Brioches roulées chocolat-abricot / Chocolate & Apricot Brioche Rolls


Aujourd'hui une petite recette de brioche inspirée de mes cinnamon buns, mais dans une version délicieusement chocolatée relevée d'une pointe de confiture d'abricots qui ajoute un peu d'acidité et surtout de brillance à ces petites brioches, idéales avec une bonne tasse de thé bien chaude. Comme toute viennoiserie maison ces brioches tendent à rassir assez vite. N'hésitez donc pas à les congeler. Passez les aux micro-ondes environ 10-15 secondes et laisser reposer 1 minute, elles retrouveront tous leur moelleux. Pour 12 brioches individuelles.

Ingrédients

- 330 g de farine + pour le plan de travail
- 50 g de sucre  
- 20 cl de lait
- 50 g de beurre fondu
- 5 g levure de boulanger déshydratée
- 4 cuil à soupe de cacao amer
- 1 pincée de sel.

Garniture

- 120 g de chocolat noir
- 10 cl de crème liquide 30% de MG.

Glaçage

- 100 g de confiture d'abricots
- 2 cuil à soupe d'eau, très chaude.

1 - Diluer la levure dans le lait tiède avec le sucre et laisser reposer 10 min jusqu'à ce que le mélange mousse. Ajouter le beurre fondu et le sel, puis la farine et le cacao et pétrir jusqu'à obtenir une pâte lisse, homogène et élastique. Couvrir la pâte d'un linge et laisser reposer 50 min dans une pièce chaude. Garniture: Concasser le chocolat noir et le mettre dans un grand bol. Faire chauffer la crème jusqu'à frémissement et la verser sur le chocolat. Laisser reposer 5 min et mélanger le tout pour obtenir un mélange lisse. Mettre au frais pendant que la pâte lève. 

2 - Lorsque la pâte a bien levé la dégazer en pressant avec le poing puis la pétrir rapidement. Étaler la pâte sur un plan de travail fariné pour obtenir un rectangle de 40x30 cm. Étaler la garniture et rouler la pâte pour former un boudin. Le couper en tranches de 3-4 cm et les disposer sur une plaque de cuisson. Couvrir d'un linge humide et laisser monter 50 min dans un pièce chaude. Enfourner 15 min dans un four préchauffé à 180°C. Diluer la confiture avec l'eau très chaude et badigeonner les brioches encore tiède avec un pinceau à pâtisserie. Laisser tiédir et consommer rapidement ou congeler.

Today a little brioche recipe inspired by my classic cinnamon rolls, but transformed into a deliciously chocolatey version spiced up with a hint of apricot jam which adds both acidity and shine to these little brioches, perfect with a good hot cup of tea. Like any homemade pastry, these brioches tend to go stale quite quickly. So feel free to freeze them. Put them in the microwave for about 10-15 seconds they will turn magically fresh and soft again. For 12 smalls buns.

Ingredients

- 330 g flour (2 & 1/2 cups) + for the work surface
- 50 g sugar (1/4 cup)
- 20 cl milk (1 cup)
- 50 g butter, melted (2 oz)
- 5 g dehydrated yeast
- 4 tablespoons bitter cocoa
- 1 pinch salt.

Chocolate ganache

- 120 g dark chocolate (4 oz)
- 10 cl double cream (1/2 cup).

Icing

- 100 g apricot preserve (1/2 cup)
- 2 tablespoons very hot water

1 - Combine lukewarm milk, sugar and yeast and leave 10 min until the mixture starts to foam. Add the melted butter and salt, then the flour and knead until you get a smooth, homogeneous and elastic dough. Cover the dough with a cloth and set aside for 50 min in a warm room. Chocolate ganache: Chop coarsely the dark chocolate and place it in large bowl. Heat the double cream until simmering. Pour the cream over the chocolate and set aside for 5 min. Whisk until fully combined and put in the fridge while the dough is rising.

