Rôti de volaille farci orange-pistache-noisette / Orange-Pistachio-Hazelnut Stuffed Chicken Roll


Je sais que je me réinvente assez peu à Noël mais pour moi c'est la période idéale pour préparer ce genre de plat avec bien sûr toujours une farce un peu différente d'une année à l'autre. Ici j'ai fait le choix d'ajouter des pistaches et des noisettes à une farce délicatement parfumé de zestes d'orange. Le jus d'orange est utilisé avec les sucs de cuisson, qui donnent une sauce délicieusement aigre-douce. Pour 6 personnes.

Ingrédients

- 4 blancs de poulet (800 g)
- 2 oranges
- 1 oignon
- 4 gousses d'ail
- 10 cl de vin blanc
- 2 cuil à soupe de fond de veau
- 1 cuil à soupe d'huile d'olive
- 1 cuil à soupe d'origan 
- 1 cuil à soupe de miel
- Sel, poivre.

Farce

- 350 g de chair à saucisse
- 50 g de pistaches décortiquées
- 50 g de noisettes décortiquées
- 1 oignon, haché
- 1 gousse d'ail, émincée
- 6 brins de persil, ciselés
- 1 oeuf
- 5 cl de lait
- 4 cuil à soupe de chapelure
- 1 cuil à soupe d'huile d'olive
- 1/2 cuil à café de cinq-épices chinois
- Sel, poivre

1 - Farce: Dans une poêle faire chauffer l'huile d'olive à feu moyen et faire colorer l'oignon et l'ail jusqu'à ce qu'ils caramélisent légèrement. Laisser refroidir. Incorporer le mélange oignon-ail avec le reste des ingrédients de la farce. Ajouter le zeste d'une orange dans la farce. Réserver. Fendre les blancs de poulet en deux et les couvrir de film cellophane et les frapper avec un marteau de cuisine ou un objet lourd (casserole, rouleau à pâtisserie) pour obtenir des escalopes.

2 - Doubler le plan de travail de film cellophane. Répartir les escalopes de poulet, côté lisse en dessous pour former un carré. Déposer une colonne de farce au milieu. Rabattre ensuite les escalopes de poulet vers le centre pour couvrir la farce en s'aidant du film cellophane. Bien serrer le film pour former un boudin et laisser au frais environ 1 h pour que le rôti garde sa forme. Retirer délicatement le cellophane et ficeler (environ 6-7 fois) le rôti avec de la ficelle de cuisine. S'il reste de la farce formez des boulettes.

3 - Couper les oignons en fines lamelles. Répartir dans un plat allant au four avec les gousses d'ail en chemise et l'origan. Déposer le rôti par dessus avec les boulettes de farce éventuellement. Saler, poivrer et arroser d'huile d'olive. Enfourner environ 1h dans un four préchauffé à 180°c. Retourner à mi-cuisson. Déglacer régulièrement les sucs de cuisson avec un peu d'eau pendant la cuisson. Lorsque le rôti est cuit le réserver. 

4 - Zester et presser le presser le jus des oranges. Presser les gousses d'ail pour récupérer la pulpe de l'ail. Mettre les jus de cuisson, l'oignon et la purée d'ail dans une casserole avec le jus d'orange, les zestes, le vin blanc et le fond de veau. Réduire encore 10-15 min à feu doux. Pour une sauce plus soyeuse, on peut la passer au blender. Couper le rôti en tranches épaisses et servir avec la sauce et l'accompagnement de votre choix.

I know I don't reinvent myself much at Christmas, but for me it's the ideal time to prepare this kind of dish, always with a slightly different stuffing from one year to the next, of course. Here, I've chosen to add pistachios and hazelnuts to a stuffing delicately flavoured with orange zest. The orange juice is used with the cooking juices to make a deliciously sweet and sour sauce. Serves 6.

Ingredients

- 4 chicken breasts (800 g)
- 2 oranges
- 1 onion
- 4 cloves of garlic
- 10 cl white wine
- 2 tablespoons veal stock
- 1 tablespoon olive oil
- 1 tablespoon oregano 
- 1 tablespoon honey
- Salt, pepper.

Stuffing

- 350 g sausage meat
- 50 g shelled pistachios
- 50 g shelled hazelnuts
- 1 onion, chopped
- 1 clove garlic, minced
- 6 sprigs parsley, chopped
- 1 egg
- 5 cl milk
- 4 tablespoons breadcrumbs
- 1 tablespoon olive oil
- 1/2 teaspoon Chinese five-spice powder
- Salt, pepper.

