Macarons chocolat-framboise d'Halloween / Halloween Chocolat & Raspberry Macarons


Depuis mon retour de vacances je n'ai pas arrêté un seconde et j'ai eu très peu de temps à me consacrer à mon blog, d'où l'absence de publications depuis quelques temps. Mais je ne vous oublie pas pour Halloween avec une recette de macarons très gourmandes. Pour mon travail j'ai réalisé des centaines de coques de macarons dernièrement et je me suis pris au jeu de travailler sur les couleurs et les motifs. Ici je vous offre une version vert kaki et orange citrouille, spécial Halloween. On ne trouve normalement pas de colorant vert kaki dans le commerce donc essayez de jouer avec les couleurs entre le vert et le orange jusqu'à obtenir une tonalité qui vous plait. Utilisez de préférence des colorants en poudre. Concernant la pâte des macarons elle ne nécessite normalement pas de croûtage après avoir été pochée grâce à la stabilité de la meringue à l'italienne réalisée à base de sirop de sucre. Il faudra par contre un petit thermomètre de cuisine car il est nécessaire d'avoir un sirop entre 112-117°C environ pour obtenir une meringue bien ferme et lisse. Il est essentiel de laisser reposer les macarons au frais plusieurs heures après avoir été garnis car trop frais les macarons ont tendance à être durs et caoutchouteux. Un blanc d'œuf pèse environ 30-35 g, soit 3 blancs d'œuf pour la recette entière.  Pour 25 macarons.

Ingrédients 

- 150 g de poudre d'amande
- 150 g de sucre glace
- 50 g de blanc d'œuf 
- Colorant orange et vert.

Meringue 

- 150 g de sucre semoule
- 50 g de blanc d'œuf 
- 50 g d'eau.

Ganache 

- 20 cl de crème liquide 30% de MG
- 200 g de chocolat noir
- 150 g de confiture de framboises

1 - Mixer la poudre d'amande et le sucre glace pour écraser d'éventuels grumeaux. Séparer le mélange poudre d'amande et sucre glace dans deux bols en quantités égales (2 x 150 g). Ajouter dans chaque bol 25 g de blanc d'œuf. Dans un bol mettre uniquement du colorant orange et dans l'autre bol mettre du colorant vert et un peu de colorant orange pour créer un vert kaki. Mélanger chaque préparation à la cuillère jusqu'à obtenir une pâte dense et compacte. Réserver. 

2 - Meringue: Faire fondre le sucre semoule dans l'eau à feu moyen-vif jusqu'à obtenir un sirop dit "petit-boulé" (115°C environ). Dans le même temps commencer à fouetter les blancs d'œuf jusqu'à ce qu'ils deviennent mousseux et verser le sirop en filet. Fouetter environ 5 min jusqu'à obtenir une meringue bien ferme mais souple, formant un "bec d'oiseau". 

3 - Diviser la meringue en deux quantités égales dans les bols de préparations orange et vert kaki. Bien mélanger chaque préparation avec une maryse souple en enrobant bien la pâte à l'amande avec la meringue jusqu'à obtenir une pâte homogène et coulante, formant un "ruban" comme une pâte à gâteau classique. Mettre chaque préparation dans une petite poche à douille et mettre ces deux poches à douille dans une poche plus grosse avec une douille ronde. 

4 - Sur plaque de cuisson doublée avec du papier sulfurisé pocher environ 50 coques de macarons 4 cm de diamètre. Laisser croûter 15-20 min avant d'enfourner dans un four préchauffé à 150°C pour 16-18 min. Ouvrir le four à mi-cuisson quelques secondes pour libérer la vapeur des macarons et poursuivre la cuisson. Après cuisson laisser les coques de macarons refroidir complètement et les décoller et de les réunir par paire. 

5 - Ganache: Faire chauffer la crème à feu moyen jusqu'à frémissement et la verser sur le chocolat concassé. Laisser fondre quelques minutes puis mélanger délicatement au fouet. Mettre au froid jusqu'à ce que la ganache commence à figer mais reste assez souple pour être étalée. Mettre dans une poche à douille et pocher la ganache sur la moitié des coques de macarons en faisant un cercle de ganache en laissant un peu de place au milieu pour déposer la confiture de framboises. Déposer par dessus les autres coques et mettre au frais au moins 3h pour que les macarons soient bien moelleux à cœur.

