lemon curd: Zest and juice the lemons. Mix the flour and sugar in a bowl. Whisk in the lemon juice and zest, eggs and egg yolk until smooth. Pour the mixture into a saucepan and cook over medium heat, whisking continuously until it becomes thick and creamy. Remove from the heat immediately and stir in the cubed butter. Transfer to a bowl, cover with cling film and refrigerate until completely cooled.

2 - Sponge cakePut the eggs and the sugar in a bowl in a double-boiler and whisk 5-10 min until you get a pale and frothy mixture. Add the melted butter. Sift the flour and salt. Remove the bowl from the double boiler and fold gently the flour and salt in several batches with a rubber spatula into the egg mixture. Line a baking sheet (approximately 30x40 cm / 15x12") with baking paper and spread the batter evenly. Bake in a preheated oven at 180°C (360°F) for 15 min. Let cool, then take off the baking paper gently. Place it on a cloth and roll it very delicately. Set aside to let cool.

3 - When the sponge cake is completely cool, carefully unroll it, spread the lemon curd over it and roll it up again to form a firm cylinder. Chill. Praline cream: Place all the ingredients in a large, well-chilled bowl - chill for 30 minutes - and whisk until you obtain a firm, smooth icing. Cover the log with half of the praline cream using a spatula, then put the rest in a piping bag of your choice and decorate the log. Sprinkle with coarsely chopped roasted hazelnuts. Cut the ends for a neater finish and chill for about 30 minutes to allow the icing to set a little before serving.

Bûche pistache-fruits rouges / Pistachio & Berries Yule Log


Cette année pour ma bûche de Noël j'ai choisi un combinaison assez classique mais qui fonctionne très bien. J'aime comme l'acidité et la fraîcheur des fruits rouges se marient à merveille avec la richesse de la pistache. J'utilise ici de la purée de pistache bio 100% pure de la marque La Noix Gaillarde, qui est très parfumée et sans arôme artificiel, contrairement à beaucoup de pâte de pistache. Pour cette bûche j'ai choisi un mélange myrtilles-framboises, mais d'autres fruits rouges fonctionneront très bien. En attendant de nouvelles recettes pour cette fin d'année, je vous souhaite à tous un très joyeux Noël avec vos proches, vos familles et vos amis... Pour 10 parts. 

Ingrédients 

- 125 g de myrtilles
- 125 g de framboises
- 125 g de confiture de griottes.

Génoise

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 40 g de beurre, fondu
- 1 pincée de sel.

Crème pistache

- 350 g de mascarpone
- 30 cl de crème liquide 30% de MG 
- 150 g de pâte de pistache pure
- 4 cuil à soupe de sucre
- 1/2 cuil à café d'extrait naturel de vanille.

Dérouler la génoise et étaler la confiture de griottes, puis couvrir de la moitié de la crème pistache. Répartir les 2/3 des myrtilles et des framboises. Rouler fermement pour obtenir une bûche bien cylindrique. Couvrir la bûche avec le reste de la crème pistache à l'aide d'une spatule et réaliser les décors de votre choix à la poche à douille. Décorer avec le reste des fruits. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

This year for my yule log I've chosen a fairly classic but foolproof combination. I love the way the acidity and freshness of the berries match wonderfully with the richness of the pistachio. Here I'm using 100% pure organic pistachio paste from La Noix Gaillarde, which is very fragrant and has no artificial flavouring, unlike a lot of pistachio paste. For this yule log I chose a blueberry-raspberry mix, but other berries will work very well. While we're waiting for new recipes for the end of the year, I'd like to wish you all a beautiful Christmas celebration with your loved ones... Serves 10.

Ingredients

- 125 g bluberries (1 cup)
- 125 g raspeberries (1 cup)
- 125 g sour cherry jam (1/3 cup).

Sponge cake

- Flaked almonds, toasted.

Pistachio cream 

- 350 g mascarpone
- 30 cl full fat whipping cream (1 & 1/2 cup)
- 150 g pure pistachio paste
- 4 tablespoons sugar
- 1/2 teaspoon natural vanilla extract.

3 - Pistachio cream: Put all the ingredients in a large, very cold bowl - put it in the fridge for 30 min - and whisk until you get a firm and smooth icing. Unroll the sponge cake and spread the pistachio cream and 2/3 of the blueberries and the raspberries. Roll firmly to get a nicely shaped cylindrical log. Cover the log with the rest of the pistachio cream using a spatula. You can also use a pipping bag with a piping nozzle to create various decoration with the cream. Decorate with the remaining blueberries and raspberries Trim the edges for a better finish and chill for about 30 minutes so that the icing sets a little, before serving.

Bûche mangue-coco-passion / Coconut-Mango-Passion Yule Log


Après avoir réalisé de nombreuses recettes de bûche, en privilégiant des ingrédients comme le chocolat, les pommes, le citron et Cie, j'avais envie cette année de préparer une bûche aux accents tropicaux. Je trouve que la douceur et la richesse de la noix de coco s'associe bien avec la fraîcheur et l'acidité du mélange mangue-passion. Encore une fois je suis parti sur un biscuit roulé que je préfère aux entremets à base de mousse. Pour 10-12 parts. 

Ingrédients

Génoise

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 1 pincée de sel
- Noix de coco, pour décoration.

Mousse coco

- 250 g de mascarpone 
- 40 cl de crème liquide 30% de MG 
- 70 g de noix de coco râpée
- 70 g de sucre 
- 1/4 gousse de vanille.

Crème mangue-passion 

- 1 mangue, bien mûre
- 4 fruits de la passion
- 2 œufs
- 60 g de sucre
- 1 cuil à soupe de farine.