1 - Stuffing: Heat the olive oil in a frying pan over medium heat and brown the onion and garlic until lightly caramelised. Leave to cool. Mix the onion and garlic mixture with the rest of the stuffing ingredients. Add the zest of one orange to the stuffing. Set aside. Cut the chicken breasts in half, cover with cling film and pound with a kitchen hammer or heavy object (saucepan, rolling pin) to make escalopes.

2 - Double the cling film on the work surface. Arrange the chicken escalopes, smooth side down, to form a square. Place a column of stuffing in the middle. Then fold the chicken escalopes towards the centre to cover the stuffing, using the cling film to help. Tighten the cling film to form a roll and leave to cool for about 1 hour so that the roast keeps its shape. Carefully remove the cling film and tie the roast with kitchen string (about 6-7 times). If there is any stuffing left over, shape it into balls.

Cupcakes chocolat & caramel au beurre salé / Chocolate & Salted Butter Caramel Cupcakes


Cela faisait bien longtemps que je n'avais proposé une recette de cupcakes sur ce blog. Je me suis inspiré d'un gâteau que j'ai mangé dans une pâtisserie, notamment en mélangeant du caramel au beurre salé avec du chocolat, un mélange que auquel je n'aurais pas forcément pensé mais qui fonctionne très bien. D'ailleurs si vous n'avez pas de beurre salé, du beurre classique avec une pincée de sel fonctionnera très bien. J'ai réalisé moi même les caissettes en papier avec du papier sulfurisé mais celles du commerce fonctionnent tout aussi bien. J'ai ajouté des noisettes pour une pointe de croquant, mais elles peuvent être remplacées par d'autres fruits à coque ou par rien, selon vos goûts. Pour 12 cupcakes.

 Ingrédients

- 120 g de farine
- 100 g de sucre
- 100 g de yaourt nature
- 50 g de beurre, fondu
- 50 g d'huile végétale
- 2 oeufs
- 4 cuil à soupe de cacao amer
- 2 cuil à soupe de lait
- 1 cuil à café de levure chimique
- 1 pincée de sel.
- 10-12 noisettes décortiquées

Caramel au beurre salé

- 80 g de sucre
- 40 g de beurre salé
- 10 cl de crème liquide 30% de MG.

Glaçage au chocolat

- 250 g de mascarpone
- 150 g de chocolat noir
- 20 cl de crème liquide 30% de MG.

1 - Mélanger la farine, le cacao, le sucre, la levure et le sel, puis ajouter le yaourt, le lait, les oeufs, le beurre et le l'huile, puis fouetter jusqu'à obtenir une pâte homogène. Doubler 12 moules à muffins/cupcakes avec des caissettes en papier et répartir la pâte. Enfourner 15 min dans un four préchauffé à 180°C. Laisser refroidir. 

2 - Caramel: Faire chauffer la crème jusqu'à frémissement. Dans une casserole faire fondre le sucre avec 1 cuil à soupe d'eau à feu moyen-vif jusqu'à obtenir un caramel ambré. Verser la crème chaude en fouettant (attention aux éclaboussures et à la vapeur) jusqu'à ce qu'elle soit complètement incorporée. Poursuivre la cuisson à feu doux en incorporant le beurre en plusieurs fois, jusqu'à obtenir un caramel bien lisse. Laisser refroidir.

3 - Glaçage: Faire chauffer la crème jusqu'à frémissement. Concasser le chocolat et y verser la crème chaude par dessus. Laisser reposer 5 min et fouetter jusqu'à ce que le chocolat et la crème soit parfaitement liée. Laisser refroidir à température ambiante et incorporer le mascarpone en fouettant jusqu'à obtenir un glaçage ferme et lisse. 

4 - Faire griller les noisettes rapidement puis les concasser grossièrement. Creuser les cupcakes avec un creuse-pomme ou un couteau, et garnir avec le caramel. Mettre le glaçage dans une poche à douille crénelée et décorer les cupcakes. Parsemer de noisettes concassées et mettre au frais 30 min pour que le glaçage raffermisse un légèrement.

It's been a long time since I did not post a cupcake recipe on this blog. I was inspired by a cake that I had in a pastry shop, and I absolutely loved the delicate and rich combination of salted butter caramel with chocolate, a mixture that I would not necessarily have thought of but which works very well. About the caramel, if you don't have salted butter, regular butter with a pinch of salt will work very well. I made the paper boxes myself with baking paper but the regular ones from the supermarket work just as well. I added hazelnuts to this recipe for a little bit of crunch, but they can be remplaced by other nuts, or by nothing at all, according to your taste. For 12 cupcakes.

