Sachertorte


Joyeux anniversaire... à moi-même! Pour ce jour si particulier je vous amène en Autriche avec ma recette personnelle du Sachertorte, un gâteau très chocolaté, inventé en 1832 à l'Hôtel Sacher de Vienne. Si ce gâteau a gagné en popularité depuis quelques années en France, j'ai toujours grandi avec ce succulent dessert. Non pas que j'ai des origines autrichiennes, mais ce gâteau était vendu dans la pâtisserie préférée de mes grands-parents, sur la côte varoise, bien loin de Vienne, dieu seul sait pourquoi... C'est un gâteau délicieux avec une génoise au cacao bien moelleuse, une riche ganache au chocolat et une couche de confiture d'abricots acidulée qui équilibre le tout. On le sert traditionnellement avec noix de chantilly à peine sucrée, pour alléger la saveur intense du chocolat. J'ai eu la chance d'y goûter à l'Hôtel Sacher il y a quelques années et je n'ai pas été déçu d'autant plus que je voue une véritable passion pour l'ambiance feutrée et raffinée des cafés viennois. Autant dire que j'étais au paradis. Pour 10-12 parts.

Ingrédients

- 150 g de sucre
- 100 g de farine
- 100 g de chocolat noir
- 75 g de beurre
- 4 oeufs
- 1 sachet de levure (11 g)
- 1 pincée de sel
- 180 g de confiture d'abricots 

Glaçage

- 200 g de chocolat noir
- 20 cl de crème liquide 30% de MG

1 - Faire fondre le chocolat (100 g) avec le beurre. Mettre les œufs et le sucre dans un saladier au bain-marie et fouetter jusqu'à obtenir un mélange jaune pâle et mousseux. Tamiser la farine avec le cacao, la levure et le sel. Enlever le saladier du bain-marie et ajouter la mixture farine/cacao et le sel en plusieurs fois avec une maryse. Incorporer le chocolat de la même manière. Graisser un moule à manqué et verser la pâte. Enfourner dans un four préchauffé à 180°c pour 20-25 min. Laisser refroidir. Réserver.

2 - Glaçage: Concasser grossièrement le chocolat (200 g) et le mettre dans un saladier. Faire chauffer la crème jusqu'à frémissement et la verser sur le chocolat. Laisser reposer environ 5 min et fouetter délicatement jusqu'à obtenir une ganache lisse et homogène. Mettre au frais jusqu'à ce qu'elle ait une texture crémeuse mais facile à étaler comme du nutella ou du beurre pommade. 

3 - Couper le gâteau complètement refroidi en deux dans l'épaisseur. Étaler la confiture sur une des moitiés du gâteau, couvrir avec la deuxième moitié. Napper le gâteau avec la ganache à l'aide d'une spatule. Mettre au frais au moins une heure pour que la ganache fige totalement. Servir avec une crème fouettée.

Happy birthday... to me! For this very special day, I'm taking you to Austria with my personal interpretation of Sachertorte, a very chocolatey cake, invented in 1832 at the Hotel Sacher in Vienna. If this cake has gained popularity for a few years in France, I have always grown up with this succulent dessert. Not that I have Austrian origins, but this cake was sold in my grandparents' favorite pastry shop, on the French Riviera, far from Vienna, God only knows why... It's a delicious cake with a moist  cocoa sponge cake, a rich chocolate ganache and a layer of tangy apricot jam that balances the whole cake. It is traditionally served with barely sweetened whipped cream, to lighten the intense flavor of the chocolate. I had the chance to taste it at the Hotel Sacher a few years ago and I was not disappointed, especially since I have a real passion for the cozy and refined atmosphere of Viennese cafés. Needless to say that I felt like heaven. Considering this recipe needs precise measurements I only added grams/cl quantities. For 10-12 portions.

Ingredients

- 150 g sugar
- 100 g  flour 
- 100 g dark chocolate 
- 75 g of butter 
- 4 eggs
- 1 tablespoon baking powder (11 g)
- 1 pinch salt
- 180 g apricot jam

Icing

- 200 g dark chocolate
- 20 cl double cream

1 - Melt the chocolate (100 g) with the butter. Put the eggs and sugar in a large bowl over a bain-marie (double boiler) and whisk until you get a pale yellow and frothy mixture. Sift the flour with the cocoa, baking powder and salt. Remove the bowl from the bain-marie and add the flour/cocoa mixture in several times with a rubber spatula. Combine the melted chocolate in the same way by folding the batter gently. Grease a springform cake tin and pour the batter. Bake in a preheated oven at 180°C (360°F)  for 20-25 minutes. Set aside to let it cool.

2 - Icing: Chop coarsely the chocolate (200 g) and put it in a large bowl. Heat the cream until it simmers and pour it over the chocolate. Leave to rest for about 5 minutes and whisk gently until you get a smooth and silky ganache. Chill until it has a creamy but spreadable texture like Nutella or very soft butter.

3 - Cut the cake - completely cooled - horizontally. Spread the apricot jam on one half of the cake and cover with the second half. Coat the cake with the ganache using a spatula. Refrigerate for at least an hour for the ganache to set completely. Serve with whipped cream.
