Gâteau aux kumquats et aux pignons / Kumquats & Pine Nuts Cake


Il y a quelques temps un ami a eu la gentillesse de me ramener de savoureux kumquats confits de Corfou, en Grèce. Toutefois je trouvais ces confiseries trop sucrées à mon goût et c'est pourquoi j'ai décidé de les incorporer dans un gâteau tout simple avec une pointe d'huile d'olive et quelques pignons pour un peu de croquant. Le sirop à l'orange permet d'ajouter du moelleux à ce gâteau, qui est parfait avec une tasse de thé pour le goûter. Je conseille de retirer l'intérieur des kumquats car cette partie est un peu coriace et contient des pépins. Pour 10-12 parts. 

Ingrédients

- 180 g de farine
- 120 g de sucre
- 100 g de beurre, mou + pour le moule
- 55 g d'huile d'olive 
- 3 œufs
- 1 sachet de levure chimique
- 1 pincée de sel
- 150 g de kumquats confits 
- 4 cuil à soupe de pignons 
- 4 cuil à soupe de sucre glace
- 2 oranges. 

1 - Retirer l'intérieur des kumquats et couper la peau en fines lamelles. Fouetter le beurre avec le sucre et l'huile d'olive jusqu'à obtenir un mélange homogène. Incorporer les œufs et le jus d'une orange puis mélanger bien. Ajouter la farine, la levure et le sel. Incorporer les 2/3 des kumquats. Verser la pâte dans un moule beurré s'environ 25x20 cm et parsemer de pignons. Enfourner 20-25 min dans un four préchauffé à 180°C. 

2 - Mélanger le sucre glace avec le jus de la deuxième orange. Dès la sortie du four badigeonner le gâteau bien chaud avec le mélange orange-sucre glace et décorer avec le reste des lamelles de kumquats. Laisser refroidir avant dégustation.

Some time ago a friend was kind enough to bring me some luscious candied kumquats from Corfu, in Greece. However, I found these sweets a bit too cloying for my taste and that's why I decided to incorporate them into a very simple cake with a dash of olive oil and a few pine nuts for a bit of crunch. The orange syrup helps add moistness to this cake, which is perfect with a cup of tea as a snack. I suggest to hollow the kumquats because the pulp is a bit chewy and contains many seeds. For 10-12 slices.

Ingredients

- 180 g flour (1 & 1/4 cup)
- 120 g sugar (1/2 cup)
- 100 g butter, soft + for the mold (1/2 cup)
- 55 g olive oil (1/4 cup)
- 3 eggs
- 1 tablespoon baking powder
- 1 pinch salt
- 150 g candied kumquats (5 oz)
- 4 tablespoons pine nuts
- 4 tablespoons icing sugar
- 2 oranges.

1 - Remove the inside of the kumquats and cut the skin into thin strips. Whisk the butter with the sugar and olive oil until you get a smooth mixture. Incorporate the eggs and the juice of one orange then mix well. Add flour, baking powder and salt. Add 2/3 of the chopped kumquats. Pour the batter into a buttered 25x20 cm (10x8") tin  and sprinkle with pine nuts. Bake for 20-25 minutes in a preheated oven at 180°C (360°F).

2 - Mix the icing sugar with the juice of the second orange. As soon as it comes out of the oven, brush the hot cake with the orange-icing sugar mixture and decorate with the rest of the kumquat strips. Leave to cool before serving.

Italian Carrot Cake



I discovered carrot cake for the first time in London. And to be really honest with you, the excess of orange zest, cinnamon, ginger and nutmeg disappointed me a lot. Then I discovered, thanks to the great Nigella Lawson, this italian-like version, with its fine aroma of pine nuts and vanilla. The humidity of the carrots makes the cake moist and fluffy. If you want it more zingy, you can add the zests of an organic lemon in the batter and a dash of juice in the icing. Even if I prefer the flavour of vanilla. For 8-10 pieces.

Ingredients

- 200 g flour (1 & 1/4 cup)
- 150 g sugar (1 cup)
- 100 g butter, soft
- 2 eggs
- 2 tablespoons milk
- 1 teaspoon backing powder
- 2 carrots, finely grated
- 50 g pine nuts.

Frosting

- 100 g mascarpone (1/2 cup)
- 10 cl double cream (1/2 cup)
- 1 tablespoons sugar
1/2 teaspoon natural vanilla extract.

1 - Cream the butter and the sugar with a whisk. When the mixture whitens add the eggs and the milk. Mix the flour and the baking powder and add to the mixture. Incorporate the carrots and pine nuts (keep 1 tablespoon for the decoration) to the batter. Pour the batter in a smalle greased springform pan. Bake 25 minutes in preheated oven at 180°C (350°F). Remove from the oven and let it cool completely.

3 - Toast quickly the remaining pine nuts in a hot fat-free pan until they are slightly golden. Let it cool. Frosting: Whip the cream, the mascarpone, the sugar and the vanilla extract until you get a stiff and smooth frosting. Spread gentle over the cold cake. Sprinkle with pine nuts. Put in a fridge for about 20 min before serving.

J'ai découvert le carrot cake pour la première fois à Londres. Et pour être tout à fait honnête l'abondance de zestes d'orange, de cannelle, de gingembre et de noix de muscade ne m'avait pas franchement emballé. Puis j'ai découvert, grâce l'époustouflante Nigella Lawson, cette version italianisante, au bon goût de pignon et de vanille. L'humidité de la carotte rend le gâteau à la fois moelleux et léger. Si vous voulez une touche de fraîcheur, vous pouvez ajouter les zestes d'un citron bio dans la pâte et un trait de jus dans le glaçage. Même si je préfère la saveur de la vanille. Pour 8-10 parts.

- 100 g de beurre 
- 2 oeufs
- 2 cuil à soupe de lait
- 1 cuil à café de levure
- 2 carottes, finement râpées
- 50 g de pignons. 

Glaçage 

- 100 g de mascarpone 
- 10 cl de crème liquide 30% de MG
- 2 cuil à soupe de sucre
- 1/2 cuil à café d'extrait naturel de vanille.

1 - Battre le beurre avec le sucre à l'aide d'un fouet. Quand le mélange blanchit ajouter les oeufs et le lait. Mélanger la farine et la levure et l'ajouter au mélange. Incorporer les carottes et les pignons (en garder 1 cuil à soupe pour la décoration). Verser la pâte dans un petit moule à manqué, graissé. Faire cuire 25 min dans un four préchauffé à 180°c. Sortir du four et laisser complètement refroidir. 

3 - Toaster les pignons dans une poêle chaude à sec jusqu'à ce qu'ils dorent légèrement. Glaçage: Fouetter la crème liquide, le mascarpone, le sucre et l'extrait de vanille jusqu'à obtenir un glaçage ferme et lisse. Étaler le glaçage avec une cuillère ou une spatule sur le dessus du gâteau, bien refroidi. Parsemer de pignons et mettre au frais pour environ 20 min avant de servir.