 Ingredients

- 120 g flour (1 cup)
- 100 g sugar (1/2 cup)
- 100 g natural yogurt (1/2 cup)
- 50 g butter, melted 
- 50 g vegetable oil (1/4 cup)
- 4 tablespoons unsweetened cocoa
- 2 eggs
- 2 tablespoons milk
- 1 teaspoon of baking powder
- 1 pinch of salt.
- 10-12 shelled hazelnuts.

Salted butter caramel

- 70 g sugar (1/3 cup)
- 40 g salted butter 
- 10 cl double cream (1/2 cup).

Chocolate icing

- 250 g mascarpone (1 cup)
- 150 g dark chocolate (5 oz)
- 20 cl double cream (1 cup).

1 - Mix the flour, cocoa, sugar, baking powder and salt, then add the yogurt, milk, eggs, butter and oil, and whisk until you get a smooth batter. Line 12 muffin / cupcake tins with paper cups and distribute the batter. Bake for 15 minutes in an preheated oven to 180°C (350°C). Let cool.

2 - Caramel: Heat the cream until simmering. In a saucepan, melt the sugar with 1 tablespoon of water over medium-high heat until you getan amber caramel. Add the cream while whisking (watch out for splashes and steam) until it is completely incorporated. Continue cooking over low heat, incorporating the butter into several batches, until you obtain a smooth caramel. Let cool.

3 - Icing: Heat the cream until it simmers. Chop the chocolate and pour the hot cream over it. Set aside 5 min and whisk until the chocolate and cream are perfectly combined. Let cool to room temperature and combine with the mascarpone, whisking until you get a firm and smooth icing.
    
4 - Toast the hazelnuts quickly and crush them roughly. Core the cupcakes with an apple-corer or a knife, and fill with the caramel. Fill the icing in a piping bag with a crenellated decorating nozzle and decorate the cupcakes. Sprinkle with crushed hazelnuts and chill for 30 minutes so that the icing firms up slightly.

Paris-Brest


Happy Birthday... to me! Indeed today for the 1st of September, I wanted to prepare an iconic French pastry. The Paris-Brest has always been a major challenge to me, for its delicate and breakable choux crown and its praline mousseline cream which both needs to be silky yet firm, to be piped easily. Nevertheless with a little bit of precision here is my Paris-Brest, and I must say I'm quite proud. My recipe is classical with a typical craquelin topping. My crown is made of 12 choux, but I still have enough choux pastry to make 6 extra choux, that went directly to our stomach! Please note that the measurements are made only in grams for this specific recipe because the cup/oz system is not accurate enough for a Paris-Brest. Pour 1 Paris-Brest.

Ingredients

Choux pastry

- 120 g flour
- 180 g water
- 75 g butter
- 3 eggs
- 1 tablespoon sugar
- 1 pinch salt.

Mousseline cream

- 40 cl milk (2 cups)
- 3 egg yolks
- 80 g sugar
- 40 g flour
- 200 g butter
- 75 g praline paste.

Craquelin

- 25 g butter
- 25 g sugar
- 25 g flour.

1 - Mousseline cream: Heat the milk and the praline paste over medium heat until simmering. Whisk the egg yolks with the sugar and flour until you get a smooth and pale yellow cream. Pour the praline milk while whisking to dissolve the sugar and the flour. Then transfer into the sauce pan and cook over low heat while mixing constantly until you get a thick custard. Remove from the stove and add 100 g of butter in cubes while stirring until the butter is fully combined. Transfer into a wide dish and cover with cling film then put in the fridge.

2 - Craquelin: Mix all the ingredients until you get a smooth dough and spread on 2 mm between two squares of parchment paper and put in the fridge. Choux dough: Bring the water with the butter, the sugar and the salt to a boil over medium heat. Pour the flour in one batch and mix until you get a smooth ball of dough. Remove from the stove and it cool slightly for few minutes Add the eggs one by one and mix vigourously until you get a dense and slighty sticky batter. Put in a piping bag with a round nozzle.

3 - Draw a 25 cm (10") circle on parchment paper and create a crown out of 12 choux (about 4 cm in diameter). With a small cookie-cutter cut circles (about 2 cm - 1") into the craquelin layer and put a circle on each choux. Put in a preheated oven at 200°C (360°F) about 20 min . Once cooked open the over door slightly to let the steam escape then take the choux out of the oven and let it cool completely.