1 - Mousse coco: Dans une casserole faire frémir 20 cl de crème, la noix de coco râpée, le sucre et la gousse de vanille, grattée. Laisser infuser 10 min à feu doux. Retirer du feu et laisser refroidir. Retirer la gousse de vanille. Tamiser le tout en pressant bien pour extraire toute la crème. Mettre la crème au frais et conserver la noix de coco bien égouttée pour préparer la génoise. 

2 - Crème mangue-passion: Éplucher et couper la mangue en petits cubes. Mettre 2/3 des cubes de mangue dans une casserole avec 10 g de sucre et laisser compoter à feu moyen-doux environ 15 min jusqu'à ce que la mangue soit réduite en purée (passer au mixer si nécessaire). Ajouter le reste des cubes de mangue et réserver. Prélever la pulpe des fruits de la passion et tamiser le tout pour retirer les graines. Dans une casserole mettre la jus des fruits de la passion, le reste du sucre, les œufs et la farine. Bien fouetter et faire cuire à feu moyen jusqu'à obtenir une crème lisse et épaisse. Retirer du feu et incorporer la compotée de mangue à la crème passion. Mettre au frais. 

3 - Génoise: Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter 5-10 min jusqu'à obtenir un mélange jaune pâle et mousseux. Ajouter la noix de coco de la mousse coco. Tamiser la farine et le sel. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une maryse. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser tiédir, puis décoller cette génoise du papier. La déposer sur un linge et la rouler très délicatement. Réserver. 

3 - Mettre la crème mangue-passion et la moitié de la mousse coco en poche à douille. Dérouler la génoise bien froide et pocher la crème mangue-passion et la mousse coco en alternant pour faire des lignes. Rouler fermement pour obtenir une bûche bien cylindrique. Couvrir la bûche avec le reste de la mousse coco en décorant selon vous goûts (cubes de mangue, pulpe de fruits de la passion, etc.). Saupoudrer de noix de coco râpée. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

After having made many yule logs recipes, favoring ingredients like chocolate, apples, lemon and so on, this year I wanted to prepare a yule log with an exotic flair. I find that the sweetness and richness of the coconut combines well with the freshness and acidity of the mango-passion fruit blend. Once again I opted for a rolled biscuit which I prefer to mousse-based desserts. once again I use a gram/centiliter measurements because the once/cup system is too vague for fine pastry. For 10-12 slices.

Ingredients

Sponge cake

- 150 g of sugar
- 110 g of flour
- 4 eggs
- 1 pinch of salt
- Coconut, for decoration.

Coconut mousse

- 250 g of mascarpone
- 40 cl of liquid cream 30% fat
- 70 g grated coconut
- 70 g of sugar
- 1/4 vanilla pod.

Mango-passion curd

- 1 mango, fully ripe
- 4 passion fruits
- 2 eggs
- 60 g of sugar
- 1 tablespoon of flour.

1 - Coconut mousse: In a saucepan, bring 20 cl of cream, the grated coconut, the sugar and the scraped vanilla pod to a simmer. Leave to infuse for 10 minutes over low heat. Remove from heat and let cool. Remove the vanilla pod. Sift everything together, pressing well to extract all the cream. Refrigerate the cream and keep the well-drained coconut to prepare the sponge cake.

2 - Mango-passion curd: Peel and cut the mango into small cubes. Place 2/3 of the mango cubes in a saucepan with 10 g of sugar and leave to stew over medium-low heat for about 15 minutes until the mango is pureed (blend with a food processor if necessary). Add the rest of the mango cubes and set aside. Take the pulp of the passion fruit and sieve everything to remove the seeds. In a saucepan put the passion fruit juice, the rest of the sugar, the eggs and the flour. Whisk well and cook over medium heat until you obtain a smooth and thick cream. Remove from the heat and add the cubed butter while whisking. Incorporate the mango compote into the passion cream. Put in the fridge.

3 - Sponge cake: Place the eggs and sugar in a bowl in a bain-marie and whisk for 5-10 minutes until you obtain a pale yellow and foamy mixture. Add the coconut from the coconut mousse. Sift the flour and salt. Remove the bowl from the bain-marie and add the flour and salt in several batches with a spatula. Line a baking tray (approximately 30x40 cm) with baking paper and spread the dough. Bake in a preheated oven at 180°C/355°F for 15 minutes. Leave to cool, then peel this sponge cake off the paper. Place it on a cloth and roll it very delicately. To book.

3 - Place the mango-passion curd and half of the coconut mousse in a piping bag. Unroll the cold sponge cake and pipe the mango-passion cream and the coconut mousse alternately to make lines. Roll firmly to obtain a very cylindrical log. Cover the log with the rest of the coconut mousse, decorating according to your taste (mango cubes, passion fruit pulp, etc.). Sprinkle with grated coconut. Cut the ends for a neat finish and refrigerate for about 30 minutes so that the icing sets a little, before serving.

Bûche orange-chocolat / Orange & Chocolate Yule-Log


Cette année pour Noël je vous présente mon repas du 25 décembre inversé, en commençant donc par le dessert. Comme d'habitude je préfère réaliser des bûches à l'ancienne avec un biscuit roulé plutôt qu'un entremet à base de mousse. Ici d'ailleurs j'ai choisi une association très classique voire retro. Le chocolat et l'orange se marient bien et j'ai réhaussé le tout d'une pointe de cointreau, mais du Grand Marnier fonctionnera tout aussi bien. A noter: ne pas fouetter trop la ganache au chocolat avec le mascarpone car le mélange va beaucoup figer en refroidissant par la suite et s'il a été trop battu il risque de trancher au frigo. Pour 10-12 parts. 

Ingrédients 

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 40 g de beurre, fondu
- 1 pincée de sel
- 2 oranges
- 5 cl de cointreau.

Glaçage

- 250 g de mascarpone 
- 200 g de chocolat noir
- 30 cl de crème liquide 30% de MG 
- 1 cuil à soupe de cacao
- 50 g d'écorces d'orange confites + pour la décoration
- Copeaux de chocolat.

