This year for Christmas I wanted a simple but comforting dish. Normally I tend to serve a whole piece of meat for such festive dinner: whole poultry, roast, ham, etc. Here I share with you a recipe made of chicken legs contised with chorizo. Contising a meat means making a cut between the skin and the flesh of a piece of meat or poultry to insert an aromatic garnish: flavored butter, cured meat, cheese, mushroom puree, truffle slices, etc. Here we are choosing chorizo, which will give an incredible flavor to the chicken and produce a very tasty cooking juice while its own fat will caramelize the onions and the garlic. I serve this dish with parsnip puree, a vegetable that I really like to serve for Christmas. For 6 servings.

Ingredients

- 6 chicken legs
- 100 g of chorizo (4 oz)
- 1 large onion, chopped
- 6 sprigs of thyme
- 6 sprigs of parsley
- 6 garlic cloves
- 50 g butter
- 20 cl cream (1 cup)
- Salt, ground peppercorn.

1 - Cut the chorizo into approximately 24 slices. Using your finger, gently peel off the skin of the chicken thigh and slide in 4 slices of chorizo for each leg. In a large baking dish, put the onion, the garlic cloves and the thyme. Place the chicken thighs on top, flesh side down. Season with salt and peppercorn and bake for 30 minutes at 180°C (355°F).

2 - After 30 minutes turn the legs over and add the butter and chopped parsley on the flesh. Continue cooking for 20 min. After cooking, set aside the chicken legs. Collect the garnish with the onions and the cooking juices. Squeeze the garlic cloves to extract the pulp. Discard the skin and the thyme sprigs. Put the garlic pulp with the onions in a saucepan. Add the cream and simmer for 10 minutes over low heat. Blend everything with a hand blender to get a smooth and creamy sauce. Serve the chicken immediately with parsnip puree and the chorizo creamy sauce.

- 1 poivron rouge
- 4 gousses d'ail, émincées
- 4 brins de persil, ciselés
- 30 cl de crème liquide 30% de MG
- 1 cuil à soupe d'huile d'olive
- 1 cuil à café de paprika
- Parmesan, pour servir
- Sel, poivre.

Every summer I got used to buy beautiful plump red bell peppers that I roast, peel and store in the freezer, to make various recipes during winter such as spreads, bruschetta, etc. So I can prepare this recipe in winter too. Avoid to scorch the peppers too long: the skin is supposed to puff with slight brown marks, not to turn into a piece of charcoal. If the skin is burnt too deeply it's going to be harder to peel off from the flesh. The smoky taste of chorizo goes well with the sweetness of peppers and cream. For 4 people.

Ingredients

- 400 g spaghetti (14 oz)
- 150 g chorizo (5 oz)
- 1 red bell pepper
- 4 garlic cloves, minced
- 4 sprigs of parsley, chopped
- 30 cl double cream (1 & 1/2 cup)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- Grated parmesan, to serve
- Salt, ground peppercorn.

1 - Put the bell pepper in a preheated oven on broil mode at 250°C (480°F) and flip it to burn its skin on all sides. Put in a ziploc bag or a bowl covered with cling film until the bell pepper is at room temperature. Remove the skin, seeds and stem. Dice the flesh of the pepper.

2 - Cut the chorizo into small dice. Heat the olive oil over medium heat in a pan and brown the chorizo for 30 seconds then add the bell pepper and garlic, stir briefly. Deglaze with cream and season with paprika, parsley, salt and pepper and cook for 1-2 minutes over low heat. Set aside. Cook the spaghetti in salted boiling water. Drain and mix with the sauce. Sprinkle with parmesan and serve immediately.