4 - Put the - fully cooled - praline cream in a large bowl and whisk while adding the extra 100 g of butter, soft and cubed, gradually. Whisk until the butter is completely combined and the cream starts to thicken and create soft peaks. Put the cream in a piping bag with a decorating nozzle. Cut the choux crown horizontally and fill with the mousseline cream. Top with the reste of the crown and dust with icing sugar. Put in the fridge at least 1 h before serving for the cream to fully set.

Joyeux anniversaire... à moi même! En effet en ce 1er septembre je voulais réaliser un grand classique de la pâtisserie française. Le Paris-Brest a toujours été pour moi un véritable défi de le réaliser, tant pour sa délicate et cassante couronne en choux, que sa crème mousseline pralinée qui demande un travail méticuleux pour qu'elle soit à la fois lisse et ferme, et donc facile à garnir. Néanmoins avec un peu de précision voici mon Paris-Brest dont je suis assez fier. Ma recette est classique avec son décor en craquelin. Ma couronne comportait 12 choux, il me restait donc un peu de pâte pour en 6 de plus, qui ont bien sûr été dégustés sans modération! Pour 1 Paris-Brest. 

Ingrédients


Pâte à choux

- 120 g de farine
- 180 g d'eau
- 75 g de beurre
- 3 oeufs
- 1 cuil à soupe de sucre
- 1 pincée de sel.

Crème mousseline

- 40 cl de lait
- 3 jaunes d’œuf
- 80 g de sucre
- 40 g de farine
- 200 g de beurre
- 75 g de praliné.

Craquelin

- 25 g de beurre
- 25 g de sucre
- 25 g de farine.

1 - Crème mousseline: Faire chauffer le lait à feu moyen avec le praliné jusqu'à frémissement. Fouetter les jaunes d’œuf, le sucre et la farine jusqu'à obtenir un mélange crémeux et jaune clair. Verser le lait chaud dessus en fouettant puis transvaser ce mélange dans la casserole. Fouetter et continuant la cuisson à feu doux jusqu'à ce que la crème soit bien épaisse. Retirer du feu et ajouter 100 g de beurre en cubes et mélanger jusqu'à dissolution du beurre. Transvaser dans un plat évasé, filmer au contact avec du film plastique et mettre au frais.

2 - Craquelin: Mélanger les ingrédients jusqu'à obtenir une pâte crémeuse. L'étaler entre deux feuilles de papier sulfurisé sur 2 mm et mettre au frais. Pâte à choux: Faire chauffer l'eau avec le beurre, le sucre et le sel dans un casserole à feu moyen jusqu'à ébullition. Verser ensuite la farine d'un coup et mélanger rapidement. Baisser le feu et continuer à mélanger jusqu'à obtenir une boule de pâte homogène. Enlever du feu et laisser légèrement tiédir quelques minutes. Ajouter ensuite les œufs un par un en mélangeant vigoureusement entre chaque œuf jusqu'à obtenir une pâte dense et légèrement collante. Mettre dans une poche à douille avec une douille ronde.

3 - Dessiner un cercle d'environ 25 cm de diamètre sur du papier sulfurisé et dresser une couronne de 12 choux d'environ 4 cm de diamètre. Avec un emporte-pièce faire des cercles d'environ 2 cm de diamètre avec le craquelin et déposer un cercle sur chaque chou. Enfourner 20 min dans un four préchauffé à 200°C. Un fois cuit laisser la couronne de choux dans le four entrouvert pour laisser la vapeur s'échapper lentement, puis sortir les choux et laisser complètement refroidir.

4 - Mettre la crème au praliné dans un cul de poule et fouetter tout en ajoutant les 100 g de beurre restant, bien mou, petit à petit. Fouetter jusqu'à ce que tout le beurre soit bien intégré et que la crème commence à se raffermir et forme des pics. Mettre la crème dans une poche à douille crénelée. Couper la couronne de choux dans l'épaisseur et garnir les choux de la crème mousseline. Recouvrir par la dessus de la couronne. Saupoudrer de sucre glace et mettre au frais au moins 1 h avant de servir pour que la crème fige.

Cupcakes Kinder Bueno®


With more than 1 million Kinder Bueno bars eaten each day in the world, this candy sold in about 20 countries is also the most popular in France. Obviously this is my favourite chocolate bar and I wanted to transform it into cupcakes. The delicate frosting which combines the subtle flavours of hazelnut and milk chocolate lies on simple vanilla cupcakes. A sweet and soothing combination. For 12 cupcakes.

