Gâteau au citron et au vin de Muscat / Lemon & Muscat Wine Cake


Bien que j'aime parfois les entremets et autres desserts sophistiqués, j'apprécie également des gâteaux plus simples, qui se marient bien avec une tasse de thé ou même en accompagnement d'une salade de fruits. Ici je m'inspire d'une recette de Julie Andrieu aux accents provençaux. J'utilise du muscat de Rivesaltes pour son goût sucré et capiteux, mais tout type de vin doux naturel ou même de vin moelleux fonctionne parfaitement. Le citron ajoute une pointe de fraîcheur qui contrebalance la douceur du vin et l'amertume de l'huile d'olive. Je ne sais d'ailleurs pas si c'est le vin ou l'huile d'olive mais ce gâteau est incroyablement moelleux. Pour 10-12 parts.

Ingrédients

- 200 g de farine
- 120 g de sucre
- 15 cl de muscat de Rivesaltes
- 15 cl d'huile d'olive + pour le moule
- 3 oeufs
- 1 sachet de levure chimique
- 1 pincée de sel
- 1 citron
- 4 cuil à soupe de sucre glace.

Mélanger la farine, le sucre, le muscat, l'huile d'olive, les oeufs, la levure chimique et le sel jusqu'à obtenir une pâte lisse. Verser dans un moule à manqué huilé et enfourner 30 min dans un four à 190°C. Zester et presser le jus du citron et le mélanger au sucre glace. A la sortie du four badigeonner le gâteau de ce mélange et laisser le gâteau complètement refroidir. Servir à température ambiante.

Even if I enjoy time to time entremets and other sophisticated desserts, I also appreciate simpler cakes, which pair well with a cup of tea or even a fruit salad. Here I got my inspiration from a Provençal  recipe by the French food author Julie Andrieu. I use muscat de Rivesaltes wine for its sweet and suave taste, but any type of fortified wine or even sweet wine works perfectly. The lemon adds a hint of freshness that counterbalances the sweetness of the wine and the bitterness of the olive oil. I actually can't tell if  it comes from the wine or the olive oil, but this cake is incredibly moist and squishy. For 10-12 slices.

Ingredients

- 200 g flour (1 & 1/2 cup)
- 120 g sugar (2/3 cup)
- 15 cl muscat de Rivesaltes (3/4 cup)
- 15 cl of olive oil + for the mold (3/4 cup)
- 3 eggs
- 1 tablespoon baking powder
- 1 pinch salt
- 1 lemon
- 4 tablespoons of icing sugar.

Mix the flour, the sugar, the muscat wine, the olive oil, the eggs, the baking powder and the salt until you get a smooth dough. Pour into an greased springform pan and bake for 30 min in an  preheated oven at 190°C (38.°F). Zest and squeeze the juice from the lemon and mix it with the icing sugar. Directly after the cooking, brush the cake with the lemon-sugar glaze and let the cake cool completely. Serve at room temperature.
