Even if few days ago I was nonchalantly strolling along Mediterranean turquoise waters close to Cannes, back in Paris, the temperature was slightly more... freezing! So I decided to cook a comforting and hearty tangy soup with white beans, lardons (a sort of french bacon stick) and spices. A simple and tasty treat for my readers who are still waiting for spring! Don't forget to keep white beans juice: this liquid is perfect to thicken easily the soup. For 4 people.
Ingredients
- 1,5 kg canned white beans (non-drained - 3 lb)
- 100 g smoked lardons or chopped bacon
- 2 onions, chopped
- 2 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 tablespoons paprika
- 1 tablespoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon chili flakes
- 1 tablespoon olive oil
- Greek yogurt or sour cream (to serve)
- Salt, ground peppercorn.
In a pot or a wok brown slightly the lardons or bacon over high high without fat. Set aside. Add olive oil and caramelize the onions and garlic. Drain the white beans but keep the juice. Add them in the pot with tomato paste, paprika, cumin, oregano and chili flakes. Season with salt and peppercorn, combine everything and add the beans juice, 50 cl (2 cups) of water and the lardons (or bacon). Simmer over low heat about 20 min until the soup is thick. Serve hot with a bit of greek yogurt or sour cream.

- 1 cuil à soupe d'huile d'olive
- Yaourt grec ou crème aigre (pour servir)
- Sel, poivre.