Ingredients 

- 200 g flour (1 & 1/4 cup)
- 200 g sugar (1 cup)
- 100 g butter, soft
- 2 eggs
- 10 cl milk (1/2 cup)
- 1 teaspoon backing powder
- 1/2 teaspoon natural vanilla extract.

Frosting 

- 250 g mascarpone (1 cup)
- 20 cl double cream (1 cup)
- 2 tablespoons sugar
- 4 Kinder Bueno bars (90 g)
- 50 g milk chocolate

Topping

- 3 Kinder Bueno bars (65 g)
- 50 g dark chocolate
- 2 tablespoons hot water.

1 - Frosting: Break the 4 Kinder Bueno bars and put them in a saucepan with the double cream, milk chocolate and sugar. Allow to cook over medium heat until the bars are soaked and mushy. Put this cream through a sieve and squeeze with a spoon to extract all the filling from the Kinder Bueno bars. Set aside to cool completely in a fridge.

2 - Cream the butter and the sugar with a whisk. When the mixture whitens add the eggs, the milk and the vanilla extract. Mix the flour and the baking powder and add to the mixture. Line muffin/cupcake tins with paper cups. Pour the batter. Bake 15 minutes in preheated oven at 180°C (350°F). Remove from the oven and let the cupcakes cool in tin.

3 - Topping: Melt the chocolate with the hot water to get a runny and smooth sauce. Set aside. Frosting: Whip the cold Kinder Bueno cream and the mascarpone until you get a stiff and smooth frosting. Put it in a piping bag with a decorating nozzle and decorate the cupcakes. Drip some dark chocolate sauce over the frosting with a spoon or a homemade cooking paper piping bag. Add a square of Kinder Bueno Bar on each cupcake. Put in a fridge for about 20 min before serving.

Avec plus de 1 million de Kinder Bueno consommés dans le monde chaque jour, cette confiserie vendue dans plus de 20 pays, est aussi la plus consommée en France. Evidemment c'est ma barre chocolatée préférée et je la décline aujourd'hui en format cupcakes. La glaçage avec son goût subtil associe les saveurs délicates de la noisette et du chocolat au lait, sur de simples cupcakes à la vanille. Un mélange tout en douceur. Pour 12 cupcakes. 

Ingrédients 

- 200 g de farine 
- 200 g de sucre
- 100 g de beurre 
- 2 oeufs 
- 10 cl de lait 
- 1 cuil à café de levure 
- 1/2 cuil à café d'extrait naturel de vanille. 

Glaçage 

- 250 g de mascarpone 
- 20 cl de crème liquide 30% de MG 
- 2 cuil à soupe de sucre 
- 4 barres de Kinder Bueno (90 g)
- 50 g de chocolat au lait.

Décoration

- 3 barres de Kinder Bueno (65 g)
- 50 g de chocolat noir
- 2 cuil à soupe d'eau chaude. 

1 - Glaçage: Casser grossièrement les 4 barres de Kinder Bueno et les mettre dans une casserole avec la crème, le chocolat au lait et le sucre. Laisser cuire à feu doux jusqu'à ce que les barres de Kinder Bueno aient bien fondu. Passer au tamis en écrasant bien avec une cuillère pour extraire toute la crème. Mettre au frais.  

2 - Battre le beurre avec le sucre à l'aide d'un fouet. Quand le mélange blanchit ajouter les oeufs, le lait et l'extrait de vanille. Mélanger la farine et la levure et l'ajouter au mélange. Doubler les moules à muffins/cupcakes de caissettes en papier. Répartir la pâte par dessus. Faire cuire 15 min dans un four préchauffé à 180°c. Sortir du four et laisser les cupcakes refroidir dans les moules.

3 - Décoration: Faire fondre le chocolat noir avec l'eau jusqu'à obtenir une sauce lisse et fluide. Laisser reposer. Glaçage: Fouetter la crème au Kinder Bueno et le mascarpone jusqu'à obtenir un glaçage ferme et lisse. Mettre le glaçage dans une poche à douille et décorer les cupcakes. Avec une cuillère ou un cornet en papier cuisson faire des filets de sauce au chocolat noir le glaçage. Couper les 3 barres de Kinder Bueno et déposer un carré sur chaque cupcake. Mettre au frais environ 20 min pour que le glaçage fige légèrement avant de servir.
