- 2 cuil à soupe d'huile d'olive
- Coriandre, ciselée
- Sel, poivre.

When Lyon meets Korea, the result is a super comforting dish bursting with flavor. At work, I often make chicken in vinegar, a Lyon-style recipe featuring chicken in a vinegar-based sauce made with cream and onions. And even though this dish is delicious, I sometimes like to spice it up a bit, and I find that gochujang is the perfect ingredient. This Korean chili paste, flavored with fermented soybean paste and wheat malt, adds an incredible flavor to this dish. Normally served with mashed potatoes, here our chicken is served with rice and garnished with a little chopped cilantro. A delicious dish that’s very easy to make and perfect for the cooler weather that’s slowly setting in. Serves 4.

Ingredients

- 4 chicken breasts (600 g)
- 1 large onion, chopped
- 1 clove of garlic, minced
- 30 cl of heavy cream (30% fat)
- 4 tablespoons of red wine vinegar
- 2 tablespoons of gochujang
- 2 tablespoons of olive oil
- Cilantro, chopped
- Salt, pepper.

Cut the chicken into large cubes. In a skillet, heat 1 tablespoon of oil over medium-high heat and brown the chicken on all sides until lightly golden. Set aside. Heat the remaining oil and sauté the onion until caramelized. Add the garlic, salt, and pepper. Deglaze with the vinegar, then add the cream and gochujang. Simmer over low heat for about 10 minutes until the sauce reduces slightly. Add the chicken and continue cooking for 10 minutes. Serve with rice and a little chopped cilantro.
