Quiche courge-gorgonzola-noix / Squash-Gorgonzola & Walnut Quiche


Voici une petite recette de quiche toute simple que j'ai servi pour Halloween et qui a eu beaucoup de succès. C'est une recette toute simple mais très savoureuse qui met à l'honneur divers produits de saison et notamment le courge dont il faut profiter pleinement en automne. Je n'ai pas spécifié quel type de courge j'utilisais pour cette recette pour vous laisser le choix selon vos préférences. De mon côté j'ai acheté de la courge musquée mais du butternut conviendra très bien tout comme du potimarron qui donnera toutefois une texture légèrement plus farineuse à la quiche. Si vous ne trouvez pas de gorgonzola, du roquefort fonctionnera très bien. Pour 4-8 personnes. 

Ingrédients

- 1 rouleau de pâte feuilletée
- 500 g de courge
- 1 poireau
- 100 g de gorgonzola
- 30 g de cerneaux de noix
- 1 gousse d'ail, émincée
- 6 brins de persil, ciselés
- 2 œufs
- 20 cl de crème liquide
- 2 cuil à soupe d'huile d'olive
- Sel, poivre.

1 - Couper la courge en grosses tranches et la mettre entre deux feuilles d'aluminium avec l'ail, le sel, le poivre et 1 cuil à soupe d'huile d'olive. Bien sceller l'aluminium et enfourner 20 min dans un four préchauffé à 200°C. Après cuisson laisser complètement refroidir et retirer la peau de la courge. Couper la chair en gros cubes. Réserver. Retirer la partie verte du poireau et émincer la partie blanche. Dans une poêle faire chauffer l'huile restante à feu moyen et faire revenir le poireau environ 5 min jusqu'à ce qu'il commence à légèrement caraméliser. Réserver.

2 - Mixer la moitié de la chair de courge avec les oeufs, la crème, le persil, le sel et le poivre. Dérouler la pâte feuilletée dans un moule à tarte (23-24 cm de ⌀). Verser la crème de courge. Déposer par dessus les cubes de courge restants, les cerneaux de noix et le gorgonzola en cubes. Enfourner 25-30 min dans un four préchauffé à 190°C. Servir chaude, tiède ou froid avec une salade verte.

Here is a simple quiche recipe which I served for Halloween and people loved it. It is a very tasty and easy-to-make recipe that highlights various seasonal products, especially squash, made to be fully enjoyed during autumn. I did not specify what type of squash is used in this recipe in order to give you the choice of your preferences. For my part, I bought musque squash - probably difficult to find outside of France - but butternut will also work well, as well as red kuri squash which however gives a slightly more starchy texture to the quiche. In France we have ready rolled puff pastry circles about 30 cm / 12" wide made for a pie tin. I cannot tell if my non-French followers have the same in their country, but it is very practical. You can however crop a circle out a square-shaped puff pastry sheet or simply make a square-shaped quiche. If you cannot find gorgonzola any type of blue cheese will do. For 4-8 slices.

Ingredients

- 1 ready rolled puff pastry circle
- 500 g squash (18 oz)
- 1 leek
- 100 g gorgonzola (4 oz)
- 30 g walnut kernels (1 oz)
- 1 garlic clove, minced
- 6 sprigs of parsley, chopped
- 2 eggs
- 20 cl double cream (1 cup)
- 2 tablespoons olive oil
- Salt, ground peppercorn.

1 - Cut the squash into large slices and put it between two sheets of tin foil with the garlic, salt, peppercorn and 1 tablespoon of olive oil. Seal the edges of the tin foil firmly and bake for 20 min in a preheated oven at 200°C (390°F). After cooking, let it cool completely and remove the skin from the squash. Cut the flesh into large cubes. Set aside. Remove the green half of the leek and chop finely the white half. In a pan, heat the remaining oil over medium heat and cook the leek for about 5 min until it begins to caramelize slightly. Set aside.