1 - Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter 5-10 min au batteur éléctrique jusqu'à obtenir un mélange jaune pâle et mousseux. Ajouter le beurre fondu et les zestes d'une orange. Tamiser la farine et le sel. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une maryse. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. 

3 - Laisser tiédir, puis décoller la génoise du papier. La déposer sur un linge et la rouler très délicatement. Laisser refroidir complètement. Garder une moitié d'orange pour la décoration et presser le jus du reste des oranges et le mélanger avec le cointreau. Réserver.

2 - Glaçage: Faire chauffer la crème jusqu'à frémissement et la verser sur le chocolat concassé. Laisser fondre 5 min et mélanger jusqu'à obtenir une ganache lisse. Laisser refroidir à température ambiante. Ajouter le mascarpone et fouetter jusqu'à obtenir un glaçage lisse mais pas trop ferme. Dérouler et imbiber la génoise avec le mélange jus d'orange-cointreau à l'aide d'un pinceau. Étaler la moitié du glaçage sur la génoise. Rouler fermement pour obtenir une bûche bien cylindrique. 

4 - Mettre un tiers du glaçage restant dans une poche à douche. Étaler les 2/3 de glaçage sur la bûche à l'aide d'une spatule. A l'aide d'une fourchette ou d'autres outils de cuisine (couteau, cuillère, etc) former des motifs sur le glaçage. Saupoudrer de cacao à l'aide d'une petite passoire. Pocher quelques rosaces avec le reste de glaçage et décorer avec des tranches d'orange, des copeaux de chocolat et de l'écorce d'orange. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

This year for Christmas I present to you my meal for December 25th, but reversed as I'm starting with the dessert. As usual, I prefer to make old-fashioned yule-logs with a rolled sponge cake, rather than a mousse-based entremet. Here, moreover, I have chosen a very classic, even retro combination. Chocolate and orange go well together, and I've spiced it up with a hint of Cointreau, but Grand Marnier will work just as well. Note: do not over-whip the chocolate ganache with the mascarpone because the mixture will stiffen a lot when it cools afterwards and if it has been over-whipped it may curdle in the fridge. Since baking needs accuracy I only use gram-based quantities. For 10-12 slices.

Ingredients

- 150 g sugar
- 110 g flour
- 4 eggs
- 40 g butter, melted
- 1 pinch of salt
- 2 oranges
- 5 cl Cointreau.

Icing

- 250 g mascarpone
- 200 g dark chocolate
- 30 cl double cream
- 1 tablespoon cocoa powder
- 50 g candied orange peel + for decoration
- Chocolate chips.

1 - Put the eggs and the sugar in a bowl in a bain-marie and beat for 5-10 minutes with an electric mixer until you get a pale yellow and frothy mixture. Add the melted butter and the zest of an orange. Sift flour and salt. Remove the bowl from the bain-marie and add the flour and salt in several batches with a rubber spatula. Line a baking tray (about 30x40 cm) with parchment paper and spread the dough. Bake in a preheated oven at 180°C (360°F) for 15 minutes.

3 - Leave to cool, then remove the parchment paper from the sponge cake. Place it on a cloth and roll it very gently. Let cool completely. Save half an orange for decoration and squeeze the juice from the rest of the oranges and mix it with the cointreau. Set aside.

2 - Icing: Heat the cream until it simmers and pour it over the chocolate, chopped. Leave to melt for 5 minutes and mix until you get a smooth ganache. Let cool to room temperature. Add the mascarpone and whisk until smooth but not too stiff. Unroll and soak the sponge cake with the orange juice-Cointreau mixture using a brush. Spread half of the glaze over the sponge cake. Roll firmly to get a cylindrical log.

4 - Put one third of the remaining icing in a piping bag. Spread 2/3 of the icing on the yule-log using a spatula. With a fork or any other kitchen tools (fork, knife, etc.) create patterns on the icing. Sprinkle with cocoa powder using a small sieve. Create some extra decorations with the remaining icing using the piping bag and decorate with orange slices, chocolate chips and candied orange peel. Trim the edges for a better finish and refrigerate for about 30 minutes so that the icing sets a little, before serving.

Bûche chocolat-pain d'épices / Chocolat & Gingerbread Yule-Log


Alors que nous célébrons enfin Noël voici ma recette de bûche. Je me suis inspiré d'un dessert réalisé à l'atelier de cuisine où je travaillais. L'alliance entre le chocolat noir et le quatre-épices fonctionne bien. C'est la première fois que je réalise un crémeux au chocolat qui ressemble à un mélange entre une ganache et une crème anglaise. J'utilise du quatre-épices ppur ma recette mais un mélange spécial "pain d'épices" fonctionne bien. Pour 10-12 parts. 

Ingrédients 

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 40 g de beurre, fondu
- 1 pincée de sel
- Amandes effilées, toastées.

Crémeux au chocolat

- 3 jaunes  d'oeuf
- 15 cl de crème 30% de MG 
- 15 cl de lait entier 
- 120 g de chocolat noir
- 30 g de sucre 

Chantilly pain d'épices

- 120 g de mascarpone 
- 20 cl de crème liquide 30% de MG 
- 3 cuil à soupe de sucre 
- 1 cuil à soupe de quatre-épices. 

1 - Crémeux au chocolat: Concasser le chocolat. Fouetter les jaunes d’œufs avec le sucre jusqu'à obtenir un mélange jaune clair et lisse. Porter le lait et la crème à ébullition puis verser le tout sur le mélange oeuf-sucre en fouettant. Transvaser dans la casserole puis cuire à feu moyen sans cesser de remuer avec une spatule. Quand le mélange devient nappant verser le tout sur le chocolat. Quand le chocolat est mou, mélanger bien jusqu'à obtenir une crème lisse. Réserver au frais.

