Tiramisu chocolat-cerises / Chocolate & Cherries Tiramisu


Etant donné que l'automne est devenu bien froid d'un coup j'avais envie de partager avec une recette de tiramisu bien de saison que je fais très fréquemment mais que je n'ai toujours pas publié sur ce blog étrangement. Et comme ce soir c'est Le Meilleur Pâtissier je me suis dit que ce serait un dessert parfait pour regarder les autres pâtisser à la TV! C'est un entremet assez simple à réaliser qui demande peu d'ingrédients mais qui fait généralement sensation. Vous pouvez en faire un grand ou le présenter sous forme de verrines ou en faire 2 ou 3 tiramisus moyens, cela ne change pas fondamentalement la recette. J'aime bien ajouter un trait de cognac - ou d'armagnac - à mes mousses au chocolat je trouve que ça leur donne un goût plus riche et sophistiqué qui me rappelle un peu certains desserts au chocolat que je mangeais lorsque j'étais plus petit. Pour 8- 10 personnes 

 Ingrédients

 - 24 biscuits à la cuillère
680 g de cerises au sirop (350 g égouttées)
- 30 g de chocolat noir.

Mousse au chocolat

- 250 g de mascarpone
- 30 cl de crème liquide 30% de MG
- 170 g de chocolat noir
- 1 cuil à soupe de sucre
- 1 cuil à soupe de cognac.

1 - Egoutter les cerises et mettre le jus dans une casserole à feu moyen-vif et laisser frémir jusqu'à réduction de moitié. Laisser refroidir. Répartir les biscuits dans un grand plat (30x20 cm) puis déposer par dessus les cerises et leur jus, bien froid. Garder quelques cerises pour la décoration. Râper 30 g de chocolat noir en copeaux avec un économe. Réserver.

2 - Mousse au chocolat: Faire fondre le chocolat cassé en morceaux au bain-marie ou au micro-ondes. Fouetter la crème liquide avec le sucre dans un bol bien froid - le mettre au frigo 30 min - jusqu'à obtenir une crème fouettée bien ferme. Mettre au frais. Mélanger le mascarpone à température ambiante au chocolat encore chaud et le cognac jusqu'à obtenir une crème bien lisse. Incorporer délicatement la crème fouettée jusqu'à obtention d'une mousse homogène. Répartir cette mousse sur les biscuits, puis décorer avec les cerises restantes et les copeaux de chocolat. Mettre au frais au moins 4 h pour que le tiramisu ait bien pris.

Since fall has suddenly become very cold, I wanted to share with a recipe for a seasonal tiramisu that I make very often but that I still have not published on this blog strangely. And since tonight there is Le Meilleur Pâtissier - the French version of The Great British Bake Off - I feel like it is the perfect treat to watch TV and look at other people baking while I'm enjoying my own dessert. It is a fairly simple entremet to make which requires few ingredients but which generally makes a splash. You can make a large batch or served them into verrines or make 2 or 3 medium-sized tiramisus, that does not fundamentally change the recipe. I like to add a dash of cognac - or armagnac or any type of grape brandy - to my chocolate mousse. I find that it gives them a richer and more sophisticated taste which reminds me a bit of certain chocolate desserts that I ate when I was younger. For 8-10 people.

Ingredients

 - 24 sponge fingers
- 680 g/24 oz cherries in syrup (350 g/12 oz drained)
- 30 g dark chocolate (1 oz).

Chocolate mousse

- 250 g mascarpone (9 oz)
- 30 cl double cream (1 & 1/2 cup)
- 170 g dark chocolate (6 oz)
- 1 tablespoon sugar
- 1 tablespoon brandy.

1 - Drain the cherries and heat the juice in a saucepan over medium-high heat and simmer until it iz reduced by half. Let cool. Distribute the sponge fingers in a large dish (30x20 cm) then top them with the cherries and soak the biscuits with the cherry sirup, very cold. Keep some cherries for decoration. Grate 30 g dark chocolate into shavings with a peeler. Set aside.

2 - Chocolate mousse: Melt the chocolate - coarsely chopped - in a double boiler or in the microwave. Whip the liquid cream with the sugar in a very cold bowl - put it in the fridge for 30 min - until you get a very firm whipped cream. Put in the fridge. Mix the mascarpone at room temperature with the still warm chocolate and the cognac until you get a very smooth cream. Gently fold in the whipped cream until you have a smooth airy mousse. Spread this mousse over the biscuits, then decorate with the remaining cherries and chocolate shavings. Refrigerate for at least 4 hours to allow the tiramisu to set.

    1. Well it has both many elements of a tiramisu and a black forest cake. I used the word "tiramisu" more about the layering and the mascarpone base. But it could be indeed a black forest cake trifle as well considering how far from a traditional tiramisu we are :)

  3. This certainly has many elements of a traditional tiramisu, although I'm with Angie in that it reminds me a little of black forest cake. I think I'm focusing on the cherries! Anyway, this look superb. And I like the chocolate/cognac combo, too.
