Cette année encore je vous propose mon menu de Noël. En entrée je voulais préparer une recette que je faisais régulièrement en atelier de cuisine. Le goût délicat et frais du saumon et du citron confit se marie particulièrement bien avec la richesse de la crème à l'ail. On trouve facilement des carrés de pâte à ravioli - frais ou congelés - dans les épiceries asiatiques. Ces carrés cuisent très vite donc faites attention de ne pas les oublier et préférez une eau juste frémissante car les raviolis sont fragiles. Cette entrée peut être transformée en plat principal: doublez simplement les quantités. Pour 4 personnes.
Ingrédients
- 16 carrés de pâte à ravioli
- 300 g de filet de saumon
- 1/4 citron confit
- 8 brins de ciboulette, émincés
- 1 cuil à soupe de parmesan râpé
- Sel, poivre.
Crème ail-aneth
- 20 cl de crème liquide
- 2 gousses d'ail, émincées
- 1 cuil à soupe d'aneth ciselée
- 1 cuil à soupe d'huile d'olive
- Sel, poivre
- Parmesan, pour servir.
1 - Retirer la peau du saumon et d'éventuelles arêtes. Hacher grossièrement la chair au couteau. Retirer la pulpe du citron confit et émincer la peau finement. Mélanger la saumon, le citron confit, la ciboulette, le parmesan, le sel et le poivre. Répartir la farce sur les carrés de pâte à raviolis et mouiller légèrement les bords de la pâte et plier chaque carré en diagonale pour former des triangles. Pincer bien la pâte pour la souder. Mettre au frais 30 min.
2 - Crème ail-aneth: Mettre l'huile d'olive et l'ail dans une poêle et laisser infuser à feu doux jusqu'à ce que l'ail commence à peine à blondir. Ajouter l'aneth puis la crème et laisser épaissir légèrement. Saler, poivrer. Réserver au chaud. Dans un casserole faire chauffer un volume d'eau salée jusqu'à frémissement. Faire cuire les raviolis jusqu'à ce qu'ils soient al-dente (environ 1-2 min). Servir immédiatement avec la crème ail-aneth bien chaude et le parmesan.

This year again I share with you my Christmas menu. For my starter, I wanted to prepare a recipe that I made regularly in my cooking classes. The delicate and fresh taste of salmon and preserved lemons matches particularly well with the richness of the garlic cream. Wonton wrappers - fresh or frozen - are easily found in Asian grocery stores. These wrappers cook very quickly so be careful not to forget them and prefer water that is just simmering because the ravioli are fragile. This starter can be transformed into a main course: simply double the quantities. For 4 people.
Ingredients
- 16 wonton wrappers
- 300 g salmon fillet (11 oz)
- 1/4 preserved lemon
- 8 sprigs of chives, thinly chopped
- 1 tablespoon grated Parmesan cheese
- Salt, ground peppercorn.
Dill-Garlic Cream
- 20 cl double cream (2 cups)
- 2 garlic cloves, minced
- 1 tablespoon chopped dill
- 1 tablespoon olive oil
- Salt, ground peppercorn
- Parmesan cheese, to serve.
1 - Remove the skin of the salmon and any bones. Roughly chop the flesh with a knife. Remove the pulp of the preserved lemon and thinly slice the skin. Combine the salmon, preserved lemon skin, chives, Parmesan cheese, salt and peppercorn. Distribute this stuffing over the wonton wrappers and lightly wet the edges of the dough and fold each square diagonally to form triangles. Pinch firmly the dough to stick it properly. Store in the fridge for 30 min.
2 - Dill-Garlic Cream: Put the olive oil and the garlic in a pan and let infuse over low heat until the garlic has just started to brown. Add the dill then the cream and let thicken slightly. Season with salt and pepper. Set aside. Heat a saucepan of salted water until simmering. Cook the ravioli until they are al-dente (about 1-2 min). Serve immediately with the hot Dill-Garlic Cream and Parmesan cheese, to taste.
