Figs & Foie gras Chicken Ballotine & Red Wine sauce / Ballotine de volaille aux figues et foie gras - Sauce au vin rouge


While almost everybody is getting ready for Xmas, here is my main course for this celebration. The rich taste of the foie gras and the smoked duck breast matches heavenly with with the mellow flavour of dried figs to turn into a perfectly sweet and salty recipe. It goes well with mashed vegetables such as potatoes, parsnips, sweet potatoes and so on. It is time for me to wish you a Merry Xmas and Happy New Year...  For 4 servings.

Ingredients

- 4 chicken breasts
- 2 onions
- 8 dried figs
- 60 g mi-cuit foie gras (2 oz)
- 60 g smoked duck breast (2 oz)
- 20 cl red wine (1 cup)
- 10 cl sweet soy sauce (1/2 cup)
- 2 tablespoons olive oil
- 1 tablespoon veal/beef stock powder
- Salt, ground peppercorn.

1 - Cut the figs into small dices and let them soak into the red wine. Cut the onions into thin slices. Chop the foie gras and smoked duck breast into small dices. Drain the fig and keep the wine. Combine the figs, the foie gras and the smoked duck breast with a bit of ground peppercorn. Butterfly the chicken breasts with a sharp knife and fill them with the fig-foie gras stuffing. Roll tightly the chicken and tie each ballotine with cooking twine.

2 - In an oven dish spread the onion and pour the red wine. Put the ballotines on the top and add the olive oil. Sprinkle a little bit of salt and put in a preheated oven at 200°C (360°F) for 30 min. Turn the chicken once halfway point to make it golden brown on both sides. Set aside. Pour the roasted onions into a saucepan with the sweet soy sauce, the veal stock and a bit of water. Mix everything an immersion blender and allow to simmer on medium heat until you get a thick and glossy sauce. Remove the twine from the chicken, cut into thick slices and serve immediately with mashed vegetables and the sauce.

Alors que tout le monde ou presque se prépare pour Noël voici ma recette de plat principal pour les fêtes. Le goût riche du foie gras et du magret fumé s'associe parfaitement à la douceur des figues séchées pour un plat sucré-salé tout en subtilité. Il se marie très bien avec un écrasé de légumes: pomme de terre, panais, patate douce, etc. De mon côté je vous souhaite à tous de très belles fêtes de fin d'année et un très savoureux réveillon de Noël...  Pour 4 personnes.

Ingrédients

- 4 blancs de poulet
- 2 oignons
- 8 figues sèches
- 60 g de foie gras mi-cuit
- 60 g de magret de canard fumé
- 20 cl de vin rouge
- 10 cl de sauce soja sucrée
- 2 cuil à soupe d'huile d'olive
- 1 cuil à soupe de fond de veau
- Sel, poivre.

1 - Couper les figues en petits dés et les laisser macérer dans le vin rouge. Couper les oignons en fines lamelles. Émincer le foie gras et magret fumé en petits dés. Égoutter les figues en gardant le vin rouge. Mélanger les figues, le foie gras et le magret. Fendre les blancs de poulet en portefeuille avec un couteau bien aiguisé et les étaler finement pour former des escalopes. Garnir avec la farce figue-foie gras et refermer en roulant bien serré. Ficeler chaque ballotine en serrant bien.

2 - Dans un plat allant au four répartir les oignons puis verser dessus le vin rouge. Déposer les ballotines et arroser le tout d'huile d'olive. Saler très légèrement et enfourner 30 min dans un four préchauffé à 200°C. Retourner à mi cuisson pour que le poulet dore bien. Réserver. Transvaser les oignons dans une casserole et ajouter la sauce soja sucrée, le fond de veau et un filet d'eau. Mixer le tout avec un mixeur plongeant et laisser réduire jusqu'à obtenir une sauce bien sirupeuse. Enlever la ficelle du poulet, couper en tranches épaisses et servir avec un écrasé de légumes et la sauce bien chaude sans attendre.

Figs & Almond tart / Tarte amandine aux figues


Fig trees had always been a part of my chilhood memories, growing here and there in all the villages of Southern France, offering both their light shade and plump fruits. This delicate tart combines a shortbread crust and an almond cream toped with halved figs glazed with honey: a real treat! 8-10 pieces.

Ingredients

- 500 g figs (1 lb)
- 1 teaspoon honey.

Crust

- 250 g shortbreads, crushed
- 150 g butter, melted
- 1 tablespoon flour.

Almond cream

- 100 g ground almonds
- 75 g sugar (1/3 cup)
- 1 egg 
- 1 egg yolk
- 5 cl of milk (1/4 cup)

1 - Crust: Combine all the ingredients. Line a baking paper into a large springform pan and spread this mixture evenly on bottom and edges. Press the crust with the hands and chill for 15 min.

2 - Almond cream: Whisk the egg and egg yolk with sugar until creamy and light yellow. Add ground almonds and milk to get a smooth cream. Pour the cream over crust.

3 - Cut the figs in half and arrange them on almond cream. Dissolve honey with a teaspoon of warm water. With a pastry brush spread honey on figs. Put in preheated oven at 180°C (350°F) for 30-35 minutes After cooking, chill at least 3 hours before serving. Remove the baking paper very carefully (the crust is fragile) and serve. The tart is even better the next day.

Les figuiers ont toujours fait partie de mes souvenirs d'enfance, poussant ci et là dans tous les villages du Midi, offrant leur ombre délicate et leurs fruits rebondis. Cette tarte délicate mélange une croûte en petits beurres où les fruits juste nappés de miel dorent au four sur un lit de crème à l'amande. Un régal! Pour 8-10 parts. 

Ingrédients 

- 500 g de figues 
- 1 cuil à café de miel. 

Croûte 

- 250 g de petits beurres 
- 150 g de beurre fondu 
- 1 cuil à soupe bombée de farine. 

Garniture 

- 100 g de poudre d'amandes 
- 75 g de sucre 
- 1 oeuf entier 
- 1 jaune d'oeuf 
- 5 cl de lait. 

1 - Croûte: Réduire les petits beurres en poudre au mixer. Y incorporer le beurre et la farine. Chemiser un moule à tarte de papier cuisson et répartir ce mélange de manière homogène au fond et sur les bords. Bien tasser. Mettre au frais. 

2 - Garniture: Fouetter l'oeuf et le jaune d'oeuf avec le sucre jusqu'à obtenir un mélange crémeux et jaune clair. Ajouter la poudre d'amandes, puis le lait jusqu'à avoir une crème bien homogène. Verser cette crème sur la croûte. 

3 - Couper les figues en deux et les disposer harmonieusement sur la garniture. Diluer le miel avec une cuil à café d'eau chaude. Avec un pinceau badigeonner les figues de ce mélange. Enfourner 30-35 min dans un four préchauffé à 200°c. Après cuisson laisser refroidir et mettre au frais au moins 3 h avant de déguster. Démouler très délicatement - la croûte est particulièrement fragile - en tirant sur le papier cuisson pour transférer la tarte sur une assiette. Elle est encore meilleure le lendemain.
