In North Africa, rice, wheat, chickpeas, lentils and other starches are often mixed together in many hearty and simple dishes, such as the Egyptian kushari or the mujadara from Lebanon. Here I use merguez that give a pungent and flavorful touch, combined with the acidity of a freshly squeezed lemon. For 4 people.
Ingredients
- 300 g lentils
- 200 g basmati rice
- 8 merguez (1 lb)
- 2 onions
- 4 garlic cloves, minced
- 1/2 cilantro bunch, chopped
- 2 tablespoons ketchup
- 1 tablespoon oil
- 1 lemon
- 1 teaspoon flour.
Seasoning
- 1 tablespoon turmeric
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 teaspoon cinnamon
- 1 teaspoon ground coriander seeds
- 1 pinch chili flakes.
1 - Cut the merguez into pieces. Chop the onions coarsely. Blend all the seasoning spices. In a large pan heat the olive oil and brown the merguez bites. Remove the merguez from the pan but let most of the oil in the pan. Add the onions and garlic and allow to caramelize over medium heat.
2 - Add lentils, ketchup, cilantro and the seasoning in the pan. Combine everything and cover with water. Add salt and allow to cook over low heat until the lentils get tender. Feel free to add more water if it has been fully absorbed by the lentils before they are completely cooked. Add the rice and the merguez bites. Cover with water and continue to simmer until the rice is cooked.
3 - Squeezed the lemon juice and mix with flour. Combine to the dish and let thicken few minutes before serving.

En Afrique du Nord le riz, le blé, les pois-chiches, les lentilles et autres féculents sont souvent mélangés pour obtenir des plats simples mais nourrissants comme le kouchari égyptien ou la mujadara, du Liban. Ici j'utilise de la merguez dont le goût épicé et riche s'associe parfaitement à l'acidité du citron, fraîchement pressé. Pour 4 personnes.
Ingrédients
- 300 g de lentilles
- 200 g de riz basmati
- 8 merguez (450 g)
- 2 oignons
- 4 gousses d'ail, emincées
- 1/2 bouquet de coriandre, ciselé
- 2 cuil à soupe de ketchup
- 1 cuil à soupe d'huile
- 1 citron
- 1 cuil à café de farine
- Sel.
Assaisonnement
- 1 cuil à soupe de curcuma
- 1 cuil à soupe de cumin
- 1 cuil à soupe de paprika
- 1 cuil à café de cannelle
- 1 cuil à café de graines de coriandre en poudre
- 1 pincée de piment en flocons.
1 - Couper les merguez en gros tronçons. Hacher les oignons grossièrement. Mélanger les épices de l'assaisonnement. Dans une poêle faire chauffer l'huile d'olive et faire colorer les merguez. Retirer les merguez en laissant le plus d'huile dans la poêle. Ajouter les oignons et l'ail et faire caraméliser le tout à feu moyen.
2 - Ajouter les lentilles, le ketchup, la coriandre et l'assaisonnement dans la poêle. Mélanger le tout et couvrir d'eau. Saler et faire cuire à feu doux jusqu'à ce que les lentilles soient tendres. Ne pas hésiter à ajouter plus d'eau si elle a été complètement absorbée avant cuisson des lentilles. Ajouter le riz et les merguez. Couvrir encore d'eau. Poursuivre la cuisson jusqu'à ce que le riz soit tendre.
3 - Presser le jus du citron et mélanger avec la farine. Incorporer cette mixture au plat et laisser épaissir quelques instants. Servir sans attendre.
