Tiramisu citron-cassis-myrtilles / Lemon-Blackcurrant-Blueberry Tiramisu


Cela fait des années que j'avais envie de faire ce dessert inspiré d'un entremet de Nigella Lawson appelé Anglo-Italian Trifle. Ma recette n'est pas totalement identique, mais elle reste très proche mêlant cassis, citron et limoncello, avec une alternance de couches de biscuits, de confiture et de crème au citron. Un dessert certes riche mais délicieusement frais et acidulé pour l'été. Choisissez si possible un plat transparent pour mettre en valeur les différentes couches, le doré des biscuits, le rouge presque noir de la confiture et la crème jaune pâle au citron. Vous pouvez également réaliser cette recette en verrines individuelles. Pour 8 personnes. 

Ingrédients

 - 24 biscuits à la cuillère
- 15 cl de limoncello
- 250 g de confiture de cassis
- 250 g de myrtilles.

Mousse citron

- 250 g de mascarpone
- 30 cl de crème liquide 30% de MG
- 120 g de sucre
- 2 gros citrons
- 1 oeuf
- 1 jaune d'oeuf
- 1 cuil à soupe de maïzena.

1 - Zester et presser les deux citrons. Tamiser le sucre avec la maïzena pour retirer d'éventuels grumeaux. Mettre les zestes et le jus avec l'oeuf le jaune d'oeuf, le sucre et la maïzena dans une casserole. Bien mélanger le tout et faire cuire à feu moyen en fouettant continuellement jusqu'à ce que le mélange commence à épaissir. Baisser le feu et continuer à fouetter jusqu'à obtenir un lemon curd bien lisse. Laisser complètement refroidir. 

2 - Mousse citron: Mettre le lemon curd, le mascarpone et la crème liquide dans un grand bol et fouetter le mélange jusqu'à obtenir une crème lisse et ferme. Réserver. Verser le limoncello dans une assiette creuse et rouler les biscuits à la cuillère pour les imbiber un par un puis les répartir harmonieusement dans un grand plat (30x20 cm).

3 - Étaler la confiture de cassis et les myrtilles (en garder quelques unes pour la décoration) sur les biscuits puis étaler la mousse citron. Décorer avec quelques myrtilles et mettre au frais au moins 4 h pour que le tiramisu ait bien pris.

It's been years since I wanted to make this dessert inspired by an entremet from Nigella Lawson called Anglo-Italian Trifle. My recipe is not completely identical, but it remains very close mixing blackcurrant, lemon and limoncello, with a serie of layers of biscuits, jam and lemon cream. A dessert certainly rich but deliciously fresh and tangy for the summer. If possible, choose a transparent glass dish to highlight the different layers, the golden color of the sponge fingers, the almost black red of the jam and the pale yellow lemon cream. You can also make this recipe in individual glasses. For 8 servings.

Ingredients

 - 24 sponge fingers
- 15 cl limoncello (3/4 cup)
- 250 g blackcurrant jam (9 oz)
- 250 g  blueberries (9 oz)

Citron mousse

- 250 g mascarpone (9 oz)
- 30 cl double cream (1 & 1/2 cup)
- 120 g of sugar (2/3 cup)
- 2 large lemons
- 1 egg
- 1 egg yolk
- 1 tablespoon cornstarch.

1 - Zest and squeeze the juice from the lemons. Sift the sugar with the cornstarch to remove any lumps. Put the lemon zest and juice with the egg, egg yolk, sugar and cornstarch in a saucepan. Mix everything well and cook over medium heat, whisking until the mixture begins to thicken. Lower the heat and continue to whisk until you get a smooth lemon curd. Let cool completely.

2 - Lemon mousse: Put the lemon curd, mascarpone and double cream in a large bowl and whip the mixture until you get a smooth and firm mousse. Set aside. Pour the limoncello into a deep plate and roll the sponge fingers to soak them one by one then distribute them harmoniously in a large dish (30x20 cm / 12x8").

3 - Spread the blackcurrant jam and blueberries (keep a few for decoration) on the sponge fingers then spread the lemon mousse. Decorate with  blueberries and put in the fridge at least 4 hours for the tiramisu to set completely.

  4. I love citrus recipes and this one looks like the perfect trifle. I always have some homemade lemon curd in my frig. Could you please tell me how much lemon curd you used in this recipe? About 2 cups? I can't wait to make this one, would be terrific for a Christmas dessert, but I can't wait that long. Beautiful photos as well. Thanks, Best wishes, Pauline

  6. Beautiful recipe and gorgeous photography, as usual! I was afraid I was going to have to find fresh black currents to make this, but black currant jam should not be a problem. It’s funny that it seems more like a trifle to me than a tiramisu, but whatever we call it, know I will love it!