2 - Once the dough has risen, press with your fist to deflate the dough, then knead it quickly. Spread the dough on a floured work surface to get a 40x30 cm (15x12") rectangle. Spread the chocolate ganache and roll the dough to form a cylinder. Cut it into 4 cm (1,5") slices and place them on a baking sheet. Cover with a cloth and let rise for 50 min in a warm room. Bake for 15 min in an oven preheated to 180°C (350°F). Icing: Mix the apricot preserve with the water and spread this icing of the warm brioches with a pastry brush. Set aside to cool down a bit before serving.

Brioches roulées à la cannelle / Cinnamon rolls


C'est assez étonnant de noter que beaucoup de recettes que je publie ici ne sont pas nécessairement des plats que je refais régulièrement alors qu'à l'inverse beaucoup de classiques que je prépare très souvent ne sont jamais présentés sur ce blog. C'est le cas des cinnamon rolls - également appelés cinnamon buns - que j'adore préparer notamment en automne et en hiver. Ces brioches délicieusement moelleuses sont garnies d'une pâte à la cannelle et au sucre roux puis nappé d'un glaçage crémeux  et vanillé au fromage blanc. Comme toute viennoiserie maison ces brioches tendent à rassir assez vite. N'hésitez donc pas à les congeler. - 50 g de beurre fondu
- 3 cuil à soupe de cannelle.

Glaçage

- 170 g de fromage blanc
- 30 g de beurre fondu
- 4 cuil à soupe de sucre glace
- 1/2 cuil à café d'extrait naturel de vanille.

Couvrir un linge humide à la sortie d'un four pour que les brioches restent moelleuses. Glaçage: Mélanger le fromage blanc à température ambiante, avec le beurre fondu, le sucre glace et l'extrait de vanille pour obtenir un glaçage lisse. Badigeonner les brioches encore tiède avec un pinceau à pâtisserie et laisser reposer pour qu'il fige un peu.

It's quite amusing to note that many of the recipes that I publish here are not necessarily dishes that I do regularly, whereas on the contrary, many classics that I prepare very often are never presented on this blog. This is the case with cinnamon rolls or cinnamon rolls which I love to prepare especially in autumn and winter. These deliciously moist buns are garnished with a cinnamon and brown sugar paste then topped with a creamy vanilla-flavoured Greek yogurt icing. Like any homemade pastry, these brioches tend to go stale quite quickly. So feel free to freeze them. Put them in the microwave for about 10-15 seconds they will all regain their softness. For 12 smalls buns.

Ingredients

- 360 g flour (2 & 1/2 cups) + for the work surface
- 50 g sugar (1/4 cup)
- 20 cl milk (1 cup)
- 50 g butter, melted (2 oz)
- 5 g dehydrated yeast
- 1 pinch salt.

Cinnamon paste

- 50 g brown sugar (1/4 cup)
- 50 g butter, melted (2 oz)
- 3 tablespoons ground cinnamon.

Icing

- 170 g full fat Greek yogurt (6 oz)
- 30 g butter, melted (1 oz)
- 4 tablespoon icing sugar
- 1/2 teaspoon natural vanilla extract.

1 - Combine lukewarm milk, sugar and yeast and leave 10 min until the mixture starts to foam. Add the melted butter and salt, then the flour and knead until you get a smooth, homogeneous and elastic dough. Cover the dough with a cloth and set aside for 50 minutes in a warm room. 

2 - Mix the ingredients of the cinnamon paste. Once the dough has risen, press with your fist to expel the excess air, then knead it quickly. Spread the dough on a floured work surface to get a 40x30 cm (15x12") rectangle. Spread the cinnamon paste and roll the dough to form a cylinder. Cut it into 4 cm (1,5") slices and place them on a baking sheet. Cover with a cloth and let rise for 50 minutes in a warm room.

3 - Bake for 15 min in an oven preheated to 180°C (350°F). Cover with a cloth after taking it out of the oven to prevent the brioches from drying while they are cooling. Icing: Mix the Greek yogurt at room temperature with the melted butter, icing sugar and vanilla extract to get a smooth icing. Spread this icing of the warm buns with a pastry brush. Set aside to allow the icing to firm up a little bit before serving.

