Légumes rôtis aux cranberries et au miel / Roasted Honey & Cranberries Roasted Vegetables


Si bien sûr j'adore le gratin dauphinois, les pommes de terre au four ou la purée de patate douce en accompagnement d'une bonne volaille pour Noël, je ne résiste pas à cette recette que j'avais déjà servie l'année dernière avec de la dinde et qui avait rencontré un grand succès. Le mélange entre le goût anisé du céleri-rave, la douceur du miel et la saveur acidulée des cranberries fonctionne parfaitement. Je préfère utiliser ici des cranberries séchées et sucrées qui sont un peu plus douces que les cranberries classiques que je trouve un peu trop acides. C'est un plat qui peut aisément être préparé la veille et réchauffé le lendemain. Pour 6 personnes.

Ingrédients 

- 1 céleri-rave
- 4 carottes
- 250 g de champignons de Paris
- 40 g de cranberries séchées et sucrées
- 1 gros oignon, haché
- 4 gousses d'ail 
- 2 cuil à soupe de fond de veau
- 2 cuil à soupe d'huile d'olive
- 1 cuil à soupe de miel
- Persil pour la décoration
- Sel, poivre. 

Éplucher le céleri-rave et les carottes. Couper le céleri-rave en deux dans l'épaisseur et couper les deux moitié en 8-10 morceaux. Couper les carottes en rondelles épaisses. Couper les champignons en 2 ou en 4 selon la taille. Dans un grand plat au four le céleri-rave, les carottes, l'oignon, l'ail en chemise, le fond de veau, l'huile d'olive, le miel, le sel et le poivre. Bien enrober les légumes. Enfourner 30 min dans un four préchauffé à 200°C en retournant les légumes de temps en temps. Ajouter les cranberries, mélanger, couvrir le plat avec du papier aluminium et poursuivre la cuisson encore 30 min jusqu'à ce que les légumes soient tendres. Parsemer de persil ciselé avant de servir.

Even if I love to serve creamy potato gratin, roasted cubed potatoes or mashed sweet potato with poultry for Christmas, I can't resist this recipe, which I served last year with roasted turkey. It had a lot of success. The combination of the aniseed flavour of the celeriac, the sweetness of the honey and the tartness of the cranberries works perfectly. I prefer to use sweet dried cranberries here, which are a little sweeter than traditional cranberries, which I find a bit too acidic. This is a dish that can easily be prepared the day before and reheated the next day. Serves 6.

Ingredients 

- 1 celeriac
- 4 carrots
- 250 g button mushrooms (1/2 lb)
- 40 g dried sweet cranberries (4 tablespoons)
- 1 large onion, chopped
- 4 cloves garlic 
- 2 tablespoons veal stock powder
- 2 tablespoo olive oil
- 1 tablespoon honey
- Parsley for decoration
- salt and pepper. 

Peel the celeriac and carrots. Cut the celeriac in half and cut the halves into 8-10 slices. Cut the carrots into thick slices. Cut the mushrooms into 2 or 4 depending on their size. Place the celeriac, carrots, onion, unpeeled garlic cloves, veal stock, olive oil, honey, salt and pepper in a large oven dish. Coat the vegetables thoroughly with all the ingredients. Bake for 30 mins in a pre-heated oven at 200°C, turning the vegetables over from time to time. Add the cranberries, cover the dish with aluminium foil and cook for a further 30 mins until the vegetables are tender. Sprinkle with chopped parsley before serving.

Rôti de volaille farci pomme-cranberries/ Apple & Cranberries Chicken Roll


Après la bûche voici mon plat principal pour Noël. Je sais que je ne me renouvelle pas forcément beaucoup mais j'adore les rôtis de volaille farcis qui ne demandent pas nécessairement une énorme préparation pour un effet garanti. Ici je reprend une idée de farce qu'une amie avait réalisée pour une recette de dinde de Thanksgiving. Le goût de la pomme reste subtil mais ajoute une pointe de douceur qui contraste agréablement avec l'acidulé des cranberries. Pour 6 personnes. 

Ingrédients

- 4 blancs de poulet (800 g)
- 2 oignons
- 4 gousses d'ail
- 2 cuil à soupe de fond de veau
- 1 cuil à soupe d'huile d'olive
- Sel, poivre.