Since my return from holiday I've been working non-stop and have had very little time to devote to my blog, which is why I haven't posted anything for a while. But I'm not forgetting you for Halloween with a recipe for some very tasty macarons. I've been making hundreds of macaroon shells for work lately, and I've got really into working with colours and patterns. Here I offer you a kaki green and pumpkin orange version, perfect for Halloween. You can't normally find kaki green food colorings easily in shops, so try to play with the colours between green and orange until you get a tone you like. Preferably use powdered food coloring. This macarons batter does not normally require to dry after pipping, thanks to the firmness of the Italian-style meringue made from sugar syrup. However, you will need a small kitchen thermometer, as the syrup needs to be at around 112-117°C (233-242°F) to get a firm, smooth meringue. It is essential to leave the macaroons to rest in the fridge for several hours after they have been garnished, as macaroons tend to be hard and rubbery when too fresh. One egg white weighs around 30-35g, so you will need 3 egg whites for the entire recipe. Because this recipe requires a lot of precision I will only use grams measuring. For 25 macarons.

Ingredients 

- 150 g almond powder
- 150 g icing sugar
- 50 g egg white 
- Orange and green food colorings.

Meringue 

- 150 g granulated sugar
- 50 g egg white 
- 50 g water.

Ganache 

- 20 cl double cream
- 200 g dark chocolate
- 150 g raspberry jam.

1 - Blend the almond powder and icing sugar to crush any lumps. Separate the almond powder and icing sugar mixture into two bowls in equal quantities (2 x 150 g). Add 25 g of egg white to each bowl. In one bowl add only orange coloring and in the other bowl add green coloring and a little orange colouring to create a kaki green. Mix each preparation with a spoon until you obtain a dense, compact paste. Set aside. 

2 - Meringue: Melt the caster sugar in the water over a medium-high heat until you get a "petit-boulé" syrup (approx. 115°C/240°F). At the same time, whisk the egg whites until frothy and pour in the syrup slowly. Whisk for about 5 minutes until you have a firm but soft meringue that forms the typical hooked "bird's beak" shape. 

3 - Divide the meringue equally between the bowls of orange and kaki green preparations. Mix each preparation with a rubber spatula, folding the almond paste with the meringue until you get a smooth, slightly runny batter, forming a "ribbon" like a classic cake batter. Place each preparation in a small piping bag and place both piping bags in a larger bag with a round nozzle. 

4 - On a baking tray lined with baking parchment, pipe around 50 macaron shells 4 cm in diameter. Leave to dry for 15-20 min before putting in a pre-heated oven at 150°C (300°F) for 16-18 min. Open the oven halfway through cooking for a few seconds to release the steam from the macaroons and continue cooking. After baking, leave the macaroons to cool completely, then peel them off and put them together in pairs. 

5 - Ganache: Heat the cream over a medium heat until simmering and pour over the chopped dark chocolate. Leave to melt for a few minutes, then whisk gently to combine. Chill until the ganache begins to set but is still soft enough to be spreadable. Using a piping bag, pipe the ganache onto half the macaron shells, making a circle of ganache and leaving some space in the middle for the raspberry jam. Place the remaining shells on top, press very gently to stick and chill for at least 3 hours to be sure the macaroons starts to soften in the centre.

Macarons caramel au beurre salé / Salted Butter Caramel Macarons


Etant donné que je déteste gâcher lorsque je cuisine, quand je réalise des préparations à base de jaune d'œuf (mayonnaise, crème pâtissière, etc) je stocke les blancs d'œuf dans le congélateur où ils peuvent se conserver plusieurs mois sans problème. De quoi faire des macarons ou des financiers quand l'envie m'en prend. J'adore décorer mes coques avec des petits éclats d'amande, de la noix de coco râpée ou des pistaches concassées. Ici j'ai voulu rehausser le côté salé du caramel en saupoudrant mes coques avec du sel noir d'Hawaï que j'ai reçu comme cadeau à Noël. Fraîchement préparés les macarons sont durs et très collants, pour qu'ils soient friables et moelleux préparez les au moins un jour à l'avance. Pour 40 coques soit 20 macarons.