Pumpkin-pecan rolls & Maple syrup frosting / Brioches roulées courge-noix de pécan & Glaçage au sirop d'érable


I admit we are already far from Halloween or Thanksgiving, but december is still the pumpkin season. So why not try to combine it with maple syrup and pecan nuts to get incredibly soft and golden yellow brioches. Because I'm french I've never seen canned pumpkin puree in store, so I can not say if you can replace fresh pumpkin puree by canned one. For 12 rolls. 

Ingredients

- 500 g flour (3 & 1/2 cups) + for kneading 
- 100 g fresh pumpkin, peeled and cubed
- 50 g sugar (1/4 cup)
- 20 cl milk (1 cup)
- 50 g butter, melted 
- 5 g dried yeast 
- 1 teaspoon lemon juice 
- 1 pinch of salt. 

Garnish 

- 15 pecan kernels, chopped
- 1/2 cup maple syrup

Frosting

- 120 g plain yogurt (1/2 cup) 
- 80 g butter, soft- 4 tablespoons maple syrup
- Some p
ecan kernels, chopped

1 - Cook the pumkin into boiling water until tender. Blend the pulp until smooth. Dissolve the yeast in warm milk and add mashed pumpkin, melted butter, sugar, lemon juice and salt. Mix well. Add flour and knead until smooth and elastic. Roll out dough on a well-floured surface until 1 cm thick to create a 40x30 cm rectangle. Spread maple syrup and sprinkle pecan. Roll the dough tight until you get a cylinder. Cut into 3-4 cm large slices. Arrange on a baking sheet and cover with cloth and let rise 50 minutes in a warm room. Then bake 15 minutes in preheated oven at 180°C (350°F). After being removed from the oven cover with a damp cloth to keep it soft by cooling. 

2 - Frosting: Combine all the ingredients with a whisk until smooth. Spread on the rolls with a pastry brush. Garnish with chopped pecan. Let stand to allow the frosting to set a bit. Feel free to freeze them because they dry fast.

Certes nous sommes déjà loin d'Halloween et de Thanksgiving, mais décembre reste la saison des courges! Alors pourquoi ne pas l'associer avec du sirop d'érable et des noix de pécan pour en faire de belles brioches délicieusement moelleux et jaune d'or! Pour 12 brioches. 

Ingrédients 

- 500 g de farine + pour le plan de travail 
- 100 g de courge, pelée et coupée en cubes
- 50 g de sucre 
- 20 cl de lait 
- 50 g de beurre fondu 
- 5 g levure de boulanger déshydratée 
- 1 cuil à café de jus de citron 
- 1 pincée de sel. 

Garniture 

- 15 cerneaux de noix de pécan, hachés
- 10 cl de sirop d'érable

Glaçage

- 120 g yaourt nature 
- 80 g de beurre pommade
- 4 cuil à soupe de sirop d'érable
- Cerneaux de noix de pécan, hachés. 

1 - Faire cuire les cubes de courge dans un volume d'eau bouillante jusqu'à ce qu'ils soient tendres. Égoutter et mixer jusqu'à obtenir une purée. Diluer la levure dans le lait tiède et y ajouter la purée de courge, le beurre fondu, le sucre, le jus de citron et le sel. Bien mélanger. Ajouter la farine et pétrir jusqu'à obtenir une pâte lisse, homogène et élastique. Étaler la pâte sur un plan de travail fariné pour obtenir un rectangle de 40x30 cm. Badigeonner de sirop d'érable, parsemer de noix de pécan hachées et rouler la pâte pour former un boudin. Le couper en tranches de 3-4 cm et les disposer sur une plaque de cuisson. Couvrir d'un linge humide et laisser monter 50 min dans un pièce chaude. Puis enfourner 15 min dans un four préchauffé à 180°C. Couvrir un linge humide à la sortie d'un four pour qu'elles restent moelleuses en refroidissant.

2 - Glaçage: Mélanger tous les ingrédients au fouet pour obtenir un glaçage lisse. En badigeonner les brioches avec un pinceau à pâtisserie et laisser reposer pour qu'il fige un peu. Les brioches sèchent vite à l'air libre, mais se congèlent très bien.