2 - Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter 5-10 min jusqu'à obtenir un mélange jaune pâle et mousseux. Ajouter le beurre. Tamiser la farine et le sel. 3 - Chantilly pain d'épices: Mettre tous les ingrédients dans un grand bol bien froid - le mettre 30 min au frais - et fouetter jusqu'à obtention d'un glaçage bien ferme et homogène. Dérouler la génoise et répartir le crémeux au chocolat. Rouler fermement pour obtenir une bûche bien cylindrique. Couvrir la bûche avec la chantilly à l'aide d'une spatule. Décorer avec les amandes effilées Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

As we finally celebrate Christmas here is my yule log recipe. I was inspired by a dessert made in the cooking classes where I used to work. The combination between dark chocolate and gingerbread mix works well. This is the first time that I have made a chocolate crémeux that looks like a blend of ganache and custard. I use French allspice ("quatre-épices") for my recipe but a "gingerbread" or "pumpkin spice" mix works very well. For 10-12 slices.

Ingredients

- 150 g of sugar
- 110 g of flour
- 4 eggs
- 50 g of butter, melted
- 1 pinch of salt
- Flaked almonds, toasted.

Chocolate crémeux

- 3 egg yolks
- 15 cl double cream 
- 15 cl whole milk
- 120 g dark chocolate
- 30 g sugar

Gingerbread chantilly 

- 120 g mascarpone
- 20 cl double cream
- 3 tablespoons sugar
- 1 tablespoon pumpkin spice.

1 - Chocolate crémeux: Chop the chocolate with a knife. Whisk the egg yolks with the sugar until you get a light yellow mixture. Bring the milk and cream to a boil then pour everything over the egg-sugar mixture, while whisking. Transfer to the saucepan and cook over medium heat, stirring constantly with a spatula. When the mixture thickens slightly but still stay a bit runny, pour everything over the chocolate. When the chocolate is soft, mix well until you get a smooth cream. Keep in the fridge.

2 - Put the eggs and the sugar in a bowl in a double-boiler and whisk 5-10 min until you get a pale and frothy mixture. Add the melted butter. Sift the flour and salt. Remove the bowl from the double boiler and fold gently the flour and salt in several batches with a rubber spatula into the egg mixture. Line a baking sheet (approximately 30x40 cm / 15x12") with baking paper and spread the batter evenly. Bake in a preheated oven at 180°C (360°F) for 15 min. Let cool, then take off the baking paper gently. Place it on a cloth and roll it very delicately. Set aside to let cool.

3 - Gingerbread chantilly: Put all the ingredients in a large, very cold bowl - put it in the fridge for 30 min - and whisk until you get a firm and smooth icing. Unroll the sponge cake and spread the chocolate crémeux. Roll firmly to get a nicely shaped cylindrical log. Cover the log with the gingerbread chantilly using a spatula. Sprinkle flaked almonds on the top. Trim the edges for a better finish and chill for about 30 minutes so that the icing sets a little, before serving.

Bûche aux pommes & caramel au beurre salé / Apple & Salted Butter Caramel Yule-Log

Cette année pour ma bûche de Noël je me suis inspiré du dessert d'un ami - écrivain à ses heures dont vous pouvez d'ailleurs retrouver le premier ouvrage ici - qui m'avait gratifié d'un savoureux gâteau roulé avec des pommes au caramel au beurre salé. J'ai légèrement transformé la recette en y ajoutant plus de crème pour renforcer le côté gourmand de ma bûche. J'ai choisi des pommes Canada dont la saveur très acidulée contraste agréablement avec le caramel au beurre salé. Pour ma décoration j'ai ajouté des dés de gelée de pommes qui sont assez faciles à réaliser: prélevez environ 2 cuil à soupe de pommes au caramel et mixez les puis laissez chauffer ce mélange à feu doux avec une pincée de cannelle puis ajoutez-y une feuille de gélatine (2 g) préalablement ramollie dans de l'eau froide. Versez ce mélange dans un petit plat carré et mettre au frais quelques heures. Découpez la gélatine ainsi formée en petits dés pour en décorer la bûche. Je profite de ce post pour vous souhaiter à tous un joyeux Noël et une très bonne année, en souhaitant très fort que 2021 se présente sous de meilleurs auspices que 2020. Pour 10-12 parts. 

Ingrédients 

- 150 g de sucre 
- 110 g de farine 
- 4 œufs 
- 40 g de beurre, fondu
- 1 pincée de sel.

Pommes au caramel

- 4 pommes Canada
- 10 g de beurre
- 80 g de sucre 
- 40 g de beurre salé
- 10 cl de crème liquide 30% de MG

Glaçage

- 250 g de mascarpone 
- 30 cl de crème liquide 30% de MG 
- 3 cuil à soupe de sucre 
- 1/2 cuil à café d'extrait naturel de vanille. 

1 - Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter 5-10 min jusqu'à obtenir un mélange jaune pâle et mousseux. Ajouter le beurre. Tamiser la farine et le sel. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une maryse. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser refroidir, puis décoller cette génoise du papier. La déposer sur un linge et la rouler très délicatement. Réserver. 

2 - Pommes au caramel: Peler, vider et couper les pommes en cubes. Faire fondre le beurre dans un poêle à feu moyen vif et faire revenir les pommes jusqu'à ce qu'elles deviennent fondantes, en remuant de temps en temps. Réserver. Dans une casserole faire fondre le sucre avec 1 cuil à soupe d'eau jusqu'à obtenir un caramel blond. Ajouter la crème préalablement chauffée tout en remuant (attention aux éclaboussures et à la vapeur). Lorsque la crème est incorporée ajouter le beurre salé en plusieurs fois tout en remuant et laisser légèrement frémir à feu moyen-doux. Verser le caramel sur les pommes, mélanger et laisser refroidir. 