Ingrédients

- 120 g de poudre d'amande
- 120 g de sucre glace
- 120 g de sucre semoule
- 3 blancs d'oeuf (90 g)
- Sel noir d'Hawaï / Fleur de sel.

Caramel au beurre salé

- 200 g sucre semoule
- 150 g beurre salé
- 10 cl de crème liquide 30% MG 
- 1/2 gousse de vanille
- 2 cuil à soupe d'eau. 

1 - Caramel au beurre salé: Faire chauffer la crème avec la gousse de vanille fendue et grattée, jusqu'à frémissement. Dans une casserole faire fondre le sucre avec l'eau à feu moyen-vif jusqu'à obtenir un caramel ambré. Verser la crème chaude en fouettant (attention aux éclaboussures et à la vapeur) jusqu'à ce qu'elle soit complètement incorporée. Poursuivre la cuisson à feu doux en incorporant le beurre en plusieurs fois, jusqu'à obtenir un caramel bien lisse. Laisser refroidir.

2 - Battre les blancs en neige en ajoutant le sucre semoule progressivement jusqu'à avoir obtenu des blancs en neige fermes, lisses et satinés. Tamiser la poudre d'amande et le sucre glace pour éliminer tout grumeaux. Incorporer 1/3 de la meringue et mélanger vigoureusement pour humidifier le mélange sec à l'amande. Ajouter le reste de la meringue avec une maryse en faisant de larges mouvements amples pour incorporer délicatement les deux mélanges. 

3 - Doubler une plaque de cuisson avec du papier sulfurisé et dresser des macarons de 4 cm de diamètre à la poche à douille ronde. Saupoudrer chaque coque d'une pincée de fleur de sel/sel noir. Taper légèrement la plaque sur le plan de travail pour éliminer les bulles d'air dans les macarons et laisser "macaronner" (sécher) environ 20 min à l'air libre. La durée varie selon si l'air est sec ou très humide, mais les coques ne doivent pas être collante au toucher. Enfourner les macarons 15 min dans un four préchauffé à 150°C. Laisser complètement refroidir.

4 - Détendre le caramel au beurre salé pour qu'il soit bien souple. Mettre dans une poche à douille et déposer une noix de caramel sur la moitié des coques et refermer avec les coques restantes. Réserver au frais. Les macarons sont meilleurs idéalement après au moins 12 h au frigo voire plus. Les sortir 30 min avant dégustation pour que le caramel s'assouplisse un peu.

Since I hate wasting food, when I make preparations that require egg yolk (mayonnaise, pastry cream, etc.) I store the remaining egg whites in the freezer where they can be kept for several months easily. A perfect way to make macarons or financiers whenever I want. I love to decorate my shells with some almond flakes, grated coconut or crushed pistachios. Here I wanted to enhance the saltiness of the caramel by sprinkling some Black Hawaiian Sea Salt that I got as a Christmas present. Freshly baked macarons are hard and very sticky. To have them crispy on the outside and chewy inside, they need to be stored at least one day in the fridge. Since macarons require extreme precision I just give you the gram measurement and not the cup/oz system that is too imprecise. For 40 shells or 20 macarons.

Ingredients

- 120 g almond powder
- 120 g icing sugar
- 120 g caster sugar
- 3 egg whites (90 g)
- Black Hawaiian Sea Salt / sea salt flakes.

Salted butter caramel

- 200 g caster sugar
- 150 g salted butter
- 10 cl double cream
- 1/2 vanilla pod
- 2 tablespoons water.

1 - Salted butter caramel: Heat the cream with the split and scraped vanilla pod, until simmering. In a saucepan, melt the sugar with the water over medium-high heat until you get an amber caramel. Pour in the hot cream, whisking (watch out for splashing and steaming) until fully incorporated. Continue cooking over low heat, incorporating the butter in several batches, until you get a very smooth caramel. Let cool.

2 - Whisk the egg whites while adding the caster sugar gradually until you get a stiff, smooth and satiny meringue. Sift the almond powder and icing sugar to remove any lumps. Add 1/3 of the meringue in the almond mix and combine vigorously. Add the rest of the meringue with a rubber spatula, making large folding movements to gently incorporate the two mixtures.

