Cake amande-orange sanguine / Blood Orange & Almond Cake


Il y a quelques temps j'ai découvert, sur le superbe site de Linda Lomelino Call Me Cupcake, un gâteau nappé d'un délicat glaçage rose tendre à base d'orange sanguine. J'ai toujours voulu essayer cette recette de glaçage et j'ai ici réalisé un simple gâteau au yaourt comme base, même si j'ai remplacé une partie de la farine par de la poudre d'amande. C'est un cake très simple, moelleux et parfumé, parfait en fines tranches avec une tasse de thé bien chaude. Si vous ne trouvez pas d'orange sanguine, une petite orange classique conviendra très bien. Pour 10-12 parts. 

Ingrédients

- 160 g de farine
- 160 g de sucre
- 120 g de yaourt nature (1 pot)
- 50 g de poudre d'amande
- 50 g de beurre, fondu + plus pour le moule
- 50 g d'huile végétale
- 3 œufs
- 1 cuil à café d'eau de fleur d'oranger
- 1 sachet de levure chimique.

Glaçage 

- 80 g de sucre glace
- 1 orange sanguine, bio.

1 - Mélanger la farine avec le sucre, le yaourt, la poudre d'amande, le beurre, l'huile, les œufs, l'eau de fleur d'oranger et la levure. Zester l'orange sanguine et presser le jus. Incorporer les zestes et 2 cuil à soupe de jus d'oranger dans la pâte. Verser la pâte dans un moule à cake beurré. Enfourner 30-40 mn dans un four préchauffé à 190°C. 

2 - Glaçage: Mélanger le sucre glace avec 1 cuil à soupe de jus d'orange jusqu'à obtenir un glaçage lisse. Lorsque le gâteau sort du four badigeonner avec le reste du jus d'orange et laisser refroidir. Lorsque le gâteau est à température ambiante napper avec le glaçage au sucre glace. Laisser prendre le tout pendant environ 30 min avant de servir.

Some time ago I was looking at Linda Lomelino's delightful website Call Me Cupcake and I discovered a recipe of a loaf cake topped with a delicate soft pink glaze made from blood orange. I always wanted to try this glaze recipe. I made a super simple French-style yogurt cake as a base, even though I replaced some of the flour with almond powder. It's a very simple, soft and fragrant cake, perfect cut into thin slices with a steaming hot cup of tea. If you can't find a blood orange, a small regular orange will do just fine. For 10-12 parts.

Ingredients

- 160 g flour (1 & 1/4 cup)
- 160 g sugar (3/4 cup)
- 120 g plain yogurt (1/2 cup)
- 50 g almond powder (1/3 cup)
- 50 g butter, melted + to grease the pan (2 oz)
- 50 g vegetable oil (1/5 cup)
- 3 eggs
- 1 teaspoon orange blossom water
- 1 packet baking powder (1 tablespoon)

Orange glaze

- 80 g icing sugar (2/3 cup)
- 1 blood orange, organic.

1 - Mix the flour with the sugar, the yogurt, the almond powder, the butter, the oil, the orange blossom water and the baking powder. Zest the blood orange and squeeze out the juice. Add the zest and 2 tablespoons of orange juice in the batter. Pour the batter into a greased loaf tin. Bake for 30-40 minutes in a preheated oven  at 190°C (375°F).

2 - Orange glaze: Mix the icing sugar with 1 tablespoon of orange juice until you get a smooth icing. When the cake comes out of the oven, brush with the rest of the orange juice and let it cool. Once the cake is at room temperature, cover with the orange glaze. Leave to set for about 30 minutes before serving.

  12. This is the perfect time of year for posting this cake. Blood oranges just came into the market this week, and I’ll be picking some up tomorrow morning. Would love to make this cake it might add that it would be perfect with a cup of cocoa, as well.