2 - Mix half of the squash flesh with the eggs, cream, parsley, salt and peppercorn in a food processor. Roll out and a fine the puff pastry sheet in a pie tin (23-24 cm / 9" ⌀). Pour in the squash cream. Place the remaining squash cubes, walnut kernels and cubed gorgonzola on top. Bake for 25-30 minutes in an preheated oven at 190°C (375°F). Serve hot, warm or cold with a green salad.

Tatin de boudin noir-patate douce / Black Pudding & Sweet Potato Tatin


Alors que nous fêterons Noël dans à peine de 10 jours je commence à penser à mon menu pour le 24 et le 25 décembre. En septembre j'ai eu la chance de goûter à une savoureuse tatin pomme-boudin noir dans un excellent restaurant Le Cabaretier, spécialisé dans la cuisine lyonnaise. J'avais envie de faire cette recette avec une petite variation avec de la patate douce et de l'oignon caramélisé. Je la servirai comme entrée donc je conseille cette tatin pour 6 personnes. Toutefois si vous la préparez en plat principal, elle sera idéale pour 4 personnes. 

Ingrédients

- 1 rouleau de pâte feuilletée
- 3 boudins noirs (375 g)
- 1 grosse patate douce
- 2 oignons
- 20 g de beurre
- 1 cuil à soupe d'huile d'olive
- 4 brins de persil, ciselés
- 1 pincée de quatre-épices
- Sel, poivre.  

1 - Couper les oignons en fines lamelles. Dans une poêle faire chauffer l'huile d'olive à feu moyen et faire colorer les oignons. Saler, poivrer et ajouter le quatre-épices. Poursuivre la cuisson en remuant à feu doux jusqu'à ce que les oignons sont caramélisés. Peler et couper la patate douce en fines rondelles. Retirer la peau des boudins noirs délicatement puis les couper en rondelles épaisses.

2 - Dans un moule à manquer arranger les rondelles de patates douces puis saler, poivrer et parsemer des persil. Ajouter des petits dés de beurre. Couvrir avec les oignons, puis les rondelles de boudins noirs. Couvrir avec la pâte feuilletée en repliant bien les bords à l'intérieur du moule. Enfourner dans un four préchauffé à 180°C pour 35 min. Laisser tiédir avant de démouler. Servir avec une salade de jeunes pousses.

As we celebrate Christmas in just 10 days I'm starting to think about my menu for December 24th and 25th. In September I was lucky to taste a luscious apple & black pudding tatin tart in the excellent restaurant Le Cabaretier, specialized in Lyon regional cuisine. I wanted to make this recipe with a little variation hence the sweet potato and the caramelized onion. Please may note that I used of course traditional French blood sausages which are similar to British black pudding, but do not contain cereals such as oat or barley. There are several types of blood sausages throughout Europe such as bloedworst, morcilla or Blutwurst. The French "boudin noir" is known to contain a generous amount of onion, so the taste might vary slighly depending when you are from. In France we have ready-rolled puff pastry sheet cut into circles (about 26-28 cm/10-11" in diameter) specially made for pie tin. If you find only a square-shape pastry sheet feel free to simply trim the edge to make it into a circle. I will serve it as a starter so I recommend this tart for 6 people. However, if you prepare it as a main course, it will be ideal for 4 people.

Ingredients

- 1 ready-rolled puff pastry sheet
- 3 blood sausages (375 g/13 oz)
- 1 large sweet potato
- 2 onions
- 20 g of butter 
- 1 tablespoon olive oil
- 4 sprigs of parsley, chopped
- 1 pinch French allspice mix
- Salt pepper.

1 - Cut the onions into thin slices. In a pan, heat the olive oil over medium heat and brown the onions. Season with salt and pepper and add the allspice. Continue cooking, stirring occasionally, over low heat, until the onions are caramelized. Peel and cut the sweet potato into thin slices. Gently remove the skin from the black sausages then cut them into thick slices.

2 - Arrange the sweet potato slices in a springform pan, then season with salt and pepper and sprinkle with parsley. Add small cubes of butter. Cover with the onions, then the black pudding slices. Cover with the puff pastry, folding the edges well inside the mold. Bake in a preheated oven at 180 ° C for 35 min. Let cool before unmolding. Serve with baby leaf salad.