3 - Line a baking tray with parchment paper and pipe 4 cm diameter macaroons using a round piping bag. Sprinkle each shell with a pinch of sea salt flakes / black sea salt. Tap the baking sheet lightly on the work surface to eliminate air bubbles in the macaroons and leave to "macaronner" (dry) for around 20 mins in the open air. The time varies depending if the atmopshere is dry or very damp but the shells should not be sticky anymore when you touch them. Put the macarons for 15 mins in a preheated oven at 150°C (300°F). Let cool completely.

4 - Fold the salted butter caramel with a rubber spatula outside of the fridge to make it spreadable. Put in a pastry bag and pop a knob of caramel on half of the shells and cover with the remaining shells. Store in the fridge. The macaroons are best after at least 12 hours in the fridge or even more. Take them out 30 minutes before tasting to let the caramel filling soften slightly.

Tonka Bean & Pear Macarons / Macarons poire & fève tonka


Even if I've already tried once to prepare macarons it's the first time that I publish a recipe about this delicate pastry on this blog. Even if they require some precision macarons are not necessarily hard to make. I decided to follow different recipe for the macaron shells and I used an Italian meringue for the recipe, that is slighly more complicated to realise that the basic French meringue, but much more stable. If, like me, you don't have a kitchen thermometer to mesure the exact temperature of your syrup for the meringue, you can test the texture of your syrup that is supposed to be thick but still liquid as I explain below. The macarons have to set in the frige at least 6-8 hours before being eaten. When they are too fresh they are stiff and chewy, while we want them crumbly and moist inside. Tonka beans are the large wrinkled seeds from a tree native to tropical America. Its taste halfway between vanilla and almond. It's not always easy to find, but you can perfectly infuse a small piece of vanilla bean into the cream. I don't give precision for the quantity of food coloring because it highly depends of the intensity of the one you use, even if color gel are the best for macarons because it will not change de texture of the batter unlike liquid food coloring. This time it didn't convert the measures in ounces or cups because it was not precise enough for this recipe. For 16 macarons.

Ingredients

- 80 g almond powder
- 80 g icing sugar
- 80 g granulated sugar
- 2 egg whites
- Yellow food coloring.

Icing 

- 1 small pear
- 100 g mascarpone (1/2 cup)
- 10 cl de double cream (1/2 cup)
- 1 teaspoon sugar
- Tonka bean.

1 - Icing: Grate finely the tonka bean to get about 2-3 pinches. Poor the cream and the tonka bean powder into a saucepan and allow to simmer over low heat for 5 min. Let it cool and put in a fridge. Peel and core the pear, and cut it into small dices. Put them into a sauce pan with 1 teaspoon of water and let it cook gently on medium heat. Stir eventually. The pear has to be tender, moist but without extra juice. Put in a fridge.

2 - Whisk the egg whites into soft peaks. Melt the granulated sugar with 1 tablespoon of water in a saucepan over medium heat until the syrup reaches 120°C (250°F). At that temperature the syrup starts to have large bubbles but still keeps liquid. Poor some drops of syrup in a glass of cold water, the drops has to be soft and easily squeezed between the fingers. Poor the syrup in the egg whites into a thin stream and continue to whisk to get a smooth, stiff and satiny meringue. Add the yellow food coloring.

3 - Sieve the almond powder and the icing sugar to get a lump-free mix. Add 1/3 of the meringue and combined vigorously to moisten the dry mix. Then incorporate the rest of the meringue gently with a plastic scrapper to avoid crushing the lightness of the meringue. Line a baking tray with baking paper and pipe the macarons (4 cm diameter) with a round nozzle piping bag. Give a gentle tap on your working surface with the baking tray to get rid of the the air bubbles of the macarons. Allow the macarons to dry in the open air about 20 min before putting the cooking tray in a preheated oven at 150°C (300°C) for 15 min. Allow to cool completely.

4 - Put the double cream - very cold - with the mascarpone and the sugar in a large bowl and whisk until you get a smooth and firm icing. Put it in a piping bag and decorate half of the macaron shells with a swirl. In the middle add a little bit of pear dices and cover with the rest of the shells. Put in the fridge for at least 6 h, overnight is better.