Farce

- 150 g de chair à saucisse
- 50 g de cranberries séchées
- 1 grosse pomme Canada
- 1 petit oignon, haché
- 1 gousse d'ail, émincée
- 6 brins de persil, ciselés
- 1 oeuf
- 5 cl de lait
- 4 cuil à soupe de chapelure
- 1 cuil à soupe d'armagnac
- 1 cuil à soupe d'huile d'olive
- Sel, poivre

1 - Farce: Peler et couper la pomme en fines tranches. Dans une poêle faire chauffer l'huile d'olive à feu moyen et faire colorer l'oignon et l'ail jusqu'à ce qu'ils caramélisent légèrement. Ajouter la pomme et continuer la cuisson 1 min. Réserver. Incorporer le mélange pomme-oignon-ail avec le reste des ingrédients de la farce. Réserver. Fendre les blancs de poulet en deux et les couvrir de film cellophane et les frapper avec un marteau de cuisine ou un objet lourd (casserole, rouleau à pâtisserie) pour obtenir des escalopes.

2 - Doubler le plan de travail de film cellophane. Répartir les escalopes de poulet, côté lisse en dessous pour former un carré. Déposer une colonne de farce au milieu. Rabattre ensuite les escalopes de poulet vers le centre pour couvrir la farce en s'aidant du film cellophane. Bien serrer le film pour former un boudin et laisser au frais environ 1 h pour que le rôti garde sa forme. Retirer délicatement le cellophane et ficeler (environ 6-7 fois) le rôti avec de la ficelle de cuisine. S'il reste de la farce formez des boulettes.

3 - Couper les oignons en fines lamelles. Répartir dans un plat allant au four avec les gousses d'ail en chemise. Déposer le rôti par dessus avec les boulettes de farce éventuellement. Saler, poivrer et arroser d'huile d'olive. Enfourner environ 1h dans un four préchauffé à 180°c. Retourner à mi-cuisson. Diluer le fond de veau avec 40 cl d'eau chaude et verser ce mélange en plusieurs fois pendant la cuisson pour déglacer les sucs de viande. Lorsque le rôti est cuit le réserver. Presser les gousses d'ail pour récupérer la pulpe de l'ail. Mettre les jus de cuisson, l'oignon et la purée d'ail dans une casserole avec 10 cl d'eau et laisser réduire encore 10-15 min à feu doux. Couper le rôti en tranches épaisses et servir avec la sauce et l'accompagnement de votre choix.

After the yule-log here is my main course for Christmas. I know that I don't necessarily renew myself a lot but I love stuffed chicken rolls that don't necessarily require a lot of preparation for a guaranteed wow effect. Here I am using a stuffing idea that a friend had made for a Thanksgiving turkey recipe. The taste of the apple remains subtle but adds a touch of sweetness which contrasts pleasantly with the tartness of the cranberries. For 6 servings.

Ingredients

- 4 chicken breasts (800 g / 28 oz)
- 2 onions
- 4 garlic cloves
- 1 beef cube-bouillon 
- 1 tablespoon olive oil
- Salt, ground peppercorn.

Stuffing

- 150 g sausage meat (5 oz)
- 50 g dried cranberries (2 oz)
- 1 large russet apple
- 1 small onion, chopped
- 1 garlic clove, minced
- 6 sprigs of parsley, chopped
- 1 egg
- 5 cl of milk (1/4 cup)
- 4 tablespoons breadcrumbs
- 1 tablespoon brandy
- 1 tablespoon olive oil
- Salt, ground peppercorn. 

1 - Stuffing: Peel and cut the apple into thin slices. In a pan, heat the olive oil over medium heat and brown the onion and garlic until they caramelize slightly. Add the apple and continue cooking. Set aside. Combine the apple-onion-garlic mixture with the rest of the stuffing ingredients. Set aside. Split the chicken breasts in half and cover them with cling film and hit them with a kitchen hammer or any heavy object (saucepan, rolling pin) to make them thin.

2 - Line the work surface with cling film. Arrange the chicken cutlets, smooth side down to form a square. Place a column of stuffing in the middle. Then fold the chicken filets towards the center to cover the stuffing using the cling film to maintain everything together. Tighten the film well to form a sausage shape roll and leave in the fridge for about 1 hour so that the roll keeps its shape. Gently remove the cling film and tie (about 6-7 times) the roll with kitchen twine. If there is any stuffing left, form meat balls.

3 - Cut the onions into thin strips. Arrange them in a baking dish with the unpeeled garlic cloves. Place the roll in top with the meat balls if you made some. Season with salt and pepper and drizzle with olive oil. Bake for about 1 h in a preheated oven at 180°C (360°F). Flip halfway through cooking. Crush and melt the beef cube-bouillon with 40 cl (2 cups) of hot water and pour this mixture throughout the cooking to deglaze the meat juices. When the roll is cooked set aside. Squeeze the garlic cloves to collect the garlic pulp. Put the meat juices, the onion and the garlic pulp in a saucepan with 10 cl of water and leave to reduce for another 10-15 min over low heat. Cut the roll into thick slices and serve with the sauce and side dish(es) of your choice.

