Happy Candlemas! I know this celebration - 40 days after Christmas - is not very popular outside of France, but I admit we have a good reason: crepes! This golden circular treat is supposed to remind us that the sun is slowly coming after a dark winter... This year my sun is a bit brownish because I chose a buckwheat flour recipe, that I tried in a lovely restaurant in Honfleur, Normandy. The andouillettes are a French delicacy but I'm aware it's quite hard to find outside. If you want to make this recipe for the brie-mustard cream, you can replace the andouillettes with other cold cut such as a good quality ham. About my batter recipe, beware, because it's for 10 crepes (I could not make a smaller quantity with one egg). But I just use 4 of them with my garnish. Needless to say you can serve the rest of the crepes with another filling such as ham, pancetta, fried eggs and grated cheese... For 4 people.
Ingredients
- 4 Troyes andouillettes (500 g - 18 ozs)
- 150 g brie (5 ozs)
- 20 cl double cream (1 cup)
- 1 teaspoon Dijon mustard
- 1 teaspoon grated parmesan
- 10 g butter
- Salt, ground peppercorn.
Batter
- 330 g buckwheat flour (3 cups)
- 1 egg
- 80 cl water (4 cups)
- 1 pinch of salt
- Oil or butter (for the pan).
1 - Batter: Put the buckwheat flour and the salt in a large bowl. In the center whisk the egg gently and pour slowly the water. Stir until you get a smooth and even batter. Put in the fridge for 1 hour. Grease a large pan on medium heat and pour a ladleful of batter. Once cooked the crepe will peel off naturally. Flip and cook the other side about 30 seconds. Put the crepes (normally 10) in a warm dish.
2 - Cut the andouillettes into thick slices. Melt the butter in a pan over medium heat and cook the andouillettes slices on each sides until slightly golden. Set aside in a warm dish. Pour the cream in the pan, then add the brie - cubed - the parmesan, the mustard, the salt and the ground peppercorn. Allow to melt gently over low heat until you get a smooth and thick cream.
3 - Heat 4 crepes, garnish with the andouillettes slices - warm - the brie-mustard cream, fold and serve immediately with a baby greens salad and, of course, a glass of cider.

Joyeuse Chandeleur à tous! Cette année j'ai opté pour du salé avec une recette au sarrasin, que j'ai eu la chance de goûter dans un charmant restaurant de Honfleur. Concernant ma recette de pâte, attention, elle est pour 10 galettes car il est impossible d'en faire moins avec un œuf, néanmoins je ne garnis que 4 galettes, mais évidemment rien ne vous empêche de faire une deuxième tournée avec une autre garniture... Pour 4 personnes.
Ingrédients
- 4 andouillettes de Troyes (500 g)
- 150 g de brie
- 20 cl de crème liquide 30% de MG
- 1 cuil à café de moutarde de Dijon
- 1 cuil à café de parmesan râpé
- 10 g de beurre
- Sel, poivre
Pâte
- 330 g de farine de sarrasin
- 1 œuf
- 80 cl d'eau
- 1 pincée de sel
- Huile ou beurre (pour la poêle).
1 - Pâte: Mettre la farine et le sel dans un saladier et fouetter l’œuf au centre délicatement en ajoutant l'eau en filet jusqu'à obtenir une pâte lisse et homogène. Mettre au frais 1 h. Graisser une grande poêle à feu moyen et verser une louche de pâte pour chaque galette. Une fois cuite d'un côté elle va naturellement se décoller. La retourner et continuer la cuisson 1 min environ. Mettre les galettes obtenues (une dizaine normalement) au chaud.
2 - Couper les andouillettes en rondelles épaisses. Dans une poêle faire fondre le beurre à feu moyen et faire colorer les morceaux d'andouillettes sur les deux côtés. Réserver au chaud. Déglacer la poêle avec la crème puis ajouter le brie coupé en dés, le parmesan, la moutarde, le sel et le poivre. Laisser fondre le tout à feu doux jusqu'à obtention d'une crème bien onctueuse.
3 - Réchauffer 4 crêpes, puis les garnir de rondelles d'andouilles chaudes, napper de crème au brie, plier et servir immédiatement avec une salade de jeunes pousses et, bien-sûr, un verre de cidre.