Même si j'ai déjà essayé de réaliser des macarons c'est la première fois que je publie une recette sur mon blog. Bien qu'ils requièrent un peu de précision, les macarons sont loin d'être infaisables comme on le croit parfois. J'ai décidé de suivre plusieurs recette pour faire les coques en utilisant notamment une meringue italienne, un peu plus complexe à réaliser que la classique meringue française, mais aussi bien plus stable. Si, comme moi, vous n'avez pas de thermomètre de cuisine pour mesurer la température exacte du sirop pour la meringue vous pouvez simplement vérifier la texture qui doit être épaisse mais toujours liquide, comme je l'explique dans la recette. Il faut que les macarons restent au frais au moins 6-8 h avant de les consommer. Quand ils sont trop frais ils sont durs et collants, alors qu'ils deviennent merveilleusement friables et moelleux par la suite. La fêve tonka est la graine fripée d'un arbre natif d'Amérique tropical. Son goût à mis chemin entre la vanille et l'amande est très intéressant. Etant donné qu'il n'est pas évident à trouver partout, vous pouvez parfaitement la remplacer par de la vanille que vous laisserez infuser dans la crème. Je ne donne pas d'indication sur la quantité de colorant alimentaire pour cette recette par cela dépend grandement de l'intensité du produit que vous utiliserez, même si les gels colorants sont mieux car ils ne changent pas la texture de la pâte contrairement aux colorants liquides. Pour 16 macarons.

Ingrédients

- 80 g de poudre d'amande
- 80 g de sucre glace
- 80 g de sucre semoule
- 2 blancs d'oeuf
- Colorant jaune.

Garniture

- 1 petite poire
- 100 g de mascarpone
- 10 cl de crème liquide 30% MG
- 1 cuil à café de sucre
- Fève tonka.

1 - Garniture: Râper finement la fève tonka pour obtenir environ 2-3 pincées. Mettre la crème et la poudre de fève tonka dans une casserole et laisser frémir à feu doux 5 min. Laisser refroidir et mettre au frais. Peler et vider la poire, puis la couper en petits dés. Mettre le tout dans une casserole à feu moyen avec 1 cuil à café d'eau et laisser confire en mélangeant de temps en temps. La poire doit être tendre, avoir bien réduit et ne plus avoir de jus. Réserver au frais.

2 - Battre les blancs en neige pas trop fermes. Faire fondre le sucre semoule avec 1 cuil à soupe d'eau dans une casserole à feu moyen jusqu'à ce qu'il atteigne 120°C. Le sirop doit produire de grosses bulles mais rester liquide. Verser quelques gouttes dans un verre d'eau froide: le sirop doit former des billes molles qui s'écrasent facilement avec les doigts. Verser le sirop en filet dans les blancs d'oeufs en fouettant. Les blancs doivent devenir fermes, lisses et satinés. Incorporer ensuite le colorant jaune.

3 - Tamiser la poudre d'amande et le sucre glace pour éliminer tous grumeaux. Incorporer 1/3 de la meringue et mélanger vigoureusement pour humidifier le mélange sec à l'amande. Ajouter le reste de la meringue avec une maryse en faisant de larges mouvements amples pour incorporer délicatement les deux mélanges sans faire retomber la meringue. Doubler une plaque de cuisson avec du papier sulfurisé et dresser des macarons de 4-5 cm de diamètre à la poche à douille ronde. Taper légèrement la plaque sur le plan de travail pour éliminer les bulles d'air dans les macarons et laisser "macaronner" (sécher) environ 20 min à l'air libre avant d'enfourner les macarons 15 min dans un four préchauffé à 150°C. Laisser complètement refroidir.

4 - Mettre la crème bien froide avec le mascarpone et le sucre dans un grand bol et fouetter le tout jusqu'à obtenir un glaçage ferme et lisse. Le mettre dans une poche à douille et garnir la moitié des coques de macarons en laissant un trou au milieu pour garnir avec la compotée de poire. Refermer le tout avec les coques restantes. Mettre au frais au moins 6 h avant de déguster. Idéalement toute une nuit.