Brioche aux fruits secs & aux amandes / Dried Fruits & Almonds Brioche

J'adore préparer des brioches, qu'elles soient aux fruits secs, au chocolat, à la fleur d'oranger ou encore à la cannelle et au sucre roux, j'en ai toujours au moins une tranche quelque part pour le petit-déjeuner ou le goûter. Ici j'avais envie de mélanger plusieurs types de fruits secs avec le croquant des amandes et une pointe de rhum. La recette permet de réaliser deux brioches de la taille d'un cake moyen, mais rien ne vous empêche de ne pas la faire cuire dans un moule et lui donner une forme différente. J'ai choisi ici de réaliser des petits rouleaux de pâte simplement pour enfermer les fruits secs pendant la cuisson et conserver tout leur moelleux. Si deux brioches peuvent paraître beaucoup, elles peuvent être tranchées et congelées sans aucun problème. Pour 2 brioches moyennes. 

Ingrédients

- 50 de raisins secs
- 50 de cranberries séchées
- 50 g d'abricots secs
- 3 cuil à soupe de rhum ambré
- 1 jaune d'oeuf 
- 2 cuil à soupe d'amandes effilées 

Pâte

- 500 g de farine + pour le plan de travail 
- 50 g de sucre 
- 20 cl de lait 
- 50 g de beurre fondu + pour les moules
- 1 oeuf
- 5 g levure de boulanger déshydratée 
- 1/2 cuil à café d'extrait naturel de vanille
- 1 pincée de sel

1 - Diluer la levure dans le lait tiède et y ajouter le sucre. Bien mélanger et laisser mousser 10 min. Ajouter ensuite l'œuf, le beurre fondu et l'extrait de vanille. Bien mélanger puis incorporer la farine et le sel. Pétrir sur un plan de travail fariné jusqu'à obtenir une pâte lisse, homogène et élastique. Mettre dans un grand bol, couvrir d'un linge et laisser monter 50 min dans un pièce chaude. Couper les abricots secs en petits dés et les mélanger avec les raisins, les cranberries et le rhum. Laisser reposer. 

2 - Une fois que la pâte a gonflé, la dégazer en appuyant avec le poing pour chasser l'excès d'air. Diviser la pâte en 10 boules. Les étaler en bandes de 20x8 cm environ. Répartir les fruits secs et rouler en petits boudins et en placer 5 dans chacun des moules à cake, beurrés. Couvrir d'un linge et laisser monter encore 50 min dans un pièce chaude. Une fois prêtes, badigeonner les brioches avec le jaune d’œuf, pour les rendre brillante et parsemer d'amandes. Enfourner ensuite 20-25 min dans un four préchauffé à 180°C. Couvrir d'un linge humide à la sortie d'un four pour que les brioches restent moelleuses en refroidissant.

I love to bake brioches, whether they are made with dried fruits, chocolate, orange blossom or even cinnamon and brown sugar, I always have at least a slice somewhere for breakfast or tea time. Here I wanted to mix several types of dried fruit with the crunch of almonds and a hint of rum. The recipe allows you to make two brioches the size of a medium cake, but nothing prevents you from baking it outside of a mold and giving it a different shape. I chose here to make small rolls of dough simply to enclose the dried fruits during cooking and keep all their softness. While two buns may sound like a lot, they can be sliced and frozen without any issues. For 2 medium brioche loafs.

Ingredients
 

 - 50 g raisins (2 oz)
- 50 g dried cranberries (2 oz)
- 50 g dried apricots (2 oz)
- 3 tablespoons dark rum
- 1 eggwolk
- 2 tablespoons flaked almonds

Dough

- 500 g flour (4 cups) + for kneading 
- 50 g sugar (1/4 cup) 
- 20 cl milk (1 cup) 
- 50 g butter, melted 
- 5 g dried yeast 
- 2 eggs 
- 1/2 teaspoon natural vanilla extract
- 1 pinch of salt.

1 - Dilute the yeast in lukewarm milk and add the sugar. Mix well and let foam 10 min. Then add the egg, melted butter and vanilla extract. Mix well then incorporate the flour and salt. Knead on a floured work surface until you obtain a smooth, homogeneous and elastic dough. Put in a large flight, cover with a cloth and let rise for 50 min in a warm room. Cut the dried apricots into small cubes and mix them with the raisins, cranberries and rum. Let rest.

2 - Once the dough has risen, press with your fist to expel the excess air. Divide the dough into 10 balls. Spread them out in strips of approximately 20x8cm. Distribute the dried fruits and roll into small sausages and place 5 in each of the buttered loaf cake tins. Cover with a cloth and let rise for another 50 minutes in a warm room. Once ready, brush the brioches with the egg yolk to make them shiny and sprinkle with almonds. Then bake for 20-25 minutes in an preheated oven to 180°C (350°F). Cover with a damp cloth after taking it out of an oven so that the brioches remain soft when cooling.