3 - Glaçage: Mettre tous les ingrédients dans un grand bol bien froid - le mettre 30 min au frais - et fouetter jusqu'à obtention d'un glaçage bien ferme et homogène. Dérouler la génoise et répartir les pommes caramélisées puis couvrir avec environ la moitié du glaçage. Rouler fermement pour obtenir une bûche bien cylindrique. Couvrir la bûche avec le reste du glaçage en la décorant avec une poche à douille ou simplement en l'étalant avec une spatule. Décorer la bûche avec des ingrédients de votre choix: cubes de pommes caramélisés, éclats de spéculoos, noisettes concassées. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

To prepare my yule log this year I was inspired by the dessert of a friend - who is also writer in his spare time, feel free to check his first book here - who baked for me a luscious roll cake with salted butter caramel apples. I slightly transformed the recipe by adding more cream to reinforce the christmassy vibe of this dessert. I chose Russet apples for their tangy flavor which contrasts nicely with the salted butter caramel. For my decoration I added dices of apple jelly which are quite easy to make: take about 2 tablespoons of caramelized apple and blend it into a puree then heat this mixture over low heat with a pinch of cinnamon and add to it a sheet of gelatin (2 g) previously softened in cold water. Pour this mixture into a small square dish and chill for a few hours. Cut the jelly into small cubes to decorate the log. Disclaimer: once again I will only use metric system for this recipe because the cup/oz system is not accurate enough for fine pastry. I also take the opportunity to wish you all a Merry Christmas and a Happy New Year, hopefully 2021 will bring more positivity and optimism than 2020. For 10-12 slices.

- 4 Russet apples
- 10 g of butter
- 80 g of sugar
- 40 g of salted butter

1 - Put the eggs and the sugar in a bowl in a double-boiler and whisk 5-10 min until you get a pale and frothy mixture. Add the melted butter. Sift the flour and salt. Remove the bowl from the double boiler and fold gently the flour and salt in several batches with a rubber spatula into the egg mixture. Line a baking sheet (approximately 30x40 cm) with baking paper and spread the batter evenly. Bake in a preheated oven at 180 ° C for 15 min. Let cool, then take off the baking paper gently. Place it on a cloth and roll it very delicately. Reserve.

2 - Caramel apples: Peel, core and cut the apples into cubes. Melt the butter in a skillet over medium-high heat and cook the apples until tender, stirring occasionally. Set aside. In a saucepan, melt the sugar with 1 tablespoon of water until getting a light amber caramel. Add the previously heated cream while stirring (watch out for splashing and steaming). When the cream is incorporated add the salted butter several times while stirring and let simmer slightly over medium-low heat. Pour the caramel over the apples, mix and let cool.

3 - Icing: Put all the ingredients in a large, very cold bowl - put it in the fridge for 30 min - and whisk until you get a very firm and homogeneous icing. Unroll the sponge cake and spread the caramelized apples then cover with about half of the icing. Roll firmly to obtain a nicely shaped cylindrical log. Cover the log with the rest of the frosting, decorate it with a nozzle or simply spread the icing with a spatula. Decorate the log with ingredients of your choice: caramelized apple cubes, speculaas crumbs, crushed hazelnuts. Trim the edges for a better finish and chill for about 30 minutes so that the icing sets a little, before serving.

Black Forest Yule-Log / Bûche Forêt Noire


If mousse entremets with various miror glaze are becoming more and more common as Christmas cakes - at least in France since yule log is our traditional dessert for this period - I tend to be more classic for this celebration. I love rolled cakes and I wanted to make a Black Forest cake inspired yule-log garnished with juicy sour cherries flavoured with kirsch and vanilla frosting. Anyway here is my Christmas cake for 2019 and since I might not be posting anything until 2020, I wish you a Merry Christmas and Happy New Year! For 10-12 pieces.


Ingredients


- 150 g sugar (1 cup & 1/2)
- 90 g flour (1 cup)
- 3 tablespoons cocoa powder
- 4 eggs
- 1 pinch of salt.

Cherries

- 680 g / 24 oz pitted canned sour cherries (350 g / 12 oz drained)
- 2 tablespoons sugar
- 2 tablespoon kirsch

Icing

- 250 g mascarpone (1 cup)
- 20 cl double cream (1 cup)
- 3 tablespoons sugar
- 1 tablespoon kirsch
- 1 teaspoon natural vanilla extract
- Dark chocolate shavings.

1 - Put the eggs and sugar in a bowl in a double boiler and whisk about 5 min until you get a pale yellow and fluffy mixture. Sieve the flour, cocoa puff and salt. Remove the bowl from the double boiler and add the flour/cocoa mix in several times with a rubber spatula. Line a baking sheet (30x40 cm) with parchment paper and spread the batter. Bake in a preheated oven at 180°C (350°F) for 15 min. Let it cool slightly, unmold then remove the parchment paper from the sponge cake. Place on a cloth and roll it very gently. Set aside.

2 - Cherries: Drain the cherries and put the juice with the sugar and the kirsch in a saucepan and simmer over medium heat to reduce the volume by half. Set aside until completely cool. Icing: put the mascarpone, the double cream, the sugar, the kirsch and the vanilla extract in a large bowl and whisk until you get a smooth and firm icing. Set aside.

3 - Unroll the sponge cake and soak it with the cherries juice with a pastry brush. Spread 2/3 of the icing. Distribute evenly the cherries well drained on the icing (keep about a dozen for the decoration) and roll firmly to get a cylindrical log. Spread the rest of the frosting over the yule log. Sprinkle the chocolate shavings all over the icing and decorate with the remaining cherries. Trim the edges for a better finish. Put in the fridge for about 30 min before serving to allow the frosting to set.

Bien que l'on retrouve de plus en plus de bûches sous forme d'entremets, souvent très beaux, je suis plus classique pour cette période de l'année. J'adore les gâteaux roulés et cette fois j'avais envie de faire une bûche forêt noire garnie de cerises moelleuses parfumées au kirsch et de crème vanillée. Voici en tout cas mon dessert pour Noël, et attendant puisque je ne posterai rien d'ici le jour de l'an probablement, je vous souhaite à tous de très bonnes fêtes de fin d'année! Pour 10-12 parts. 

Ingrédients 

- 150 g de sucre 
- 90 g de farine 
- 3 cuil à soupe de cacao en poudre 
- 4 œufs 
- 1 pincée de sel.

Griottes

- 680 g de griottes dénoyautées au sirop (350 g égouttés)
- 2 cuil à soupe de sucre
- 2 cuil à soupe de kirsch

Glaçage

- 250 g de mascarpone 
- 20 cl de crème liquide 30% de MG 
- 3 cuil à soupe de sucre 
- 1 cuil à soupe de kirsch
- 1 cuil à café d'extrait naturel de vanille
- Copeaux de chocolat noir.

1 - Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter jusqu'à obtenir un mélange jaune pâle et mousseux. Tamiser la farine avec le cacao et le sel. Enlever le saladier du bain-marie et ajouter la mixture farine/cacao et le sel en plusieurs fois avec une maryse. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser refroidir, puis décoller cette génoise du papier. La déposer sur un linge humide et la rouler très délicatement. Réserver. 

2 - Griottes: Égoutter les griottes et mettre le jus dans un casserole avec le sucre et le kirsch et laisser réduire de moitié à feu moyen. Réserver et laisser refroidir. Glaçage: Mettre le mascarpone, la crème liquide, le sucre, le kirsch et l'extrait de vanille dans un saladier et fouetter avec un batteur jusqu'à obtenir un glaçage lisse et ferme. 

3 - Dérouler la génoise de son linge et l'imbiber avec le sirop des cerises avec un pinceau. Étaler les 2/3 du glaçage et répartir les cerises harmonieusement (en garder une douzaine pour la décoration). Rouler fermement pour obtenir une bûche bien cylindrique. Couvrir la bûche avec le reste du glaçage. Parsemer de copeaux de chocolat et déposer les cerises restantes. Couper les extrémités pour un fini plus net et mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

Lemon & Limoncello Meringue Yule-Log / Bûche meringuée citron-limoncello


In exactly one week we will celebrate Christmas eve and for that special occasion I wanted to make my Lemon & Limoncello Meringue Yule-log. That type of roll cakes is a must for a traditional French Christmas dinner, but honestlty I also love to make it all year long... If you don't have a kitchen blowtorch to brown a bit your meringue you can pop your yule-log fully prepared in a very hot oven on broil mode (about 250°C - 480°C) for few minutes and then put the meringue in the fridge immediately to avoid the lemon cream starting to melt. For 8-10 slices.

Ingredients

- 150 g sugar (3/4 cup)
- 120 g flour (1 cup)
- 25 g butter, melted
- 4 eggs
- 1 pinch of salt
- 10 cl limoncello (1/2 cup).

Lemon cream

- 250 g mascarpone (1 cup)
- 10 cl double cream (1/2 cup)
- 3 lemon
- 2 eggs
- 150 g sugar (3/4 cup)
- 2 tablespoons flour.

Meringue

- 4 egg whites (120 g - 4 oz)
- 250 g sugar (1 & 1/4 cup)

1 - Put the eggs and sugar in a bowl in a double boiler and whisk until you get a pale yellow and fluffy mixture. Add the butter. Remove the bowl from the double boiler and add gently the flour and salt in several times with a rubber spatula. Line a baking sheet (30x40 cm) with parchment paper and spread the batter. Bake in a preheated oven at 180°C (350°F) for 15 min. Let it cool slightly, unmold then remove the parchment paper from the sponge cake. Place on a damp cloth and roll it very gently. Set aside.

2 - Lemon cream: Zest and squeeze the lemon. Put the juice, zest, egg, flour and sugar in a saucepan. Mix well and cook over low heat, stirring with a whisk until the mixture is thick and creamy. Chill. Once the lemon curd is cold combine with mascarpone and double cream with a whisk until smooth.

3 - Unroll the sponge cake. With a kitchen brush soak the cake with the limoncello. With a spatula, spread the lemon cream on the sponge cake. Roll firmly to get a cylindrical log. Put in a fridge. Meringue: Whisk the egg whites until they start being frothy and pour slowly the sugar in several batches while whisking until you get a smooth and firm meringue. But in a pipping bag with a round nozzle and decorate the yule log with blobs of meringue. With a kitchen blowtorch slitghtly brown the meringue. Cut the edges of the yule-log for a neat finish and put in the fridge 20 min before serving.

Dans exactement une semaine nous fêterons le réveillon de Noël et pour cette occasion spéciale j'avais très envie de préparer ma bûche meringuée citron-limoncello. Même si les bûches ont tendance à être incontournable pour un repas de Noël digne de ce nom, cela ne m'empêche pas de préparer cette recette tout au long de l'année... Si vous n'avez pas de chalumeau de cuisine vous pouvez faire griller votre meringue dans un four très chaud en position grill (environ 250°C) pendant quelques minutes et remettre la bûche immédiatement au frigo pour éviter que la crème au citron commence à fondre. Pour 8-10 parts.

Ingrédients 

- 150 g de sucre 
- 120 g de farine 
- 25 g de beurre fondu 
- 4 œufs 
- 1 pincée de sel
- 10 cl de limoncello.

Crème aux citrons

- 250 g de mascarpone
- 10 cl de crème liquide 30% de MG
- 3 citrons
- 2 oeufs
- 150 g de sucre
- 2 cuil à soupe de farine. 

Meringue

- 4 blancs d'oeuf (120 g)
- 250 g de sucre.

1 - Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter jusqu'à obtenir un mélange jaune pâle et mousseux. Incorporer le beurre. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une spatule. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser refroidir, puis décoller cette génoise du papier. La déposer sur un linge humide et la rouler très délicatement. Réserver. 

2 - Crème au citron: Zester et presser le citron. Mettre le jus, les zestes, l'oeuf, la farine et le sucre dans une casserole. Bien mélanger et laisser cuire à feu doux en remuant au fouet jusqu'à ce que le mélange soit épais et crémeux. Mettre au frais. Une fois froid fouetter le lemon curd avec le mascarpone et la crème liquide jusqu'à l'obtention d'un glaçage bien lisse. 

3 - Dérouler la génoise de son linge et imbiber de limoncello avec un pinceau de cuisine. Répartir la crème sur la génoise. Rouler fermement pour obtenir une bûche bien cylindrique. Meringue: Fouetter les blancs d'oeufs avec un batteur électrique jusqu'à ce qu'ils deviennent mousseux puis ajouter le sucre en pluie en plusieurs fois tout en fouettant pour obtenir un meringue ferme et lisse. Mettre la meringue dans une poche avec un douille ronde et décorer la bûche en faisant des petits bulbes de meringue. Avec un chalumeau de cuisine faire légèrement dorer la meringue. Couper les extrémités pour un fini net et mettre au frais 20 min pour que le glaçage raffermisse, avant de servir.

Nougat-Apricot Yule Log / Bûche nougat-abricot


It is unusual for me to put a spotlight on my birthplace, Provence, when it comes to desserts. But I don't know why I absolutely craved for nougat this Christmas. And particularly the white nougat of Montélimar. Of course any type of almond white nougats can work for this recipe. This sweet, of course very sugary, matches wonderfully with the tanginess of the apricots to create a yummy yule log that smells Provence, despite the coldness of winter. For 8-10 pieces.

Ingredients

- 150 g sugar (1 cup & 1/2)
- 120 g flour (1 cup)
- 25 g butter, melted
- 4 eggs
- 1 pinch of salt.
- Blanched almonds, toasted
- White chocolate chips.

Nougat-Apricot frosting

- 250 g mascarpone (1 cup)
- 30 cl double cream (1 & 1/2 cup)
- 200 g white nougat
- 900 g canned apricots halves (500 g drained).

1 - Put the eggs and sugar in a bowl in a double boiler and whisk until you get a pale yellow and fluffy mixture. Add the butter. Remove the bowl from the water bath and add flour and salt in several times with a spatula. Line a baking sheet (30x40 cm) with parchment paper and spread the batter. Bake in a preheated oven at 180°C (350°F) for 15 min. Let it cool slightly, unmold then remove the parchment paper from the sponge cake. Place on a damp cloth and roll it very delicately. Set aside.

2 - Nougat-Apricot frosting: Cut the nougat into large chunks. Put in a sauce pan with the cream on low heat and cook until the nougat is completely melted. Set aside until room temperature and put in the fridge. Keep 4-5 drained apricot halves for the decoration and cut the rest into small cubes and put them into a pan or a saucepan over medium heat and cook gently. Stir occasionally until you get a purée (it does not have to be smooth). Chill. Put the - cold - nougat infused cream with the mascarpone in a large bowl and whisk until you get a stiff and smooth frosting.

3 - Unroll the sponge cake. With a spatula, spread the apricot purée and then cover with 2/3 of the nougat frosting. Roll firmly to get a cylindrical log. Spread the rest of the frosting over the yule log. Trim the edges for a better finish and stick white chocolate chips on the cut. Put some apricot halves on the yule log (whole or cut, or both), some chocolate chips and the almonds. Put in the fridge for about 30 min before serving to allow the frosting to set.

Il est assez rare que je fasse honneur à ma région natale, la Provence, lorsque je fais des desserts. Mais je ne sais pas pourquoi j'ai eu une envie irrésistible de mettre le nougat à l'honneur pour Noël. Et en l'occurrence le nougat blanc de Montélimar, même si d'autres types de nougats blancs à l'amande fonctionne également. Cette confiserie, évidemment très sucrée, s'accorde donc à la perfection avec l'acidité de l'abricot pour une bûche très gourmande aux accents ensoleillés malgré le froid de l'hiver. Pour 8-10 parts. 

Ingrédients

- Amandes mondées, grillées
- Copeaux de chocolat blanc.

Crème nougat-abricot

- 250 g de mascarpone 
- 30 cl de crème liquide 30% de MG 
- 200 g de nougat blanc
- 900 g d'oreillons d'abricots au sirop (500 g égouttés).

1 - Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter jusqu'à obtenir un mélange jaune pâle et mousseux. Incorporer le beurre. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une spatule. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser refroidir, puis décoller cette génoise du papier. La déposer sur un linge humide et la rouler très délicatement. Réserver. 

2 - Crème nougat-abricot: Couper le nougat le reste en gros morceaux. Mettre dans une casserole avec la crème liquide à feu doux jusqu'à ce que le nougat ait fondu. Laisser refroidir et mettre au frais. Garder 4-5 oreillons d'abricots et couper le reste, bien égoutté, en petits cubes et faire cuire à feu moyen dans une casserole ou une poêle en remuant de temps en temps jusqu'à obtenir une compotée un peu épaisse (elle n'a pas besoin d'être lisse). Laisser refroidir. Mettre le mascarpone et la crème infusée au nougat - bien froide - dans un saladier et fouetter avec un batteur jusqu'à obtenir un glaçage lisse et ferme. 

3 - Dérouler la génoise de son linge et répartir la compotée d'abricots avec une spatule, puis ensuite les 2/3 du glaçage au nougat. Rouler fermement pour obtenir une bûche bien cylindrique. Couvrir la bûche avec le reste du glaçage. Couper les extrémités pour un fini plus net et y coller des copeaux de chocolat blanc. Déposer sur la bûche les oreillons d'abricots (entiers ou coupés en morceaux, ou les deux), quelques copeaux de chocolat et les amandes grillées. Mettre au frais environ 30 min pour que le glaçage fige un peu, avant de servir.

Citrus-Chocolate Yule-Log / Bûche agrumes-chocolat


I've to admit I am a huge yule-logs and roll cakes enthusiast! I guess I love the fact every slice reveals its own surprizing and mesmeric spiral pattern... And because in France yule-log is THE iconic Christmas dessert I could not neglect this wonderful pastry. I chose a delicate velvety citrus cream that contrast with the rich and strong chocolate icing. For the garnish I used organic oranges from my garden, which are - as you may notice - far smaller than their supermarket counterpart. For 8-10 slices.

Ingredients

- 150 g sugar (1 cup & 1/2)
- 120 g flour (1 cup)
- 25 g butter, melted
- 4 eggs
- 1 pinch of salt.

Citrus cream

- 250 g mascarpone (1 cup)
- 20 cl double cream (1 cup)
- 1 grapefruit
- 1 orange
- 1 lemon
- 2 eggs
- 120 g sugar (1/2 cup)
- 3 tablespoons flour

Chocolate icing

- 150 g dark chocolate
- 20 cl double cream (1 cup)
- Chocolate chips
- Candied orange peel
- Icing sugar.

1 - Put the eggs and sugar in a bowl in a double boiler and whisk until you get a pale yellow and fluffy mixture. Add the butter. Remove the bowl from the water bath and add flour and salt in several times with a spatula. Line a baking sheet (30x40 cm) with parchment paper and spread the dough. Bake in a preheated oven at 180°C (350°F) for 15 min. Let it cool slightly, unmold then remove the parchment paper from the sponge cake. Place on a damp cloth and roll it very delicately. Set aside.

2 - Citrus cream: Zest and squeeze the lemon and the orange. Put the juices, zests, eggs, flour and sugar in a saucepan. Mix well and cook over low heat, stirring with a whisk until the mixture is thick and creamy. Chill. Once the citrus curd is cold combine gently with mascarpone until smooth. In a very cold bowl - let it in the freezer for 30 min - whip the cream until firm. Add the mascarpone-citrus curd gently with a spatula. Remove the peel and pith from the grapefruit and cut the flesh into cubes. Combine to the cream.

3 - Unroll the sponge cake. With a spatula, spread the citrus cream on the sponge cake. Roll firmly to get a cylindrical log. Put in a fridge. Chocolate icing: Heat the cream and combine with the chocolate, chopped, until completely melted. Put in a fridge until slightly thicker and whisk until you get a smooth and airy icing. Spread all over the yule-log, sprinkle the chocolate chips, icing sugar and candied orange peel. Cut the edges for a clean finish. Allow the icing to set in the fridge for 20 min before serving.

Je dois avouer que je suis immense fan des bûches pâtissières et autres gâteaux roulés. Je dois probablement adorer la manière dont chaque nouvelle tranche révèle son propre motif, telle une spirale hypnotique... Et comme nous sommes en France, impossible de passer outre ce merveilleux dessert pour Noël. J'ai choisi une délicate crème aux agrumes qui contraste agréablement avec le glaçage au chocolat, puissant et riche. Pour la garniture j'ai utilisé des oranges bio de mon jardin qui, comme vous pouvez le remarquer, sont bien plus petites que leur alter-ego de supermarché. Pour 8-10 parts.

Ingrédients 

- 150 g de sucre 
- 120 g de farine 
- 25 g de beurre fondu 
- 4 œufs 
- 1 pincée de sel.

Crème aux agrumes

- 250 g de mascarpone 
- 20 cl de crème liquide 30% de MG 
- 1 pamplemousse 
- 1 orange
- 1 citron
- 2 œufs
- 120 g de sucre 
- 3 cuil à soupe de farine

Glaçage au chocolat

- 150 g de chocolat noir 
- 50 g de beurre
- 20 cl de crème liquide 30% de MG 
- Copeaux de chocolat
- Écorces d'orange confites.

1 - Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter jusqu'à obtenir un mélange jaune pâle et mousseux. Incorporer le beurre. Enlever le saladier du bain-marie et ajouter la farine et le sel en plusieurs fois avec une spatule. Doubler une plaque de cuisson (30x40 cm environ) avec du papier sulfurisé et répartir la pâte. Enfourner dans un four préchauffé à 180°c pour 15 min. Laisser refroidir, puis décoller cette génoise du papier. La déposer sur un linge humide et la rouler très délicatement. Réserver. 

2 - Crème aux agrumes: Zester et presser le citron et l'orange. Mettre les jus, les zestes, les œufs, la farine et le sucre dans une casserole. Bien mélanger et laisser cuire à feu doux en remuant au fouet jusqu'à ce que le mélange soit épais et crémeux. Mettre au frais. Une fois froid détendre la crème aux agrumes avec le mascarpone petit à petit à l'aide d'une spatule jusqu'à l'obtention d'un glaçage bien lisse. Dans un saladier très froid - le passer au congélateur - fouetter la crème liquide jusqu'à obtenir une chantilly ferme. Incorporer délicatement le mélange mascarpone-agrumes à la chantilly. Réserver. Peler le pamplemousse à vif et prélever les suprêmes. Les couper en cubes et les ajouter à la crème.

3 - Dérouler la génoise de son linge et répartir la crème sur la génoise. Rouler fermement pour obtenir une bûche bien cylindrique. Glaçage au chocolat: Faire chauffer la crème et la verser sur le chocolat. Mélanger jusqu'à obtenir une ganache lisse. Mettre au frais pour qu'elle raffermisse légèrement puis fouetter pour avoir un glaçage mousseux et léger. Étaler le tout sur la bûche, parsemer les copeaux de chocolat, de sucre glace et d'écorces d'orange confites. Couper les extrémités pour un fini net et mettre au frais 20 min pour que le glaçage raffermisse, avant de servir.
